MAPLE MASHED SWEET POTATOES



Maple Mashed Sweet Potatoes image

Perk up sweet potatoes with maple syrup, butter and orange zest.

3 pounds sweet potatoes
3 tablespoons unsalted butter
3 tablespoons pure maple syrup
1/2 teaspoon grated orange zest
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Put on a baking sheet and roast until very tender and a knife easily pierces through the center, 45 to 60 minutes.
  • Let the potatoes cool slightly and then halve lengthwise. Holding the sweet potatoes with a potholder or towel, scoop out the insides and discard the skins. Pass the potatoes through a food mill or ricer into a large bowl.
  • Heat the butter, maple syrup and zest in a small skillet over medium heat until the butter is melted. Pour over the potatoes and stir to combine evenly. Season with salt and pepper.

6 medium-large sweet potatoes (3 lb)
1/2 cup butter or margarine, melted
1/2 cup real maple syrup
1 teaspoon grated orange peel
Juice of 1 medium orange
1/2 teaspoon salt
Fresh rosemary sprig, if desired

Steps:

  • Heat oven to 375°F. Line cookie sheet with foil. Place sweet potatoes on cookie sheet; prick several times with fork. Bake 1 hour or until very tender. Let stand 15 minutes.
  • Cut potatoes in half lengthwise; scoop pulp into large bowl. Mash pulp well. Add butter, syrup, orange peel, orange juice and salt; mash well. Garnish with rosemary sprig.

4 large sweet potatoes
½ cup softened butter
1 cup heavy cream
2 tablespoons vanilla extract
½ cup packed light brown sugar
1 teaspoon salt
½ cup maple syrup
1 cup chopped pecans
2 eggs, beaten
2 tablespoons maple syrup
¼ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  • Place sweet potatoes onto the prepared baking sheet, and bake in preheated oven until soft, 45 minutes to 1 hour. Remove from the oven and allow to cool slightly before peeling and placing into a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart casserole dish.
  • Mash the warm potatoes along with butter, cream, vanilla extract, brown sugar, salt, 1/2 cup maple syrup, 1 cup chopped pecans, and eggs. Spread mashed sweet potato into the prepared baking dish, and sprinkle with the remaining 2 tablespoons of maple syrup, and 1/4 cup of pecans.
  • Bake sweet potatoes in preheated oven until thoroughly hot, 30 to 35 minutes.

This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

Steps:

  • Steam the potatoes in a large covered pan fitted with a steamer basket until they are tender, about 8 minutes.
  • In a large bowl mash the potatoes with the buttermilk and orange juice. Stir in the zest, salt, and nutmeg. Serve the potatoes topped with the butter, if desired.

4 lbs sweet potatoes, peeled, cut into 1-1/2-inch chunks, 5-6 sweet potatoes
6 slices bacon
1/2 cup half-and-half
1/3 cup maple syrup
1/3 cup butter, at room temperature
1 1/4 teaspoons salt
3/4 teaspoon ground cumin
1/4 teaspoon pepper
1/3 cup chopped fresh chives

Steps:

  • In pot combine sweet potatoes with enough salted water to cover. Over high heat bring to boil. Cook until tender, 10 minutes. Drain; return to pot.
  • Meanwhile, in nonstick skillet over medium-hig heat cook bacon until crisp, 6-8 minutes; drain on paper towels. Crumble.
  • In microwave-safe bowl combine half-and-half and maple syrup; microwave on High until warm, 1-2 minutes.
  • Mash sweet potatoes with butter until smooth. Gradually mash in maple mixture.
  • Stir in salt, cumin and pepper. Reserve 1/4 cup bacon and 1 t. chives. Stir remaining bacon and chives into potatoes. Transfer to dish; top w ith bacon and chives.
