This No-Bake Cheesecake Cups Recipe is so easy to make and possibly the creamiest and smoothest cheesecake mixture I've ever made. I almost called the recipe Cheesecake Mousse because it's so light and silky! Serving in individual cups makes them perfect for parties or special events!

3/4 cup graham cracker crumbs
2 tablespoons salted butter, melted
8 oz cream cheese, softened
1/2 cup granulated sugar
1 teaspoon pure vanilla extract
1 cup heavy whipping cream
Optional toppings: raspberries, strawberries, whipped cream, broken cookies, graham cracker crumbs, etc.

Steps:

  • In a small bowl, stir together the melted butter and graham cracker crumbs until it's evenly distributed. Put approximately 2-3 tablespoons of the mixture into the bottom of each glass or serving dish.
  • In a large bowl (or the bowl of your stand mixer), pour the whipped cream in and beat on high until stiff peaks form (around one minute for me).
  • Scrape the whipped cream into a second bowl, then combine the cream cheese, sugar, and vanilla and mix until completely smooth and creamy.
  • Gently fold the whipped cream into the cream cheese mixture and stir until completely combined and creamy.
  • Spoon the mixture into a piping bag (if you like) and pipe it into the cups. Or divide it evenly among your cups and spoon it in.
  • Top with fresh fruit (optional), cover and chill for at least an hour before serving.

8 ounces cream cheese
3 tablespoons powdered sugar, plus more for dusting
1 tablespoon whole milk
2 teaspoons orange zest
1 teaspoon vanilla
2 1/2 tablespoons cherry preserves
15 fresh raspberries
15 fresh mint leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the phyllo cups on a baking sheet and bake for 3 minutes; they are already baked, but this will give them a light crisp. Set aside and cool for 5 minutes.
  • Add the cream cheese, powdered sugar, milk, orange zest and vanilla to the bowl of an electric mixer fitted with a paddle attachment and whip together until light and fluffy, 1 to 2 minutes. Spoon the mixture into a pastry bag and set aside. Snip a small opening in the tip of the bag with a pair of scissors just before you are ready to fill the cups. No piping top needed.
  • Spoon 1/2 teaspoon of the cherry preserves into the bottom of each phyllo cup. Pipe a swirl of the cream cheese mixture into each cup, completely covering the preserves. 2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch fine sea salt
1 1/2 sticks (6 ounces) unsalted butter, at room temperature
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup sour cream
1/2 cup milk
Filling:
8 ounces cream cheese, at room temperature
1/3 cup granulated sugar
1 large egg
Frosting:
3 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
1/3 cup sour cream
1/2 teaspoon lemon juice
1 1/2 cups confectioners' sugar
Graham cracker pieces, for garnish

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Line two 12-cup standard muffin tins with paper liners.
  • Combine the graham cracker crumbs, granulated sugar, cinnamon and butter in a small bowl. Drop a heaping tablespoon of graham cracker mixture into each muffin cup. Press to create a firm layer of crust on the bottom. Bake 7 minutes. Set aside to cool completely.
  • For the cupcakes: Combine the flour, baking powder, baking soda and salt in a medium bowl.
  • Using a hand mixer or stand mixer, cream the butter and granulated sugar together until fluffy, 2 to 3 minutes. Add the eggs, one at a time, scraping down the bowl between additions. Beat in the vanilla.
  • Whisk together the sour cream and the milk. Add the flour mixture and milk mixture in three additions, alternating between wet and dry ingredients and starting and ending with flour mixture. Beat just until well combined, taking care not to overmix.
  • For the filling: Beat the cream cheese and granulated sugar in a bowl with an electric mixer at medium speed until light and fluffy, about 3 minutes. Beat in the egg just until combined. Spoon the filling into a pastry bag fitted with a medium-size plain tip (Ateco 800). Insert the tip into the top of each cupcake batter and squeeze the filling until the batter rises to fill each cup about three-quarters of the way up the side of the tin.
  • Bake until lightly golden and a toothpick inserted about 3/4 inch from the edge of the cupcakes comes out clean, 18 to 20 minutes. Cool the cupcakes in the tins on a rack for 10 minutes, and then remove from the tins and cool completely.
  • For the frosting: Using an electric or stand mixer, beat the cream cheese and butter together at medium speed until fluffy, about 2 minutes. Scrape down the sides of the bowl. Beat in the sour cream and lemon juice. On low speed, gradually add the confectioners' sugar and beat until well combined.
  • Frost the cupcakes as desired. Garnish with graham cracker pieces.

  • Open the chocolate pudding cups and spoon the pudding into a medium bowl. Place the pudding in the refrigerator and wash out the plastic cups.
  • Using scissors, cut the cups down one side and across the bottom, leaving one side of the cup intact. Tape the cut edges together to seal the cups. Set aside.
  • Place the chocolate chips in a medium microwave-safe bowl. Add the coconut oil and melt in the microwave in 30-second intervals for 1 minute total. Stir the chocolate until smooth.
  • Spoon the melted chocolate into the plastic cups. Tilt the cups to coat the insides completely and pour any excess chocolate back into the bowl.

  • Transfer the reserved chocolate pudding to another piping bag or zip-top plastic bag with a corner cut off.
  • Peel the tape off the pudding cups and carefully remove the plastic from the chocolate cups.
  • Flip the cups upright and pipe the chocolate pudding into the bottom of the cups. Top the pudding with the cheesecake mixture and your favorite dessert toppings, such as crushed peanuts, caramel sauce, crushed cookies, and/or strawberries.
