CAULIFLOWER "COUSCOUS"
A gluten-free and low-carb alternative to traditional wheat couscous, which can be eaten with your favorite North African meals.

Steps:
- Preheat a large skillet over medium heat. Add cumin seeds and coriander seeds; cook, stirring occasionally, until toasted and fragrant, about 1 minute.
- Transfer cumin seeds and coriander seeds to a mortar; crush with a pestle. Add rose buds and crush to a powder. Mix in red pepper flakes and paprika with a spoon.
- Place cauliflower in a food processor; pulse into grains the size of rice.
- Heat 1 tablespoon oil in the skillet over medium heat. Cook and stir onion until translucent, about 5 minutes. Stir in riced cauliflower until warmed through, about 3 minutes. Sprinkle cumin mixture evenly over cauliflower and stir to distribute evenly. Remove from heat and cover; let "couscous" steam for 5 minutes.
- Sprinkle cilantro over couscous. Fluff with a fork and drizzle extra-virgin olive oil on top.

CHEESY CAULIFLOWER SOUP

- In a large pot, fry the bacon pieces over medium-high heat until crisp. Drain the bacon on a paper towel and set aside. Pour off the grease and return the pot to the stove.
- Add the onions to the pot and cook over medium-high heat for 3 to 4 minutes. Add the cauliflower, sprinkle with the Cajun spice and 1/2 teaspoon black pepper and cook, stirring, until the cauliflower starts turning golden brown, another 3 to 4 minutes. Stir in the chicken broth, bring to a boil, reduce the heat to a simmer and cook for 15 minutes.
- Use an immersion blender to puree the mixture slightly, or all the way if you prefer. (Or use a regular blender; just don't fill too full.)
- In a separate saucepan or skillet, melt the butter. Sprinkle in the flour and whisk to form a paste. Pour in the milk, then continue cooking until it thickens. Remove from the heat and stir in the half-and-half.
- Pour the white sauce into the soup. Turn the heat to medium high and bring back to a boil for 3 to 5 minutes. Reduce the heat to low, stirring in the cheese and sour cream until the cheese is fully melted. Stir in the parsley.
- Taste and adjust the seasoning. Serve with a little extra cheese, a sprinkle of bacon and a sprinkle of parsley.

- Break cauliflower into florets or leave whole; place in Dutch oven or large saucepan. Add 1 in. of water. Cover and steam until tender, 7-10 minutes for florets or 15-20 minutes for the whole head. Meanwhile, heat soup and salt; serve over cauliflower. Sprinkle with paprika.

It's a delicious dish of delightful cheesy sauce. Bright red and green bell pepper pieces and crushed corn flakes! We enjoyed it so much, their was nothing to scrape off the dishes or pan!

- Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
- Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
- Bake uncovered until heated through, 30 to 35 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
- Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
- Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
- Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

- Bring 1/2 inch water to boil in medium saucepan fitted with steamer basket. Add cauliflower to basket; cover. Cook 5 min. Remove cauliflower from basket; cool 10 min.
- Place cauliflower in work bowl of food processor. Use pulsing action of processor to process cauliflower until chopped into small pieces resembling that of cooked couscous.
- Heat oil in large skillet on medium heat. Add onions; cook 4 to 5 min. or until crisp-tender, adding garlic for the last minute. Add cauliflower; cook 2 to 3 min. or until heated through, stirring occasionally. Remove from heat.
- Add remaining ingredients; mix well.

- Preheat the oven to 375°. In a food processor, working in batches, pulse the cauliflower until it resembles coarse couscous. Spread the cauliflower on 2 large rimmed baking sheets and drizzle with the oil. Season with salt and pepper and toss to coat. Roast for 40 minutes, stirring and shifting the pans halfway through, until golden and caramelized in spots. Let cool slightly, then scrape into a serving bowl. Leave the oven on.
