CHEESY SAUSAGE AND POTATO BREAKFAST CASSEROLE
A delicious crowd-pleaser for brunch. Can also be made the night before and refrigerated, then baked in the morning.

Steps:
- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
- Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
- Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.
- Mix eggs, half the Cheddar cheese, milk, salt, and pepper into the bowl with the sausage mixture.
- Grate potatoes and add to the bowl of sausage mixture. Pour mixture into the prepared dish; place remaining Cheddar cheese on top.
- Bake in the preheated oven until casserole is heated through and cheese is melted and bubbly, about 35 minutes.

- Preheat oven to 350 degrees F. Lightly coat a 9-inch baking dish with nonstick spray. Place potatoes and 1/4 cup water in a microwave-safe bowl. Cover and place into microwave for 4-5 minutes, or until tender; drain well and set aside. In a large glass measuring cup or another bowl, whisk together eggs, milk and hot sauce; season with salt and pepper, to taste; set aside. Heat olive oil in a large skillet over medium high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat. Stir in bell peppers and potatoes until tender, about 3-4 minutes. Remove from heat. Stir in 1/2 cup cheddar cheese until well combined. Place sausage mixture evenly into the baking dish. Pour egg mixture evenly over the top and sprinkle with remaining 1/2 cup cheese.* Place into oven and bake for 35-40 minutes, or until the eggs are firm. Serve immediately, garnished with parsley, if desired.

I made this one morning camping, I usually make fried potatoes & eggs for everyone, but now I use Simply Potatoes, So much easier Plus you can use the different brands they sell. my favorite is southwest style. no chopping Onions, red, & green bell peppers up :-) I use hot sausage links cooked and browned ahead of time. usually the day before, I slice them like a 1/2 to 3/4 inch thick and save in fridge for the morning.

Steps:
- In a 12" skillet add sausage links, poke holes in the links with a fork or toothpick to release some grease, add 2 cups of water and cook on medium heat turning often until water is gone, about 20 minutes. continue cooking & turning until the links are browned on all sides, remove from pan & slice the links 3/4" inch and save for next step.
- In a 12" Skillet or dutch oven, heat 2 Tbls of oil on Medium heat.
- Add Potatoes and the Pre-cooked, & browned, Hot sausage slices.
- Mix well, flatten,add salt &pepper and cook on medium heat for about 8 minutes.
- add 1 tbls of oil drizzled around on top of potatoes and turn with spatula.
- cook for another 8 minutes or until potatoes are soft and browning.
- turn them again if you want to brown them more. for a few minutes.
- Reduce heat to medium-low. Add eggs. Cook for 3 to 4 minutes, stirring occasionally, until eggs are set.
- Top with Cheese, turn off heat and cover with a lid or foil for a minute or 2.
- so the cheese melts some.
- serve with a cup of OJ and Toast.

- Preheat oven to 350 degrees.
- Lightly grease a medium baking dish.
- Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.
- Remove sausage to a separate plate.
- Add the butter to the same skillet and replace over medium heat.
- Add the package of diced potatoes.
- Cook and stir until lightly browned and slightly crispy on the outside.
- Place the potatoes in the prepared baking dish.
- Sprinkle with half of the seasoning salt and pepper.
- Cover with the sausage.
- Sprinkle the cheese over all.
- Pour the eggs over the top.
- Finish with the rest of the seasoning salt and pepper.
- Bake 30 minutes in the preheated oven, or until the eggs are fully cooked.
- If the dish has been refrigerated and is cold, it can take up to an hour to bake.

- In a large bowl combine potato wedges and 2 tbsp olive oil, toss to coat.
- Place potatoes on a large sheet pan.

- Add the sausage to a medium saute pan. Cook over medium-high heat until browned, crumbling the sausage with a spoon as it cooks. Remove sausage with a slotted spoon and transfer to a large mixing bowl. Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest. Add the onion and red pepper* to the saute pan, and saute for 5 minutes until cooked. Add the garlic and saute for an additional 2 minutes until fragrant. (If using the jarred roasted red peppers, wait to stir them until after the garlic.) Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and veggies. Stir to combine.
- In a separate bowl, whisk together the eggs, milk and black pepper until combined. Then add them to the hashbrown mixture, and stir to combine. Pour the mixture into a 11×7-inch or a 9×9-inch baking dish (a 9×13-inch dish will also work), and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 30 minutes. Then remove the aluminum foil and bake for an additional 10-15 minutes until the potatoes in the center are cooked through. (I recommend just using a fork to pull out one of the potatoes in the center of the casserole, and test it to see whether it’s tender and cooked through). Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve!
