Sweet raisins, sour olives and piquant capers conspire to make this a memorable main dish.

3 ounces raisins
5 tablespoons olive oil
1 small onion, minced
1 clove garlic, minced
½ pound ripe tomatoes, diced
10 green olives, pitted and minced
2 ounces pine nuts
¼ cup capers
2 pounds swordfish steaks
salt and pepper to taste

Steps:

  • Soak raisins in lukewarm water for 30 minutes. Drain and set aside. Preheat oven to 400 degrees F (200 degrees C).
  • Heat olive oil in a large saucepan or skillet over high heat. Saute onion and garlic until soft. Stir in raisins, tomatoes, olives, pine nuts and capers. Cover pan, reduce heat to medium and cook for 15 minutes.
  • Season the steaks with salt and pepper. Place in a lightly oiled baking dish and cover with the cooked sauce. Bake in preheated oven for 15 to 20 minutes, until steaks are firm.

2 tablespoons freshly squeezed lemon juice
1/4 cup good olive oil
2 teaspoons minced fresh oregano leaves or 1 teaspoon dried oregano
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 (1/2-inch-thick) swordfish steaks (5 to 6 ounces each)
4 ounces baby arugula
Grated zest of 1 lemon

Steps:

  • Light a charcoal grill or preheat a gas or stovetop grill until very hot.
  • For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Set aside.
  • When the grill is ready, sprinkle the fish with salt and pepper and cook over medium-high heat for 2 minutes on one side, then turn and cook for 1 to 2 minutes on the other side until almost cooked through. Remove to a flat dish, prick holes in the fish with the tines of a fork, and pour the lemon sauce over the fish while it¿s still hot. Sprinkle liberally with salt and pepper, cover with aluminum foil, and allow to rest for 5 minutes.
  • When ready to serve, place the swordfish on dinner plates or a serving platter, pile the arugula on top, drizzle with the sauce from the fish, and sprinkle with the grated lemon zest. Serve warm.

3 tablespoons olive oil
1 medium onion, thinly sliced
4 anchovy fillets, chopped
1 cup peeled, seeded, and chopped fresh tomato, or drained and chopped canned tomatoes
pinch of dried oregano, crumbled
salt and freshly ground black pepper to taste
4 swordfish steaks, about 3/4 inch thick
2 tablespoons plain dry bread crumbs

Steps:

  • 1 Pour 2 tablespoons of the oil into a medium skillet. Add the onion and cook until softened, about 5 minutes. Stir in the anchovies and cook 5 minutes more or until very tender. Add the tomatoes, oregano, salt, and pepper and simmer 10 minutes. 2 Place a rack in the center of the oven. Preheat the oven to 350°F. Oil a baking pan large enough to hold the fish in a single layer. 3 Pat the swordfish steaks dry. Place them in the prepared pan. Sprinkle with salt and pepper. Spoon on the sauce. Toss the bread crumbs with the remaining 1 tablespoon of the oil. Scatter the crumbs over the sauce. 4 Bake 10 minutes or until the fish is just slightly pink in the center. 1/2 cup olive oil
2 green onions, sliced
2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
2 tablespoons lime juice
2 tablespoons Dijon mustard
6 swordfish or halibut steaks (6 ounces each)
VEGETABLES:
2 small zucchini
2 small yellow summer squash
1/4 cup sliced green onions
1 to 2 tablespoons minced fresh rosemary or 2 teaspoons dried rosemary, crushed
3 tablespoons olive oil
1 pound small red potatoes, cooked and cut into 1/2-inch slices
2 cups halved cherry tomatoes
1/2 to 3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large resealable plastic bag, combine the first five ingredients; add swordfish. Seal bag and turn to coat; refrigerate for 30-45 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill swordfish, covered, over medium-hot heat or broil 4 in. from the heat for 5-7 minutes on each side or until fish just turns opaque., Cut zucchini and yellow squash lengthwise into 1/4-in. slices, then widthwise into 3-in. pieces. In a large skillet, saute the onions and rosemary in oil for 1-2 minutes or until onions are tender. Add squash; saute for 5-6 minutes or until crisp-tender. Add potatoes and tomatoes; cook just until heated through. Sprinkle with salt and pepper; toss to coat. Serve with swordfish.

2 (6 ounce) swordfish steaks (about 1/2-inch thick)
1 tablespoon all-purpose flour, divided
2 teaspoons olive oil, divided
1 cup finely chopped onion
1 tablespoon capers
1 tablespoon raisins
1/2 cup bottled clam juice
2 tablespoons dry white wine
2 tablespoons tomato paste
1 tablespoon water
2 tablespoons chopped kalamata olives
1 tablespoon red wine vinegar
2 teaspoons sugar
2 tablespoons chopped fresh parsley

Steps:

  • Remove skin from swordfish.
  • Combine swordfish and 2 1/2 tsp flour in a large zip-top plastic bag; seal and shake gently to coat.
  • Heat 1 tsp oil in a 10-inch cast-iron skillet over high heat.
  • Add swordfish and cook about 1 1/2 minutes on each side or until done to your liking.
  • Remove from skillet; keep warm.
  • Heat 1 tsp oil in skillet over medium heat.
  • Add onion; saute 3 minutes.
  • Add 1/2 tsp flour, capers, and raisins; cook 1 minutes, stirring constantly.
  • Stir in clam juice, wine, tomato paste, and water; bring to a boil.
  • Add olives, vinegar, and sugar; cook 1 minute.
  • Stir in parsley. Serve sauce spooned over swordfish.

1/2 cup extra-virgin olive oil
1/4 cup fresh lemon juice
2 tablespoons hot water
6 tablespoons chopped fresh parsley
2 large garlic cloves, finely chopped
1 tablespoon dried oregano
6 6-ounce swordfish fillets, each about 1 inch thick

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Whisk olive oil in top of double boiler over simmering water until heated through. Gradually whisk in fresh lemon juice, then 2 tablespoons hot water. Add chopped fresh parsley, chopped garlic and oregano and cook sauce 5 minutes to blend flavors, whisking frequently. Season sauce to taste with salt and pepper. Remove sauce from over simmering water.
  • Lightly brush swordfish on both sides with sauce. Season fish with salt and pepper. Grill or broil until just cooked through, about 5 minutes per side. Transfer fish to platter. Spoon remaining sauce over and serve.
