EASY CHEESY BACON EGG BAKE
Steps:
- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and lay out the bacon in strips width-wise. Bake for 14 minutes, or until just crispy. Remove from pan and let drain on paper towels. Reserve 2 Tbsp of the bacon grease in a small frying pan over medium heat, add the green onions, and cook for 3-5 minutes, or until they begin to brown and become fragrant.
- In a greased 9-inch, deep dish pie plate, add the potatoes evenly across the bottom of the plate. Add the cheeses on top of the potatoes. Sprinkle the cooked green onions over the cheese.
- Crumble the bacon into small chunks, then spread it evenly over the top of the potato, cheese, and onion mixture.
- In a medium-sized bowl, whisk together the eggs, milk, salt, and pepper, then carefully pour over the contents of the plate, and gently shake the plate to fully distribute the egg mixture. Cover, then place in the fridge overnight, or for 8 hours.
- Preheat oven to 350 degrees. Remove cover from pie plate and place in the oven, bake for 60 minutes, or until the cheese is just starting to brown and the center has set. Remove from oven and allow to sit for a few minutes before slicing.
KIDS CAN MAKE: CHEESY EGGS-IN-THE-HOLE WITH BACON
Kids can use their favorite cookie cutter shapes to make this hearty breakfast with a grilled cheese-like twist. For little kids: Let them cut out the bread with cookie cutters. For big kids: Let them crack the eggs into the toast cut-outs, sprinkle with Parmesan and (if they're up to it) flip the slices.

- Heat a large nonstick skillet over medium-high heat. Fry the bacon until crisp, about 5 minutes. Remove the pan from the heat and transfer the bacon to paper towels to drain; when cool enough to handle, crumble.
- Add the butter to the hot pan to melt with the rendered bacon fat; set aside.
- Cut a piece from the center of each slice of bread using a 2 1/2-inch round or other decorative 2 1/2-inch cookie cutter (star, flower, heart). Brush the slices and cutouts with the butter-bacon fat mixture and transfer them to a plate.
- Toast 2 slices of bread and 2 cutouts in the skillet over medium heat until browned on one side, about 1 minute. Crack an egg into each hole and sprinkle each toast with 1 tablespoon of the Parmesan; cook 2 minutes. Flip the slices and cutouts, season with salt and pepper and cook 2 minutes for a runny yolk or slightly longer for a set egg. Repeat with the remaining bread slices, cutouts, eggs and Parmesan.
- Transfer each egg-in-the-hole to a plate and sprinkle with crumbled bacon. Serve with the toasted cutouts, for dipping in the yolk.

- Tip the flour and eggs into a large bowl, season and whisk to a thick, smooth paste. Stir in the milk until the batter is the consistency of single cream, then stir in 2 tsp mustard. Leave to rest for 30 mins.
- Heat the oven to 240C/220C fan/gas 9. Pour 2 tbsp oil into a heavy roasting tin, casserole dish or ovenproof skillet pan and tip to fully coat with the oil, then put on the middle shelf of the oven for 10 mins. Add the sausages, well spaced apart, and cook for 5-7 mins, then add the broccoli and sliced leek, and cook for another 3 mins. Mash the cheese with the 1 tbsp mustard.
- Pour the batter over the sausages, broccoli and leeks, then scatter over most of the mustardy cheese. Cook for 15 mins before turning the oven down to 220C/200C fan/gas 7 (don't open the oven door during this time). Sprinkle over the remaining mustardy cheese, then cook for 5-8 mins until melted, and the batter is puffed and golden brown.
- Meanwhile, make the gravy. Fry the onion with the remaining oil for 10-15 mins until lightly golden, adding a little water if they catch. Stir in the flour until it disappears, then add the vinegar and thyme. Season well. Sizzle until the vinegar evaporates, then pour in the stock and bubble uncovered for 10 mins, or until the gravy is the thickness you prefer.

- Cook the bacon in a large nonstick skillet over medium-high heat, flipping, until browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate (reserve the skillet).
- Meanwhile, use a 2 1/2- to 3-inch star cookie cutter to cut out the center of each slice of bread. Reserve the stars.
- Wipe out the skillet; add 1 tablespoon butter and melt over medium heat. Add 2 bread slices and 2 stars to the skillet and cook until golden brown on the bottom, 1 to 2 minutes. Flip the bread and stars and crack 1 egg directly into each of the cutout centers. Season the eggs with salt, then sprinkle each star with 1 tablespoon cheese. Cover the skillet and cook until the egg whites are set but the yolks are still runny, 2 to 3 minutes. Remove to plates. Wipe out the skillet; add the remaining 1 tablespoon butter and repeat to make 2 more eggs-in-a-hole.
- Serve the eggs-in-a-hole, cheesy stars and bacon with the strawberries.
TOAD IN THE HOLE WITH BACON

- Preheat oven to 375ºF/190ºC.
- The Toad:.
- Wrap the sausages in the bacon and place in a large roasting tin.
- Scatter the onion over it.
- Drizzle the oil over it and bake for 20 minutes.
- The Hole:.
- Sieve the flour and the salt into a bowl. Make a well in the center add the egg and gradually beat in half of the milk for two minutes.
- Stir in the rest of the milk and mustard.
- Remove the roasting tin from the oven when the sausages are just turning brown and pour the batter over them.
- Cook for a further 40 minutes or until done. The batter should have risen and it will be a lovely golden brown.
- Note: This can burn easily so keep an eye on it. :D You.
- The Gravy:.
- Heat the oil in a saucepan and sauté the onion for five minutes.
- Stir in the flour and cook for a minute then add the mustard, Worcestershire sauce and chicken stock.
- Bring to the boil, stirring all the time.
- Simmer for 15 minutes, checking the seasoning.
- Serve the Toad in the Hole with the gravy poured over it with mashed potatoes and veggies on the side.

- Using a biscuit cutter or round cookie cutter, cut out center of 1 slice of bread (discard center or save for another use). Spread mayonnaise on 1 side of bread slices. - Stir mayonnaise and Thousand Island dressing together in a small bowl. Set spread aside.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 8 to 10 minutes. Transfer to a paper towel-lined plate to drain.
