Steps:
- Preheat oven to 400 degrees. In a medium bowl, combine cheese, butter, flour and cayenne with a fork until a dough-like form forms. Scoop up a tablespoon of the dough and enclose one olive with dough. Roll into a ball and place on baking sheet. Repeat process using up remaining dough. Sprinkle with paprika. Bake for 15 minutes or until golden. Serve warm.

- Heat a large heavy skillet (preferably cast iron) over high heat. Sear steak tips until they are brown on all sides; remove from pan.
- Reduce heat to medium-low and in the same skillet, add the olive oil. Place the onions in the pan, and cook for about 10 minutes or until they are soft and golden brown. Add the garlic and cook until it's fragrant. Remove onions and garlic from the pan.
- Preheat oven to 375 degrees F. Wipe out the skillet and add the browned steak tips, lay the bacon on top then top with the cooked onions.
- Mix the cheeses and place evenly across the top. Sprinkle top with the herbs.
- Bake 15-20 minutes or until cheese is melted, bubbly and beginning to brown.

This is a wonderful appetizer, popular and in demand at any type of party. You can substitute the cocktail rye bread for sliced baguettes. I can't have a party without my guests expecting this recipe!

- Preheat the broiler.
- In a medium bowl, mix Colby cheese, mayonnaise, green onions and black olives.
- Spread cocktail rye bread slices with butter. Top with equal amounts of the Colby cheese mixture.
- Arrange cocktail rye slices in a single layer on a large baking sheet. Broil in the preheated oven 5 to 10 minutes, or until cheese is melted and lightly browned.

CHEESE BITES (TOTALLY ADDICTIVE)
Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Steps:
- Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
- Roll dough into 1 inch balls and place on an un-greased baking sheet.
- If using olives, form each ball around 1 olive.
- If using pecans, press 1 pecan half onto each ball.
- Can bake them right now (see instructions below) or freeze for later.
- Place in trays in freezer for 30 minutes.
- Remove from freezer and place in freezer bags or container.
- Seal and freeze.
- Can bake them straight from freezer.
- Preheat oven to 425°F.
- Place cheese balls 3 inches apart on an un-greased baking sheet.
- Bake 15-17 minutes if frozen, 13-15 minutes if thawed.
BAKED CHEESY MASHED POTATO BITES

- Add potatoes to medium pot. Add enough cold water to cover potatoes. Bring to a boil over high heat, reduce heat to medium and simmer 10 minutes, or until potatoes are tender.
- Preheat oven to 400°F. Spray muffin tin with non-stick cooking spray. Set aside.
- Combine potatoes, eggs and cheese in medium bowl. Mash until smooth. Gently stir in broccoli. Season with salt and pepper, to taste.
- Divide into 6 muffin tins for large bites, or 12 for smaller potato bites. Use mini muffin tin if desired.
- Bake 20 minutes. Serve immediately or freeze for later.

CHEESY BRUSCHETTA BITES
mini fillo shells stuffed with garlic and herb soft cheese and topped off with fresh bruschetta. It's perfect for any kind of any time and any party!

- Preheat oven to 350 degrees. Place mini fillo shells in and bake for about 5 minutes.
- Chop tomatoes up, place in a bowl and add basil, garlic, balsamic vinegar, olive oil, salt and pepper to taste- stir together and set aside.
- Grab a plastic baggie and a cup or a bowl. Fit the baggie in to the cup so that you can scoop the garlic and herb cheese into it. Fold up like you would a pastry bag and cut the tip off. This makes it easy and quick to get the cheese into shells.
- Evenly pipe a small amount of cheese into each shell.
- Top cheese with a small scoop of bruschetta. Garnish with fresh basil.
- Optional, but delicious if you have the time: Place Cheesy Bruschetta Bites back into a 350 degree oven for 5 minutes just before serving.
CHEESY OLIVE BITES
Steps:
- Drain a jar of pimento-stuffed spanish olives. Pinch off piece of the dough log the size of the olive, flatten, and wrap around olive, rolling between palms to smooth. Put on a baking tray, and freeze. Bake at 350 degrees for 10-15 mins, dust with pimenton, and serve.
CHEESY ZUCCHINI BITES
Steps:
- In a medium frying pan add the olive oil, chopped zucchini, minced garlic, salt and water. Cook covered on medium low heat for approximately 10-15 minutes (make sure the zucchini does not brown, you want it tender), remove cover and continue to cook on low until the water has evaporated and zucchini is tender.
- Then remove from heat place in a large bowl and squish with a fork. To the bowl add the shredded mozzarella, parmesan cheese, egg, bread crumbs (1/4 cup + 2 tablespoons), parsley and pepper, combine gently until compact.
- Form into 19 balls, then roll the zucchini balls in the 1/4 cup of bread crumbs, place on a plate, cover with plastic and refrigerate for at least an hour**.
- Remove from the fridge and either deep fry in hot oil (350 F / 180 C) until golden, or pan fry in a little hot oil, turn once or twice until golden, or bake in a pre heated 350F / 180C oven for approximately 25-30 minutes. Sprinkle with a little salt before serving. Enjoy/!
