- Preheat oven to 350 °F. Spray a 13 by 9 inch baking dish with vegetable oil cooking spray. In a large mixing bowl, combine broccoli, mayo, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

On the day before Thanksgiving I got a frantic call from my best friend. She needed Paula Deen's Broccoli Casserole recipe! I looked on Zaar and couldn't find it so I am posting it now. She says it is the BEST broccoli casserole. I have to take her word for it since I haven't made it.

- Butter a 9 by 13-inch casserole.
- Steam broccoli until tender, about 10 minutes.
- In the meantime, melt the butter in a medium skillet over medium heat and sauté the celery, mushrooms, and onion until softened, about 10 minutes; drain.
- Combine the broccoli and the cooked vegetables in a bowl.
- Heat the soup and Velveeta cheese in a saucepan over low heat until the cheese melts. Pour it over the broccoli mixture.
- Add the garlic salt and pepper and combine.
- Put it in the buttered casserole dish and bake for 20 to 25 minutes. Sprinkle the top with the grated cheddar the last 5 minutes of baking.
