MASHED POTATO CASSEROLE RECIPE
Creamy cheesy Mashed potato casserole is like no other. This AMAZING side dish takes mashed potatoes to a whole new level!

Steps:
- Peel and cube potatoes.
- Place in pot and add water until just covering potatoes. Bring to boil. Once boiling, reduce to a simmer and cook for 18-20 minutes.
- Drain water and mash potatoes using a masher or spoon. Add sour cream, butter, cream cheese and milk until well combined. Add salt and pepper. Fold in ½ the bacon, 1 cup cheddar cheese, and parmesan cheese. Mix well.
- Spoon into lightly greased 9x13 pan. Top with remaining cheddar cheese and the rest of the bacon.
- Bake at 350 for 20-25 minutes. Garnish with green onions and ENJOY!

Mama usually just throws together whatever amounts she thinks taste good. But I did get her to give me a recipe with measurements.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
- While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
- Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.
- Bake in the preheated oven for 45 minutes. Serve piping hot.

- Heat oven to 350°F. Grease 1 1/2-quart casserole. Place potatoes in 4-quart Dutch oven; add enough water (salted if desired) to cover. Cover and heat to boiling; reduce heat. Simmer about 10 minutes or until potatoes are tender; drain. Shake potatoes in Dutch oven over low heat to dry.
- In large bowl, mash potatoes until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used).
- Add sour cream, margarine, rosemary and salt. Beat vigorously until potatoes are light and fluffy. Stir in Havarti cheese. Spoon into casserole. Sprinkle with Cheddar cheese.
- Bake uncovered 30 to 35 minutes or until hot. Sprinkle with parsley.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return to pot.
- Preheat the oven to 375 degrees F (190 degrees C). Grease a glass baking dish.
- Combine milk, cream cheese, 1/3 cup green onions, egg, butter, garlic, and salt in a bowl. Pour onto the prepared potatoes. Mash together until mixture is smooth. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese and remaining green onions.

- Place cooked potatoes in a mixing bowl and use a hand mixer to whip in the cream cheese, 1/2 cup butter, garlic salt and black pepper. Add the half & half 1/4 cup at a time, until you reach the desired consistency. Adjust the amount as needed. Whip until smooth. The potatoes should feel soft and will firm as they chill. Taste and adjust the salt and pepper to your taste.
- Stir in 2 cup shredded white cheddar cheese by hand. Pour into the buttered casserole dish. Sprinkle with the remaining 1 cup shredded cheese. Dot the top with 2 Tbsp butter. Cover with plastic wrap and chill if making in advance.
