Eggs and Canadian Bacon in Pita Pockets image

Canadian bacon is leaner than regular bacon, making it a good choice for your morning meal. Green onions, cheddar cheese, avocado, and a dash of hot sauce give these pockets plenty of flavor.

4 eggs, lightly beaten
3 ounce Canadian-style bacon, finely chopped
3 tablespoon water
2 tablespoon sliced green onion (1)
0.125 teaspoon salt
Nonstick cooking spray
4 whole wheat pita bread rounds, halved crosswise
0.5 cup shredded cheddar cheese (2 ounces)
1 avocado, halved, seeded, peeled, and sliced
Bottled hot pepper sauce (optional)

Steps:

  • In a medium bowl stir together eggs, Canadian-style bacon, the water, green onion, and salt.
  • Lightly coat an unheated medium nonstick skillet with cooking spray. Heat over medium heat. Add egg mixture to skillet. Cook, without stirring, until mixture begins to set on the bottom and around edges. Using a spatula or a large spoon, lift and fold the partially cooked egg mixture so the uncooked portion flows underneath. Continue cooking about 2 minutes or until egg mixture is cooked through but is still glossy and moist. Immediately remove from heat.
  • Fill pita halves with egg mixture; sprinkle with cheese. Add avocado slices. If desired, drizzle with hot pepper sauce.

Make some moreish cheese and bacon turnovers for lunch, a picnic or buffet, and add a dollop of mustard if you like. They'll keep for up to three days

1 sheet ready-rolled puff pastry
3 tbsp soft cheese
1 tsp Dijon mustard (optional)
6 rashers dry-cured smoked bacon
100g mature cheddar, gruyère or Swiss cheese, grated
1 egg, beaten

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the pastry on the sheet of baking parchment it comes with, and cut into six squares. Mix the soft cheese with the mustard, if using, and a good grinding of black pepper. Divide between the middles of the pastry squares, and smooth over in a diagonal line from one corner to the opposite side.
  • Lay a bacon rasher over the soft cheese, then scatter over the cheese. Brush the two exposed corners of pastry with beaten egg, and fold over the top of the filling to join together. Brush the tops with more egg, then slide the baking parchment on to a baking sheet and bake for 15-20 mins until the cheese has melted and the pastry is golden.
  • Transfer to a cooling rack for 5-10 mins before serving warm. Will keep chilled in an airtight container for two-three days.

2/3 cup mayonnaise
2 tablespoons sweet pickle relish
1 teaspoon prepared mustard
1/4 teaspoon pepper
1/4 teaspoon celery salt
1/4 teaspoon paprika
1/4 teaspoon dried basil
1/4 teaspoon salt
6 hard-boiled large eggs, coarsely chopped
1/2 cup shredded cheddar cheese
1 small onion, finely chopped
1 large carrot, grated
2 bacon strips, cooked and crumbled
3 pita breads (6 inches), halved
Lettuce leaves and sliced tomatoes, optional

Steps:

  • In a bowl, combine the first eight ingredients. Stir in the eggs, cheese, onion, carrot and bacon. Spoon about 1/2 cup into each pita half. Add lettuce and tomatoes if desired.

200 g red leicester cheese, grated
100 g unsmoked bacon, shredded
500 g whole wheat bread flour
3 teaspoons dried yeast
2 teaspoons sugar
250 ml warm water
1 teaspoon salt
3 teaspoons oil

Steps:

  • Grill Bacon and mix with grated cheese.
  • Heat oven to 210 degrees centigrade.
  • Put Yeast, sugar and a third of the flour in a mixing bowl.
  • Add water and mix with a wooden spoon, leave for 20 minutes.
  • Add remainder of flour, salt and oil.
  • Mix with fingers, when dough-like turn out onto an oiled surface.
  • Knead for 5 minutes.
  • Cover with a damp cloth and prove in a warm place for 20 minutes.
  • Divide into 8 pieces and roll out into oval shaped breads (20cm long and 10cm wide approx.) on a floured surface.
  • Fill each pita with a small handful of the cheese and bacon mixture fold in half and seal by pinching the edges
  • Lightly flour 2 baking sheets, place pittas on them, cover and prove for a further 10 mins
  • Sprinkle pittas with flour.
  • Bake for 15 minutes.

1 medium tomato, finely chopped
1 small onion, finely chopped
1/2 jalapeno pepper, finely chopped
1 tablespoon minced fresh cilantro
2 tablespoons canola oil, divided
1 large sweet pepper, halved and seeded
1 large onion, cut crosswise into 1/2-inch slices
6 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups shredded Mexican cheese blend or cheddar cheese
8 pita pocket halves
Optional: Guacamole and sour cream

Steps:

  • Preheat oven to 325°. For salsa, combine first 4 ingredients; stir in 1 tablespoon oil., Brush pepper halves and onion slices with remaining oil. Sprinkle chicken with salt and pepper. Place vegetables and chicken on an oiled grill rack over medium heat. Grill, covered, until vegetables are tender and a thermometer inserted in chicken reads 165°, 4-6 minutes per side., Cut vegetables and chicken into strips; toss with cheese. 1 cup cooked long grain rice

This was a recipe I received from my friend Terri. She served this dip using one of the small crock pots (2-3 cup). It kept the cheese melted and warm through the whole party. The chips really make this recipe, but could use crackers. This is a great dip to make for parties as it keeps warm throughout, awesome for football parties, guys love this hardy dip!!!!

1 (8 ounce) package cream cheese
1/2 cup Miracle Whip (I would not substitute mayonnaise)
4 ounces swiss cheese, shredded
2 tablespoons green onions, sliced thinly
8 slices bacon, cooked and crumbled
2 whole wheat pita bread
3 tablespoons butter
1/2 cup sesame seeds, toasted

Steps:

  • Preheat oven to 375 degrees.
  • In microwave safe bowl, soften cream cheese on medium (50%) for 30 seconds. Mix cream cheese, miracle whip, swiss cheese, green onions and bacon until well blended.
  • Spoon mixture into 2 1/2 cup casserole dish or 9-inch pie plate(or use tiny crock pot). Microwave on high for 4 minutes or until heated through, if using crock pot, just pour mixture into it and turn it on.
  • Take pita and cut them into 8ths, and then split each triangle by separating it from outer seam, into 2 pieces. Spread rough side with butter and sprinkle with sesame seeds.
  • Place on cookie sheet and bake for 8-10 minutes or until crisp.

I am a Full-Time college student and when I'm at school I sometimes get a Chicken Bacon Ranch Wrap so this recipe came from my love for those!

INGREDIENTS
4 Tbsp monterey chicken seasoning
2 can(s) chunk white chicken
1 pkg real bacon bits
6 oz colby jack shredded cheese
10 oz ranch dressing, or about 2/3 of a 16 oz bottle
shredded lettuce (optional)
pita pockets, i use wheat pita pockets

Steps:

  • 1. Spray a medium to large pan with non-stick cooking spray and then place over medium to medium-high heat.
  • 2. While the pan is warming up, drain 2 cans of chicken adding to pan directly after draining.
  • 3. Add real bacon bits and monterey chicken seasoning (I prefer McCormick's) into pan with the chicken.
  • 4. After the chicken mixture is warmed through, transfer to a bowl and let cool for a couple of minutes.
  • 5. With the chicken mixture still warm add in 4-6 ounces of colby jack cheese (if you don't like colby jack you can use shredded cheddar too) and mix together.
  • 6. Then add in about 2/3 of a 16 ounce bottle of Ranch Dressing (which is about 10 ounces) to the chicken and cheese mix and stir.
  • 7. Add 1 large spoonful, or as much you would like, of the chicken mix to a pita pocket and then a small handful of shredded lettuce onto the top.
  • 8. Enjoy!
