Flour coated chicken sauteed with a mushroom and Marsala wine sauce. Mmmm, rich Marsala sauce, tender chicken - this recipe is sure to please! Great served with rice and veggies, if desired.

Steps:
- Melt 1 tablespoon butter in a medium skillet. Saute mushrooms until soft, remove from skillet and place in a small, covered bowl.
- Mix flour, garlic powder, salt and pepper in a shallow dish or bowl. Dredge chicken in flour mixture. Place bacon in same skillet and cook over low heat until cooked but not crisp. Add 2 tablespoons butter to skillet and saute coated chicken over medium heat for 2 minutes each side, adding remaining butter as needed to prevent burning.
- Place chicken on a dish, cover and keep warm. In a medium bowl, slowly add water to cornstarch and mix together, then mix in wine. Pour liquid mixture into skillet, together with reserved mushrooms. Heat until mixture begins to boil and thickens, then pour over warm chicken and serve.

- In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture.
- In a large skillet, melt butter in oil over medium heat. Place chicken in the pan, and lightly brown. Turn over chicken pieces, and add mushrooms. Pour in wine and sherry. Cover skillet; simmer chicken 10 minutes, turning once, until no longer pink and juices run clear.

- In a small saucepan, combine the tomato sauce, Italian seasoning and garlic powder. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Meanwhile, in a shallow bowl, lightly beat the egg. In another shallow bowl, combine bread crumbs and Parmesan cheese. Dip chicken in egg, then coat with crumb mixture., In a large skillet, cook chicken in oil over medium heat until a thermometer reads 165°, about 5 minutes on each side. Top with mozzarella cheese. Cover and cook until cheese is melted, 3-4 minutes longer. Serve with tomato sauce. If desired, sprinkle with basil and additional Parmesan.

CHEESY CHICKEN MARSALA
Steps:
- Preheat oven to 425°F. In small bowl, combine 1/2 tsp. salt, rosemary, 1/8 tsp. pepper; reserve. In another bowl, whisk together broth, wine and 1 Tbsp. flour. Sprinkle mozzarella slices with parsley. Cut horizontal pocket in each chicken breast, stuff with 1 slice mozzarella. Fold to fit, secure with toothpicks. Sprinkle chicken with reserved rosemary mix. Coat with remaining flour.
- In large skillet, heat 2 Tbsp. oil over med-high heat. Cook chicken until browned, turning once, 4-5 min each side. Transfer to jellyroll pan, roast 15 min or until no longer pink.
- In same skillet, heat remaining oil over medium heat. Add mushrooms, garlic, remaining salt and pepper. Cook, stirring until browned, 5 min. Add broth mix, bring to boil. Cook, stirring until slightly thickened. Stir in butter. Remove toothpicks from chicken, arrange on platter. Top with mushroom sauce. Sprinkle with remaining parsley.

- Preheat oven to 375 degrees F.
- On a cutting board, place the chicken breasts between a piece of plastic wrap and pound the chicken out until it is 1/2-inch thick.
- In 3 separate shallow dishes, place the flour, eggs, and bread crumbs. Season the chicken with salt and pepper. Dredge the cutlets through the flour, then eggs, and then the bread crumbs.
- In a large skillet over medium-high heat, heat the vegetable oil. Place the cutlets in the oil and fry until brown on each side, about 2 to 3 minutes per side. Place the cooked cutlets in a baking dish. Spoon tomato sauce over each cutlet and sprinkle evenly with the cheeses. Bake for 10 to 15 minutes, until the cheese is melted and bubbly.
- In a large saucepan over medium-high heat, add the olive oil and saute the onion and garlic. Add salt, pepper, red pepper flakes and cook until fragrant and tender; about 3 minutes. Add tomatoes, basil, and let simmer for 30 to 45 minutes. Season, to taste, with salt and pepper.
LINDA'S CHEESY CHICKEN MARSALA DIVAN
I love experimenting in the kitchen, and this is one that I came up with one night when I felt like having a creamy chicken dish... It was WONDERFUL, so I thought I would share it with you!

Steps:
- Preheat oven to 350.
- Put the chicken breast in a 9x13" baking pan.
- Slice the onions, and put over chicken breasts.
- In the side of the pan mix the soup and water together. It will be lumpy.
- Cut up the fresh broccoli, and put in soup mixture. Mix together.
- Add the mushrooms, and mix.
- Sprinkle with salt and pepper, to your liking.
- Pour the wine into the mixture, and mix well.
- Pour over the chicken.
- Every 15 minutes spoon the mixture over the chicken while baking. Bake for 45 minutes.
- Remove pan from oven, and add the shredded cheese on top.
- Put back in the oven, and bake for another 10-15 minutes until cheese is melted.
- Serve.
- Note: I pour the extra sauce over my baked potatoes when I make this dish. Delish!

- In a bowl, combine the flour, salt, and pepper; add the diced chicken and toss gently to coat thoroughly.
- Heat a large skillet over medium heat.
- Add 1 tablespoon oil and the butter and let the butter melt.
- Add the chicken and cook for several minutes on each side until it is brown and cooked partially through.
- Remove the chicken from the pan and set aside.
- Add the remaining oil to the same pan (no need to clean pan); saute the mushrooms and garlic for 1 minute, then add the wine, broth, and lemon juice.
- Bring the liquid to a low boil, scraping any bits of chicken form the bottom of the pan.
- Simmer the mixture for about 10 minutes, until the mushrooms are tender and the liquid is reduced and slightly thickened.
- Add the chicken back to the pan, spoon the sauce over it, and cook it for 3-5 minutes until the chicken is just cooked through.
- Season it with additional salt, if needed, and sprinkle the chicken with parsley before serving.

- Preheat the oven to 425 degrees F. Adjust your rack to the middle position. Put the potatoes on a large baking sheet, coat in 1 TBSP of the olive oil, season well with salt and pepper, and roast (turning once) until golden brown and crispy; about 25 to 30 minutes.
- Using either a heavy-bottomed glass or a meat mallet, pound the chicken breasts until they’re about half as thin as they were to begin with. This keeps them juicier, and helps them cook faster. Season them liberally with salt and pepper.
- Add 1 TBSP olive oil to a large deep-sided skillet set over med-high heat. Brown the chicken very well on both sides; about 3 to 4 minutes per side. You don’t need to cook them all the way through (they’ll finish in the sauce). Transfer to a plate or tray while you prepare the sauce.
- Reduce the heat to medium and, in the same skillet, add the remaining TBSP oil along with the mushrooms and sliced onion. Cook, stirring occasionally, until tender; 5 minutes. Season lightly with salt and pepper.
