I requested chicken alfredo like Olive Gardens for my birthday one year. This is what my mom came up with. The best Ive ever had.

Number Of Ingredients 6

1 lb diced cooked chicken
1 lb cubed Velveeta cheese
1/4 cup butter
2 1/2 teaspoons hot pepper sauce (I use Franks)
1 cup half-and-half
1 (12 ounce) package cooked egg noodles (Any pasta will do)

Steps:

  • Mix all ingredients except noodles.
  • Heat until cheese is melted.
  • Pour over pasta.
  • Mix throughly and enjoy!

Mexican Chicken Alfredo image

This is a "TasteofHome" recipe that my whole family LOVES!!! Although I add more cheese and salsa, I am putting original recipe here. If you wish to add more or less of any ingredient feel free, however I would not use less Alfredo sauce! This is absolutely YUMMY!!

1 pkg (900g) spiral or scoobi do pasta
2 lb boneless, skinless chicken breasts, cubed
1 medium onion, chopped
1/2 c green pepper, chopped
1/4 tsp pepper
1 Tbsp canola oil
2 jar(s) alfredo sauce (15 ounce each)
2 c shredded sharp cheddar cheese, divided
1 c grated parmesan cheese
1 c medium salsa
1/4 c 2% milk
4 tsp taco seasoning mix

Steps:

  • 1. Cook pasta according to package directions.
  • 2. In large skillet over medium heat, cook chicken, onion, green pepper and pepper in oil until chicken is no longer pink. Stir in Alfredo sauce; bring to a boil. Stir in 1-3/4 cups cheddar cheese, Parmesan cheese, salsa, milk and taco seasoning.
  • 3. Drain pasta; toss with chicken mixture. Divide between two greased 8 inch baking dishes.
  • 4. (Cover and freeze one casserole for up to 3 months, if recipe is too large.) Cover and bake the remaining casserole at 350 degrees for 30-35 minutes or until bubbly. Sprinkle with remaining cheese.
  • 5. To use frozen casserole: Thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Cover and bake at 350 for 50-60 minutes or until bubbly.

Chicken and penne pasta simmer together in a garlicky, creamy broth, and are quickly baked between cheesy layers of Parmesan and mozzarella. Top with fresh parsley as desired.

1 tablespoon olive oil
3 skinless, boneless chicken breast halves, cubed
salt and ground black pepper to taste
4 garlic cloves, minced
2 ½ cups chicken broth
2 ½ cups heavy whipping cream
1 (16 ounce) package penne pasta
2 cups grated Parmesan cheese
2 cups shredded mozzarella cheese

Steps:

  • Heat oil in a skillet over medium heat. Add chicken, salt, and pepper; cook and stir until golden brown, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Add broth and heavy cream; stir in pasta and bring to a boil. Reduce heat and simmer until pasta is tender, about 15 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease an 11x17-inch baking pan.
  • Pour 1/2 the pasta mixture into the prepared pan. Sprinkle 1/2 the Parmesan cheese and 1/2 the mozzarella cheese over the pasta. Layer remaining pasta on top; finish with remaining Parmesan and mozzarella cheeses.
  • Broil in the preheated oven until cheese is golden brown, 10 to 15 minutes.
