- Microwave chicken according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add green pepper and onion; stir-fry until crisp-tender, 3-4 minutes. Drain pineapple, reserving the juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to measure 1-1/3 cups; stir in vinegar, soy sauce and ketchup. , In a large bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in chicken and pineapple; heat through. If desired, serve with rice and sprinkle with green onions and sesame seeds.

- Mix flour, garlic powder, salt, and black pepper together in a bowl. Beat eggs and lemon juice together in a separate bowl.
- Heat 1 1/2 to 2 inches of oil in a large pot over medium heat.
- Dip the chicken pieces into the flour mixture, then the egg mixture, and again into the flour mixture.
- Test the oil to make sure it is hot enough: a small amount of flour dropped in should sizzle. Place 10 pieces of chicken into the hot oil; cook until golden brown, about 8 minutes. Remove from the oil and drain on a paper towel lined plate and season with salt. Repeat with remaining chicken.

- Preheat an oven to 425 degrees F (220 degrees C). Grease a baking pan.
- Season chicken with salt and pepper.
- Combine bread crumbs and Parmesan cheese in a bowl.
- Heat olive oil in a small saucepan over low heat, about 1 minute. Add garlic; stir and remove from heat. Coat chicken in the oil and dip into the bread crumb mixture. Transfer coated chicken to the prepared baking pan.

POPCORN CHICKEN TWO WAYS: SOUTHERN STYLE AND ITALIAN STYLE
Steps:
- For the popcorn chicken: Cut the chicken breasts into equal bite-size pieces and place in a large bowl, sprinkling with 1 teaspoon of the sea salt. Completely submerge the chicken in the buttermilk, and then cover and chill at least 1 hour and up to 8 hours.
- Combine the flour, remaining sea salt, cayenne, baking powder, onion powder, oregano, turmeric and lots of black pepper in a large resealable plastic bag and shake well.
- Heat oil in a large pot to 350 degrees F over medium heat. Transfer one-third of the chicken pieces from the marinade to the plastic bag with the flour using a slotted spoon and shaking off any excess liquid. Seal the bag and shake to coat well. Shake off any excess flour from the chicken and then carefully transfer to the hot oil. Fry until golden brown and cooked through, 3 to 4 minutes, and then drain on paper towels. Repeat with the remaining chicken.
- For southern style: Serve the chicken over the waffles and smother in maple syrup.
- For italian style: Combine the tomatoes, olives, parsley, oil, vinegar, sugar, salt, black pepper, basil, minced garlic, oregano and chile in a bowl and mix well. Let sit to allow the flavors to come together 30 minutes before serving.
- Cut the baguette into 6 equal pieces, and then halve each piece horizontally (as if making a sandwich). Hollow out the center of each piece with your hands and rub the surface of the bread with the smashed garlic and brush with olive oil. Grill or toast the bread until golden.
- Spoon some of the bruschetta mixture into the hollowed out grilled baguettes and top with popcorn chicken and large shavings of Parmesan.
EASY POPCORN CHICKEN RECIPE

- In a medium bowl, combine the flour, salt, and garlic powder.
- Pour the buttermilk into a separate bowl and the panko crumbs onto a plate.
- Dredge a piece of chicken into the flour mixture until evenly coated then dip in buttermilk, letting excess drip off. Lastly, roll in panko bread crumbs until evenly coated. Transfer to a platter.
- Preheat 1-inch of oil in a deep frying pan over medium heat. Adjust the heat to keep the oil at 350˚F. Fry the popcorn chicken in small batches, leaving space between each piece and flipping as needed. Fry until golden brown and 165˚F at the deepest part of the chicken on a thermometer.
- Remove the popcorn chicken from the oil and let it rest on a paper towel-lined plate. Serve immediately with your favorite dipping sauce!

- Preheat oven to 375°F (190°C) and spray a baking sheet with nonstick oil.
- Cut chicken breasts into bite-size pieces and place in a bowl.
- Add the barbecue sauce to bowl with chicken and stir.
- In a large ziplock bag, crush the barbecue chips into desired crumbs (to replace bread crumbs).

- Tip the chicken into a large bowl with the buttermilk and 1 tsp salt. Cover and chill in the fridge for at least 12 hrs, or up to 24 hrs.
- The next day, make the coating. Combine the paprika, garlic granules, mustard powder, dried herbs, cornflour, baking powder and 1 heaped tsp salt for the coating. Shake the excess marinade from each piece of chicken and dunk these into the coating mixture. Toss until each piece is well coated, then set aside on a tray.
- Pour the oil into a deep pan until it is no more than a third full and heat until it reaches 175C. If you don't have a thermometer, drop in a little of the marinade - it should immediately sizzle. Add about five pieces of chicken at a time and fry each batch for 5 mins, or until deep golden brown. Remove the cooked popcorn chicken to a plate lined with kitchen paper using a slotted spoon and leave to drain while you cook the remainder. Serve the popcorn chicken on a platter with a selection of your favourite dips for dunking.
