- Fry the thinly sliced steak very quickly on a high heat - just enough to brown and cook it through.
- Remove from the pan and add a splash more oil. Fry the peppers and onions until soft, then add the garlic and mushrooms and fry until the mushrooms have got some colour. Add the steak back to the pan, season, and stir everything together.
- Cut the slider buns in half. Brush butter on both the top and bottom and place the bottom halves on a baking tray. Spoon a small amount of mayo on the cut side of the buns, then top with cheddar slices and a hearty amount of the steak-pepper mix. Top with mozzarella and the top of the buns, then lay foil over the top and press another tray on top to squash them.

- Slice hoagie rolls 3/4 of the way through with a serrated knife. Dice onions and thinly slice beef.*
- In a small bowl, stir together 2 Tbsp softened butter with 1 pressed garlic clove. Spread garlic butter onto the cut sides of 4 hoagie roll. Toast the buns on a large skillet, flat cooktop or griddle on medium heat until golden brown then set aside.
- Add 1 Tbsp oil to your pan/cooktop and sautee diced onions until caramelized then transfer to a bowl.

- Cover one slice of bread with half of the provolone, so 1/4 cup. If you can get a big chunk of provolone from the deli counter and shred it yourself, that would be best. Otherwise use sliced provolone and put one slice of cheese on one slice of bread.
- Heat the pan on medium.
- Add a slab of butter to the pan and let it melt completely.
- Sauté the slices of ribeye and season with a little salt and pepper. Thin slices are best, and if you cut them into small pieces, they'll work well in this kind of sandwich.
- After the steak has been cooking for about a minute or two, add the peppers and onions to the pan. Cook until the meat is cooked through, onions start getting a little translucent, and before the peppers get too charred. About 5 minutes or less should be enough.

- Once the first side is golden brown, flip and cook the other side.

- Add the ground beef to a hot medium to large-sized skillet over medium heat. Let the meat cook for a minute or two, developing a nice sear. Flip the chunk of meat, repeating to sear the other side. Once both sides are seared use a spatula to break the meat up as much as possible. Drain the meat and return to the skillet.
- Add in the salt, pepper, and Worcestershire, stirring occasionally and cooking until fully browned. Remove the meat from the pan, and set it aside.

- Before starting, place beef in the freezer for about 20 to 30 minutes. This will make it easy to slice thinly.
- Add 2 tablespoons vegetable oil to a large, deep (14-inch) sauté pan and place over MEDIUM-LOW heat. Add onion and bell peppers. Allow to cook, stirring occasionally, until very tender. If they are beginning to brown, turn the heat under the skillet down a bit. While the veggies are cooking, prepare the steak, returning to stir every now and then.
- Remove steak from freezer and place it on a cutting board. Use a sharp knife to trim edges of excess fat and then slice it as thinly as possible across the grain. Chop the sliced steak into very small pieces. Keep chopping until you can chop no more! You want little ¼-inch-ish pieces. Check on those veggies periodically while you're prepping the beef.
- When the veggies are tender, transfer them to a dish and return the skillet to the heat. Add additional oil and place over MEDIUM-HIGH heat. Add half of the chopped steak and cook, stirring frequently, for about 4 to 5 minutes, or until no pink remains. Season with ½ teaspoon each seasoned salt and garlic pepper while cooking. Transfer first batch of steak with a slotted spoon to dish with onions and peppers, leaving juice behind in pan. Add additional oil, if needed and repeat with remaining steak and seasoning.
- Preheat oven to 400 degrees F.
- Split open the hoagies rolls but do not separate them. Spread them with the softened butter and place them on a baking sheet. Transfer the baking sheet to the oven and bake for 3 to 5 minutes or until lightly golden and toasted.

- Thinly slice beef into long, thin strips and place in the slow cooker.
- Add garlic powder, onion powder, black pepper, and salt. Toss to coat the beef with the seasonings.
- Add bell pepper, onion, and beef broth, and stir to combine.
- Cover and cook on low for 6-8 hours, until beef and vegetables are tender. For a party, switch to the warm setting after filling is cooked.
- For toasted buns and melted cheese, preheat the broiler in your oven on low. A toaster oven could also be used for this step.
- Slice the rolls with a serrated knife and place them open-faced on a baking sheet under the broiler until lightly toasted, approximately 2-3 minutes. You can toast with the cheese on the buns if you like, or wait until after you fill with the beef mixture and place back under the broiler until cheese is melted, about 3-4 minutes. Serve warm.

- Preheat a grill to medium-high heat and place a disposable aluminum foil pan on one side of the grill.
- In a medium bowl, beat together the Cheddar, cream cheese, mayonnaise, garlic powder, smoked paprika and cumin until smooth. Set aside until needed or keep refrigerated in an airtight container for up 2 weeks.
- Set aside 2 teaspoons of the chili seasoning. Sprinkle the steak with the remaining seasoning.
- Add the butter, peppers and onion to the aluminum pan. Sprinkle with the reserved 2 teaspoons chili seasoning. Cook the vegetables, stirring occasionally, until tender, 2 to 3 minutes. Remove and let rest.
- While the vegetables cook, drizzle the steak with oil and cook on the empty side of the grill until medium-rare to medium, about 5 minutes per side, depending on the thickness of the steak. Rest the steak on a rack for 5 minutes. Thinly slice against the grain and add to the pan with the vegetables. Lower the grill to medium heat.
- Partially split the hoagie rolls, leaving just enough of the roll attached so they open like a book. Toast the cut side of the rolls on the grill. Spread a large spoonful of the cheese mixture onto each side of the rolls. Divide the steak, peppers and onions equally between the rolls. Top each with 2 slices of provolone. Close the sandwiches, wrap each in aluminum foil and put back on the grill to toast. Cook until the cheese is melted. Let cool slightly before unwrapping and serving.

- Make the Filling: In a large saute pan, heat oil over medium-high heat until shimmering. Saute bell peppers, onions and mushrooms until they begin to soften, about 4-5 minutes. Stir in garlic and cook about 30-60 more seconds. Season the veggies lightly with salt and pepper and then remove to a medium-sized bowl (you'll use this later for the meat, so make sure it's at least medium-sized).
- Add the ground beef to the same saute pan and cook, breaking it up with a wooden spoon or spatula along the way, until there is no longer any pink showing. While it cooks, season the meat with 1 teaspoon salt, 1/2 teaspoon pepper, and a pinch of red pepper flakes. Drain any excess grease.
- Stir in Worcestershire sauce and the cooked veggies until everything is combined. (Freezing instructions begin here.) Remove the meat mixture to the bowl the veggies were in earlier. Wipe out the pan until clean.
- Build the Sandwiches: Lay the bread slices on a cutting board and butter one side of each piece of bread. Then lay them butter side down. On the inside of one piece of bread, place a slice of cheese, scoop about 1/3 cup of the beef mixture on top of that, top with another slice of cheese, and place another piece of bread on top (butter side up).
- Grill the Sandwiches: Place the saute pan over medium-low heat. Grill each sandwich for 2-3 minutes per side, until the outside is browned and cheese is melted.

- Combine the orange juice, soy sauce, maple syrup, olive oil and balsamic vinegar in a small bowl and pour over the skirt steak in a pan to marinate, up to 30 minutes.
- In a medium saucepot, bring the cream to a boil. Slowly whisk in the American cheese until a sauce is formed. Keep warm.
- Preheat a charcoal grill to medium-high heat.
- Toss the onions and peppers in a bowl with some olive oil and season with salt and pepper. Place on the grill and cook until lightly charred and tender, 7 to 10 minutes.
- Remove the skirt steak from the marinade and cook on the grill until medium-rare, 3 to 4 minutes per side. Remove from the grill and let rest for 10 minutes.

- When ready to cook, place a flat cast iron griddle or large skillet on one side of the grill grates. Set the Traeger temperature to 450°F and preheat with the lid closed for 15 minutes.
- Season the bell peppers and onion liberally with salt and black pepper. Season the steak slices with Traeger Beef Rub.
- Add the canola oil to the hot cast iron griddle, then add the onion and season with more salt. Close the lid and sauté the onion, stirring occasionally, until translucent, about 5 minutes. Add the bell peppers and cook until softened, about 10 minutes more.
- While the peppers and onions are cooking, place the seasoned steak strips directly on the grill grates next to the skillet. Close the lid and cook for 3 minutes per side, until lightly browned and cooked through.
