Australian Gourmet Traveller recipe for cheese biscuits.

100 gm butter, chilled, diced
120 gm plain flour
50 gm each finely grated parmesan and vintage cheddar
1 egg yolk
To season: ground mace, to season (optional)

Steps:

  • Rub butter into flour with your fingertips in a bowl until mixture resembles fine crumbs (or combine in a food processor), then add parmesan and cheddar, season with a pinch of fine salt and mix to combine. Combine egg yolk and 25ml water in a bowl, add to flour mixture and bring together with your hand, then turn out onto a lightly floured surface and knead gently until smooth. Roll out to 20cm x 30cm between sheets of baking paper, then refrigerate to rest and chill (1 hour).
  • Preheat oven to 170C. Remove paper from dough and cut dough into rounds with a 4.5cm cutter and place on oven trays lined with baking paper. Season with sea salt flakes, mace and a very generous grinding of black pepper. Bake, swapping trays halfway through cooking and flipping biscuits so they brown on both sides, until golden (16-18 minutes). Set aside to cool. Biscuits will keep in an airtight container for 1-2 days. If they soften, refresh them in a warm oven before serving.

3/4 cup sifted all-purpose flour
1 tablespoon curry powder
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon dry mustard
1/4 cup butter
3/4 cup grated cheese (whatever kind of cheese you prefer)
1 egg yolk
3 tablespoons sweet milk

Steps:

  • Mix dry ingredients by sifting into a mixing bowl.
  • Cut in the butter with a pastry blender.
  • Stir in grated cheese.
  • Combine egg yolk and milk by stirring with a fork; add to the dry mixture.
  • Continue stirring with fork until a stiff dough forms.
  • Turn out on lightly-floured board and roll out until 1/8-inch thick.
  • Cut into shape desired.
  • Place on a lightly greased baking sheet.
  • Bake at 375*F for 7-8 minutes.

This year is the Centenary of Federation of Australia, and this recipe was provided by the great-granddaughter of Henry and Isabella Parkes (your equivalent of a first lady). In Australia, we call them biscuits, rather than cookies, but they are well worth trying.

⅔ cup butter, softened
1 cup white sugar
2 eggs
½ teaspoon baking soda
¼ cup hot water
1 ½ cups chopped pitted dates
1 ½ cups golden raisins
1 ⅔ cups all-purpose flour
1 teaspoon ground cinnamon
1 cup chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, dissolve baking soda in hot water. Stir in the dates and raisins; set aside.
  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the date and raisin mixture. Combine the flour and cinnamon; mix into the batter until just blended. Finally stir in the walnuts. Drop dough by tablespoonfuls onto the prepared cookie sheet. Cookies should be at least 1 inch apart.
  • Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.
