A family favorite, especially on New Year's Eve, this pumpernickel party appetizer with bacon and cheese topping is perfect for holiday parties, ball games or a quick snack.

1 pound sliced bacon
2 ½ cups shredded Cheddar cheese
2 tablespoons prepared mustard
1 cup mayonnaise
1 pound sliced pumpernickel party bread

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Preheat oven to broil.
  • In a medium bowl combine the bacon, cheese, mustard and mayonnaise. Stir well. Arrange party bread on a cookie sheet. Spoon mixture onto each slice of bread.
  • Broil for 5 minutes, or until bubbly.

  • Cook bacon crumble and set aside.

1 (8 ounce) can refrigerated crescent dinner rolls
8 -10 slices bacon, diced and fried crisp
2 tablespoons sour cream
1 (8 ounce) package cream cheese, softened
4 -6 green onions, chopped
2 teaspoons sugar
1 dash garlic powder
1/4 teaspoon salt

Steps:

  • Preheat the oven to 375*.
  • In a small bowl, mix all your ingredients well, except for the refrigerator roll dough.
  • Separate rolls into 4 rectangles and press the perforations to seal.
  • Cut in 1/2 lengthwise then crosswise to make 8 squares each.
  • Stretch slightly and with a spoon take a small amount of the filling.
  • Put it in the center of the square then seal around the filling to make a ball.
  • Place on lightly greased cookie sheet and bake 10 to 13 min or until lightly brown.

I am posting this recipe in memory of my dear friend, Dot, who died in 2008. Dot was a wonderful lady and matriarch of a large and fascinating family. She was also an avid and excellent cook. It didn't matter when you arrived at Dot's home, there was always some freshly made goodie for you to sample. These puffs were just one of her offerings. The yield is a guess, as I forgot to write down what she said. Love you, Dot, and miss you!

1/2 cup milk
1 egg, lightly beaten
2 cups grated cheese, a sharp cheddar is best
2 medium onions, finely chopped
3 slices bacon, finely chopped
1 cup self-raising flour
1 teaspoon grainy mustard (or French mustard)

Steps:

  • Preheat oven to 180°C/350°F.
  • Combine egg and milk, and stir into remaining ingredients.
  • Drop by rounded teaspoon onto a lightly greased cookie sheet.
  • Bake until golden (about 20 minutes).
  • Cool on wire racks.

My own creation, easy and versatile.My husband loves Canadian Bacon and these are light and fluffy and go well with any breakfast or just on their own. Take them to work and pop them in the microwave. Bring to a brunch and share them with your friends. We had them for dinner. My husband really enjoyed them.

1 8 pack of grand biscuits
4 pieces of canadian bacon cut up in fours
4-5 eggs beaten
8 cubes of your favorite cheses ( i used colby jack)

Steps:

  • 1. Preheat oven to 400F. In a bowl beat eggs with salt & peper and set aside.
  • 2. Seperate biscuits and flatten in a greased cup cake pan bringing dough up the sides.
  • 3. Add canadian bacon and cheese. Pour egg mixture over meat and cheese. Be careful to not over fill. Bake for 30 minutes or until thorouly cooked. Let set for 10 minutes. Remove from pan on to a plate. Enjoy

1 1/2 cups water
1/2 cup butter
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon red pepper
1/4 teaspoon black pepper
8 pieces bacon, crumbled
6 eggs
8 ounces crumbled blue cheese
4 green onions, chopped

Steps:

  • Bring water and butter to a boil over med.
  • heat.
  • Stir in flour, salt and peppers with a wooden spoon until mixture leaves the sides of pan and forms a soft ball.
  • Remove from heat.
  • Beat in eggs, one at a time.
  • Add Cheese, onion& bacon.
  • Dip by teaspoonful onto a lightly greased cookie sheet.
  • Bake@ 400 F for 20 to 25 minutes.

  • Bring water, butter, and salt to a rolling boil in a medium, heavy bottomed saucepan over medium-high heat. Stirring vigorously, add in all of the flour and cook until the dough begins to pull away from the edges of the saucepan. Remove dough from heat and transfer to bowl of a stand mixer and allow to cool for approximately two to three minutes. Alternately, you can leave in the saucepan and use a hand mixer, if desired. Add in eggs, one at a time, beating in completely after each addition. Stir in cheese, bacon pieces, black pepper, and red pepper, making sure all ingredients are well-combined.
  • Scoop tablespoon pieces onto baking sheet. Using a damp finger or back of a spoon, press down any pieces of dough that are sticking up to prevent them from overbrowning. Bake 25-30 minutes, until puffs have turned a golden brown. Remove from the oven and allow to cool slightly.
  • Serve immediately or allow to cool completely, place in airtight container or zip top freezer bags and freeze up to three months.
