This cheese and pickle sausage roll is a British favourite that has been given a makeover. Melted cheese and sharp pickle make this so moreish.

375g all-butter puff pastry
600g pork sausage meat
3tbsp Branston Small Chunk Pickle
60g mature Cheddar, cut into long 1cm batons
1 beaten egg, to glaze

Steps:

  • Roll out the pastry to make a 30x22cm rectangle. Keep the trimmings for decoration. Put into the fridge while you make the filling.
  • Pat out half the sausage meat to 30cm on a piece of baking parchment. This will make it easier to roll up.
  • Spoon the pickle over the centre of the sausage meat then put a line of the cheese through the centre. Pat over the rest of the sausage meat.
  • Use the parchment to roll it into a long sausage, keeping the cheese and pickle in the centre as much as possible.
  • Brush the pastry edges with egg, then put the sausage in the centre and join the pastry together around it. Flip it over onto an oiled baking tray. Brush all over with the glaze then decorate and glaze again. Chill until ready to bake it.
  • Heat the oven to 220C. Bake for 35 mins. Serve hot, at room temperature or cold.

1/2 lb. sweet or spicy Italian sausage, casings removed
1 Tbsp. unsalted butter
2 large eggs
Pinch of kosher salt
Pinch of crushed red pepper flakes (optional)
2 English muffins, toasted
Harissa paste (for muffins)
3 oz. feta cheese, thinly sliced
1/3 cup sliced drained Peppadew peppers (about 3 oz.)
1/2 cup cilantro leaves with tender stems
Mayonnaise (for muffins)

Steps:

  • Using damp hands, form sausage into two 1/4"-thick patties.
  • Heat a large cast-iron skillet over medium-high until hot. Cook patties until golden brown on bottom side, about 2 minutes. Turn and continue to cook until other side is browned and cooked through, 2-3 minutes more. Transfer to a plate. Wipe out skillet.
  • Heat butter over medium in same skillet until melted. Cook eggs, undisturbed, until whites are set, edges are golden, and yolks are still runny, 4-5 minutes. Season with salt and red pepper flakes (if using). Remove pan from heat.
  • Spread harissa on 2 muffin halves. Top with feta, patties, eggs, peppers, and cilantro. Spread mayonnaise on remaining muffin halves, then close up sandwiches.

1 garlic clove, minced

1/4 teaspoon dried oregano
1 loaf (1 pound) unsliced Italian bread
1-1/2 cups shredded part-skim mozzarella cheese

  • In a large skillet, cook the sausage, onion and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Add the cream cheese, mushrooms, Parmesan cheese, water and oregano. Cook and stir until cheese is melted. , Cut bread in half horizontally; hollow out top and bottom, leaving a 3/4-in. shell (save removed bread for another use). , Place bread bottom on a baking sheet. mayonnaise, to taste (I just spread thinly on each slice)
mustard, to taste (whatever kind you like, I like yellow or spicy stone-ground)
1 -2 slice cheddar cheese (better with a at least a medium-sharp cheddar, if not sharp cheddar)
1/4 cup bread and butter pickles, drained (or to taste)

Steps:

8 slices sourdough bread

Steps:

  • Divide half of cheese among 4 slices of bread. Top with pickles, salami, and remaining cheese. Close sandwiches and spread half of butter evenly over top of bread slices.
  • Heat a large skillet, preferably cast iron, over medium-low heat. Place sandwiches, buttered side down, in skillet. Spread remaining butter over top of bread. 1 tablespoon garlic, granulated
1 tablespoon black pepper, fresh cracked
2 tablespoon Worchester sauce
2 tablespoons olive oil
2 cups yellow onions, sliced thin
2 cups red bell peppers, julienned
1 pound Italian sausage, links in casing, hot preferred
3 tablespoons garlic, minced
1/2 cup red wine
1/2 cup chicken stock
1 tablespoon paprika
1 teaspoon celery salt
1 tablespoon chili powder
1 large Sourdough loaf, 18 inches
1 tablespoon Salt
6 slices Provolone cheese
3/4 cup Hot Pickled Veggies, recipe follows
10 cups water
1/2 cup garlic cloves, cut in quarters, divided into 1/4 cup portions
2 tablespoons salt
1 teaspoon peppercorns
1/2 cup baby carrots, cut in half
1/2 cup cauliflower florets
1/2 cup celery, cut in 1-inch pieces
1/2 cup Anaheim pepper, julienned
1/4 red bell pepper, julienned
1/4 red onion, julienned
1/4 cup extra virgin olive oil
1/2 teaspoon red chili flakes
1/2 teaspoon fresh-cracked black pepper
1/2 teaspoon salt
1/2 teaspoon sugar
1 1/4 cup red wine vinegar
1 cup Spanish olive, large, diced
1/2 cup black olives, seeded, diced
1/4 cup pepperoncinis, stems, seeds removed, diced

Steps:

  • Rub tri tip with salt, granulated garlic, pepper and Worchester. Let sit for 20 to 30 minutes then grill until medium rare.
  • In a medium saute pan over medium high heat, heat olive oil, add onions, peppers, and sausage. Cook for 10 minutes or until onions are translucent. Add garlic, cook for 2 minutes, then deglaze with wine and chicken stock. Simmer, and add paprika, celery salt, and chili powder.
  • Cut bread in half length ways, remove some of bread from center, and toast lightly.
  • After tri tip has been cooked, slice on a bias as thin as possible.
  • Place cooked onion and pepper mixture on bottom piece of bread, slice Italian sausage into 6 slices per link. Add all sausage slices to onion mixture on bread, add sliced tri tip, top with Provolone cheese and add Hot Pickled Veggies. Top with top crust of bread and slice into 2 inch slices
  • In a large pot of boiling water, blanch vegetables. Add half of the garlic and the salt and peppercorns. Start with Carrot, boil 30 seconds, add in Cauliflower, boil 30 seconds, add celery boil 15 seconds, then add Anaheim peppers, bell peppers and red onion time 15 seconds more. Immediately remove all from water and immediately put in ice bath. Discard peppercorns and garlic.
  • In a large jar, add the uncooked garlic, olive oil, red pepper flakes, cracked pepper, salt, sugar and one cup of the vinegar. Chop the cooled blanched vegetables into dice. In a bowl combine the olives, pepperoncinis and the diced vegetables. Add the mix to the jar with the seasonings, cap and shake to combine seasonings into mix. Top with additional red wine vinegar to cover mix if necessary. Refrigerate 24 hours. Will keep for 2-3 weeks under refrigeration.

  • Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie; add pickled onions. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
