RICE CASSEROLE WITH CHEESE AND ALMONDS



Rice Casserole with Cheese and Almonds image

Easy casserole, very rich with the butter and mushroom soup, but delicious!

4 cups uncooked white rice
½ cup butter
4 green onions, chopped
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (4 ounce) jar sliced mushrooms
1 cup slivered almonds
10 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large saucepan bring 8 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Meanwhile, in a small saucepan over medium heat, melt butter and saute green onions. Stir in soup. Combine soup mixture with cooked rice and stir in mushrooms and almonds; mix well. Spoon half of the mixture into a 1 1/2 quart casserole dish. Sprinkle half of the cheese over the mixture, then repeat the layers.
  • Bake in preheated oven for 20 minutes, or until cheese is melted.

⅓ cup finely chopped onion
1 cup uncooked white rice
2 tablespoons raisins
1 ½ cups chicken broth
salt and pepper to taste
¼ cup sliced almonds

Steps:

  • Melt butter in a medium saucepan over medium heat. Saute onion, stirring, until tender. Stir in the rice, raisins, broth, salt and pepper. Bring to a boil.
  • Reduce heat to low, cover and simmer 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Stir in almonds before serving.

1 (15-ounce) can pitted cherries
2 cups instant brown rice
1/2 teaspoon salt
2 teaspoons chili powder
2 tablespoons semisweet chocolate chips
1/4 cup chopped almonds, toasted

Steps:

  • Drain canned cherries, reserving juice. Coarsely chop enough cherries for 1/2 cup and set aside. Save remaining cherries for another use.
  • In a medium saucepan, add reserved cherry juice (approximately 2/3 cup) plus enough water to equal 2 cups. Bring to a boil over medium-high heat. Stir in remaining ingredients, except chopped almonds. Cover and reduce heat to a simmer for 10 minutes.
  • Remove from heat and stir in toasted chopped almonds. Serve.

1 tbsp olive oil
small onion , chopped
100g basmati & wild rice , washed and drained
2 sprigs lemon thyme
½ bay leaf
2 tbsp flaked almonds , toasted under the grill until golden brown
4 pinches ground cinnamon
2 tbsp currants
2 tbsp lemon juice

Steps:

  • Heat oven to 110C/fan 90C/gas 1⁄4. Heat the olive oil in a small ovenproof saucepan and soften the onion for 2 mins, making sure not to colour. Add the rice, lemon thyme, bay leaf,150ml water, then bring to the boil. Season, cover with a lid and cook in the oven for 20 mins until the rice is completely tender.
  • When the rice is cooked, stir in the almonds, cinnamon, currants and lemon juice, then season, if you like. Set aside, then gently reheat to piping hot when required.

1 (8 ounce) can sliced mushrooms, drained,liquid reserved
2 teaspoons dried onion flakes
1/3 cup almonds, chopped or sliced
1 cup shredded cheddar cheese
1 1/4 cups uncooked rice
1/8 teaspoon pepper
water
3 beef bouillon cubes
4 teaspoons soy sauce
2 tablespoons chopped parsley
2 tablespoons chopped pimiento

Steps:

  • Combine drained mushrooms with onions, almonds, cheese, rice and pepper; turn into a greased 2-qt casserole.
  • Add water to the mushroom liquid to make 3 1/2 cups liquid; heat to the simmering point then add the bouillon cubes and soy sauce to the hot liquid and stir until cubes are dissolved; pour over rice mixture.
  • Cover and bake in a 375° oven for 45 minutes to 1 hour, or until liquid has been absorbed.
  • Stir in parsley and pimiento just before serving.
