Impossibly Easy Mini Cheeseburger Pies image

Cheesy flavorful dinner for six ready in an hour! Serve your family with this delicious beef pie - that's made using Original Bisquick® mix.

1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup milk
1/2 cup Original Bisquick™ mix
2 eggs
12 mini kosher dill pickles
1 medium tomato, chopped
Ketchup and mustard

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain. Cool 5 minutes; stir in Worcestershire sauce, garlic salt and cheese.
  • In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup burger mixture. Spoon 1 tablespoon baking mixture onto burger mixture in each muffin cup.
  • Bake about 30 minutes or until toothpick inserted in center comes out clean, and muffin tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of muffins from pan; remove from pan and place top side up on cooling rack. Cool 10 minutes longer, and serve with garnishes.

Cheeseburger Mini Muffins image

These have been one of my family's favorite way to eat a cheese burger. These are great frozen so make a bunch and have them on hand when company drops by. Can be made in regular muffin tins - bake this size for 20 minutes- you should get about 2 dozen. They go fast so make more than one batch.

1/2 lb lean ground beef
1 small onion, finely chopped
2 1/2 c flour
1 Tbsp brown sugar
2 tsp baking powder
1 tsp seasoned salt
3/4 c ketchup
3/4 c evaporated milk
1/2 c butter or margarine, melted
2 large eggs
1 tsp prepared dry mustard
2 c shredded cheddar cheese

Steps:

  • 1. In a skillet , cook and scramble beef and onion over medium heat until meat is no longer pink; drain. In a bowl combine the flour, sugar, baking powder, mustard and salt. In your mixer bowl, combine ketchup, milk, margarine and eggs; mix in dry ingredients just until moistened. Fold in the beef mixture and cheese. Fill greased mini-muffin cups 3/4 full. Bake at 425^ for 12-15 minutes or until toothpick comes out clean when tested. Cool for 5 minutes before removing from pans to wire rack. Refrigerate any leftovers. This is a great freeze make ahead recipe. Note: Do not use paper liners as they will stick but DO grease or spray muffins tins WELL.

1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
1-1/2 teaspoons Worcestershire sauce
1 tube (12 ounces) refrigerated buttermilk biscuits
1/2 cup cubed Velveeta

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Remove from the heat; set aside., Press each biscuit onto the bottom and up the sides of a greased muffin cup. Spoon beef mixture into cups; top with cheese cubes. Bake at 400° for 14-16 minutes or until golden brown. Freeze option: Freeze cooled pastries in a freezer container, separating layers with waxed paper. To use, thaw pastries in the refrigerator for 8 hours. Reheat on a baking sheet in a preheated 375° oven until heated through.

1 large onion (chopped)
2 cloves garlic (minced)
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup Bisquick
1 cup whole milk
2 large eggs
1 cup extra-sharp cheddar cheese (grated)

Steps:

  • Preheat the oven to 400 °F. Spray a 9-inch pie plate with nonstick cooking spray.
  • In a large skillet, cook the ground beef (1 pound), onion (1), garlic (2 cloves), Worcestershire sauce (1 tablespoon), 1 teaspoon salt, and pepper (1/2 teaspoon) over medium heat, until beef is brown and there is no longer any pink, about 10 minutes. Remove excess fat. Pour cooked beef into the prepared pie plate.

1 large onion, chopped
1/2 tsp. salt
1 cup shredded cheddar cheese
1/2 cup Bisquick
1 cup milk
2 eggs

Steps:

  • Preheat oven to 400 degrees.
  • Brown ground beef and onion together until meat is cooked. Mix in salt. Spread in bottom of glass baking pan. Sprinkle cheese on top.
  • In a separate bowl, mix together Bisquick, milk and eggs (mixture is supposed to be runny). Pour mixture over meat and cheese.
  • Bake in oven 25 minutes or until a knife inserted comes out clean.
