Not being a big fan of Barbecue, but Loving a man who LOVES it, i have to give in once in a while. Here's my take ( and I think Ry's favorite), on the classic. Made with Pre-made Barbecue Sauce ( I Prefer BullsEye) Its baked in the oven for convenience.

  • Preheat oven to 425.
  • Mix BBQ Sauce and A1 together.

This easy dinner recipe is a family favorite! With only one pan and minutes of prep, it layers the flavors of tender chicken, tangy BBQ sauce, crispy bacon, all over sweet baked onions.

2 lbs boneless, skinless chicken breast (3-4 chicken breasts)
1 sweet yellow onion
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/3 cup BBQ sauce
1/2 cup cheddar cheese
1/4 cup crumbled bacon
2 tbsp chopped green onions

Steps:

  • Preheat the oven to 400˚F.
  • Thinly slice the onion and place it in the bottom of a casserole dish.
  • Combine the salt, pepper, garlic powder, and onion powder and season both sides of the chicken. Lay the chicken on top of the onions.
  • Spread the BBQ sauce equally over each chicken breast. Sprinkle cheese over the top of the dish.
  • Cover and bake covered for 25 minutes, then uncovered for an additional 15-20 minutes or until chicken is cooked through (165˚F internal temperature.)
  • Top with crispy crumbled bacon and green onions. Enjoy!

The easiest, cheesiest baked BBQ chicken. This is basically tender cooked chicken breast doused in bbq sauce and topped with melty cheese, sliced red onions and pickled jalapeños. My baked bbq chicken takes roughly 30 minutes to throw together, making it ideal for weeknight dinners!

1 ⅓ pound boneless, skinless chicken breasts (see notes)
1 cup EACH: bbq sauce AND shredded cheese (see notes)
½ teaspoon garlic powder
⅓ cup red onion, thinly sliced
10-12 sliced pickled jalapeños
chopped cilantro, for serving

Steps:

  • PREP: Position a rack in the center of the oven and preheat the oven to 375ºF. Spray a 9x11 baking dish (or larger) with baking spray. In a bowl, add the bbq sauce and garlic powder and stir to combine, add the chicken breasts and stir so the chicken is evenly covered in the sauce. If you have time, you can allow it to marinate for an hour, if not, you can proceed immediately. Place the chicken breasts slide by side and pour any remaining bbq sauce over the chicken.
  • BAKE: the chicken for 20 minutes, uncovered. Remove the chicken from the oven. Add the shredded cheese over the chicken breasts, sprinkle with red onions and jalapeños. Place the baking dish back in the oven and continue baking for another 5-10 minutes or until the cheese melts and the chicken cooks all the way through. Using an instant read thermometer, make sure the chicken temperature reads 165ºF. If it doesn't, continue cooking for an additional 1-5 minutes.
  • SERVE: Top with the chopped cilantro and serve immediately.

You can make these Cheesy Baked BBQ Chicken Breasts in 30 minutes! If you love BBQ chicken pizza, but don't want all the carbs, this is for you!

1 1/2 pounds boneless skinless chicken breasts ((4 breasts, 6-8 ounces each, so up to 2 pounds total))
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/2 cup BBQ sauce
2/3 cup shredded mozzarella
2.5 ounces red onion ((1/3 of a red onion))

Steps:

  • Preheat the oven to 375 degrees F. Spray a 9x13 baking pan lightly with oil (or use an ungreased cast iron pan). Place the chicken in the pan.
  • Combine the salt, pepper and garlic powder in a tiny bowl. Season the chicken by pinching the spice mixture between your fingers and sprinkling it evenly on each piece of chicken.
  • Place 2 tablespoons of BBQ sauce on each breast and spread the sauce over the chicken with the back of your spoon.
  • Shred the mozzarella if needed. Sprinkle about 2 1/2 tablespoons of shredded mozzarella over the entire surface of each breast, using all of the cheese.
  • If starting with a whole red onion, peel it and cut it in half. Start making thin slices and place 5 or six slices of onion on each chicken breast. (You'll use about 1/3 of a whole onion.)
  • Bake the chicken for 25 minutes, uncovered. Check to see if it's done by using an intstant meat thermometer to see if it has reached 165 degrees F. If you don't have a thermometer, cut open a thick piece to make sure it's no longer pink inside. If needed, bake for another five minutes before checking it again. Don't overbake, or the chicken will be dry.
  • Let the chicken rest on the stove, covered loosely with foil, for a few minutes before cutting into it. This will keep it juicy. Store leftovers in the refrigerator for up to four days. This also freezes well.

1 cup sour cream
1 teaspoon garlic powder
½ teaspoon black pepper
3 cups cooked and diced chicken breast
12 ounces small pasta (cooked to al dente (Rotini or Farfalle))
½ pound bacon (cooked crisp and crumbled, divided)
15 ounce can petite or fire roasted diced tomatoes (drained)
1 red onion (diced)
2 1/2 cups grated Cheddar-Jack cheese (divided)
2 green onions (thinly sliced)
Fresh minced cilantro or parsley (for garnish)

Steps:

  • Preheat oven to 375 degrees F. Spray a 13x9-inch casserole dish with nonstick cooking spray.
  • In a large bowl, combine barbecue sauce, sour cream, garlic powder and black pepper. Stir in chicken, pasta, bacon (reserve 2 tablespoons for topping), tomatoes, red onion and half of the cheddar-jack cheese until well combined. Pour into the prepared casserole dish and spread evenly. Top evenly with remaining cheddar-jack cheese, sliced green onions and reserved bacon.

  • Cook bacon to crisp according to package instructions Crumble the bacon into small pieces and set aside.
  • Pre-heat the oven to 400. Line a baking sheet with parchment paper and set aside. Use a pastry brush to brush the outsides of both sides of the chicken breasts with the olive oil and place them on the prepared baking sheet. Sprinkle lightly with salt and pepper and place in the oven. Bake for 15 minutes. Remove from the oven and flip each breast over. Split the barbecue sauce equally into two small dishes. Using the pastry brush again (wash it in between!), paint the chicken breasts using half of one dish of the barbecue sauce. Flip the breasts back over and paint the top side with the remaining barbecue sauce from that dish. Place back in the oven for another 5 minutes. Wash the brush thoroughly again before step three.
  • Remove the baking sheet from the oven and lift the parchment paper holding the breasts off of the sheet and set aside. Re-line the sheet with aluminum foil or more parchment and transfer the chicken breasts back onto the freshly lined pan. Discard the parchment paper holding any remaining oil/liquid. You may want to check now to make sure the chicken is cooked through (or almost). Use the remaining dish of barbecue sauce to slather the tops of each chicken breast one last time. Sprinkle the cheese over top of each breast and follow with the bacon pieces. Place back into the oven and bake for another 3-5 minutes until cheese is melted.
