1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1/2 cup KRAFT Shredded Mozzarella Cheese
1/3 cup KRAFT Grated Parmesan Cheese
1/4 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1 egg, separated
1 can (8 oz.) refrigerated crescent dinner rolls

Steps:

  • Heat oven to 375ºF.
  • Mix first 4 ingredients and egg yolk until blended.
  • Unroll crescent dough, then separate into 8 triangles. Cut each triangle diagonally in half. Spoon 1 Tbsp. spinach mixture onto center of each triangle. Bring corners of dough to center over filling, overlapping ends; pinch ends together to seal. Place on baking sheets. Beat egg white lightly; brush onto bundles.
  • Bake 12 to 15 min. or until golden brown.

2 tablespoons unsalted butter
1 medium white onion, finely chopped
1 cup (8 ounces) cream cheese, softened
2 (10-ounce) boxes frozen spinach, thawed and squeezed dry
1 teaspoon freshly grated nutmeg
Kosher salt and ground white pepper

Steps:

  • Heat the butter in a 12-inch saute pan over moderate heat. Add the onions and cook until soft, about 8 minutes. Whisk in the cream cheese and let melt. Fold in the spinach until evenly combined. Add up to 3 tablespoons water if the mixture seems too dry. Sprinkle the nutmeg on top and season with salt and pepper.
  • BYOC: Lemon zest and juice would bring a little bit of sunshine to this dish. Just add with the salt and pepper.

This is from a new cookbook that I just purchased yesterday called "100 Best 4 Ingredient Recipes". I could not resist this book, simple and few ingredients are my favorite. I have not tried any yet, but could not resist sharing some of these easy recipes. Hope you enjoy!

1 (6 1/2 ounce) container garlic & herb spreadable cheese
1/2 cup chopped fresh spinach
1/4 teaspoon pepper
1 (17 1/4 ounce) package frozen puff pastry, thawed
2 cups honey mustard sauce or 2 cups sweet and sour sauce (dipping sauce of your choice)

Steps:

  • Preheat oven to 400 degrees.
  • Mix spreadable cheese, spinach and pepper in a small bowl.
  • Roll out one sheet of pastry dough onto a floured surface, rolling into a 12 inch square.
  • Cut pastry into 16 (3 inch) squares.
  • Place about 1 teaspoons of cheese mixture in the center of each square.
  • Brush edges each square with water.
  • Bring edges together up over filling and twist tightly to seal.
  • Fan out corners of pastry for a nice look.
  • Place bundles about 2 inches apart on a baking sheet.
  • Bake approximately 13 minutes or until golden brown.
  • Repeat procedure with the remaining sheet of pastry dough and cheese mixture.
  • Serve warm with dipping sauces.

2 large eggs
1 package (10 ounces) frozen chopped spinach, thawed and drained well
1 tablespoon bread crumbs
2 ounces feta cheese, lightly crumbled
2 scallions, thinly sliced (about 2 tablespoons)
1/2 teaspoon dried dill
Coarse salt and ground pepper
4 phyllo sheets, thawed
2 to 3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees. In a mixing bowl, whisk eggs until frothy. Squeeze out excess water from spinach, and add spinach to eggs. Fold in breadcrumbs, feta, scallions, dill, 1/4 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
  • Lay 1 phyllo sheet on a clean work surface. Brush phyllo lightly with oil, and lay another sheet on top. Repeat layering phyllo sheets until all are used. Cut the stacked sheets into four squares.
  • Gently press phyllo squares into the four outer cups of a nonstick cupcake pan, being careful not to tear bottom. Spoon 1/4 of the spinach mixture into each lined cup. Gather excess dough at top of each filled cup, and twist to seal.
  • Bake bundles in oven until golden brown, about 20 minutes. Serve warm or at room temperature.

I love recipes that can easily be adapted, and this one is perfect because there are so many different things you could do with it. Try it and I promise you will love it! For me the best thing about this recipe is LOTS of filling -- so if you feel like there is not enough, go ahead and double the recipe.

4 skinless, boneless chicken breast halves
1 teaspoon butter
1 (4.5 ounce) can sliced mushrooms, drained
1 egg
½ cup cheese-flavored crackers (such as Cheez-It Duoz Sharp Cheddar and Parmesan®), crushed
1 (8 ounce) package cream cheese
1 ¼ cups shredded Cheddar cheese, divided
6 tablespoons grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x12-inch baking dish.
  • Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of 1/4 inch. Repeat with the other chicken breasts.
  • Melt the butter in a small skillet, and cook the mushrooms until they begin to brown, about 8 minutes. Set aside. Beat egg in a shallow bowl. Place the cracker crumbs in another shallow bowl.
  • In a bowl, mix together the mushrooms, cream cheese, 1 cup of Cheddar cheese, and Parmesan cheese; spread the mixture generously over the chicken. Roll the chicken breasts up, dip each into beaten egg, and roll the bundles in cracker crumbs. Place into the prepared baking dish. Sprinkle the bundles with the remaining 1/4 cup of Cheddar cheese.
  • Bake in the preheated oven until the chicken is cooked through, the filling has melted, and the crumbs are golden brown, about 30 minutes. An instant-read thermometer inserted into the center of a roll should read at least 165 degrees F (74 degrees C).

5 (10 ounce) packages frozen chopped spinach
½ cup butter
1 onion, chopped
2 cups milk
2 cups grated Cheddar cheese
¼ cup all-purpose flour
¼ teaspoon ground black pepper
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13-inch baking dish.
  • Bring a large pot of water to a boil and add spinach. Cover, reduce heat, and cook until heated through, 5 to 6 minutes. Drain well, squeezing out excess moisture with your hands. Set aside to cool.
  • Melt butter in a saucepan over medium heat; stir in onion and cook until soft and translucent, 5 to 10 minutes.
  • Transfer onions to a double boiler; mix in milk, Cheddar cheese, flour, and ground black pepper; cook and stir until blended and smooth, about 5 minutes. Remove from heat; fold in eggs and spinach. Pour the spinach mixture into baking dish and smooth top.
  • Bake, uncovered, in the preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes. Cool briefly before cutting into squares.

Steps:

  • Heat oven to 375°F (190°C).

  • Drain well, pressing out excess moisture.
  • In frypan, cook onion and garlic in oil over medium heat for 5 minutes or until tender.
  • Combine spinach, onion mixture, cottage cheese, Parmesan cheese, egg yolk, basil, salt and pepper.
  • Separate dough into 16 triangles.
  • Cut each in half diagonally to form 32 triangles.

1/2 cup(s) fresh spinach - finely chopped
1/4 teaspoon(s) fresh ground pepper
1 package(s) 17.5 oz frozen puff pastry - thawed
1 can(s) tiny shrimp - cleaned, rinsed, crumbled

Steps:

  • Preheat oven to 400 degrees (very important or puff pastry will be doughy.)
  • Combine cheese, spinach, pepper, shrimp in small bowl, mix well.
  • Roll out one sheet of thawed puff pastry on floured surface into 12" square. Cut square into sixteen 3-inch squares.
  • Place about 1 tsp cheese-shrimp mix in center of each square.
  • Brush edges w/water. Bring edges up over filling and seal edges together.

4½ cups (563 g) all-purpose flour
2 Tbsp. baking powder
2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
½ cup (1 stick) chilled unsalted butter
8 oz. Gruyère, Comté cheese, and/or aged white cheddar, coarsely grated
2 oz. Parmesan, finely grated
¼ tsp. crushed red pepper flakes
1 10-oz. package frozen chopped spinach, thawed
1 cup buttermilk
1 cup sour cream (not low-fat)

Steps:

  • Preheat oven to 425°F. Lightly coat a 13x9" baking pan or dish with nonstick spray. Whisk flour, baking powder, and salt in a large bowl to combine. Grate butter into dry ingredients on the large holes of a box grater, then lightly toss to coat. Freeze 10 minutes.
  • Scatter about three-quarters of Gruyère and Parmesan over flour mixture, then add crushed red pepper flakes. Squeeze as much liquid out of spinach as possible, pull into shreds, and strew over flour mixture.
  • Whisk buttermilk and sour cream in a large measuring glass or small bowl. Pour into bowl with flour mixture and mix with a fork just until combined. Knead in bowl with your hands until a soft cohesive dough forms (do not overmix).
  • Scrape dough into prepared pan and press into an even layer. Using a bench scraper or knife, deeply score into 12 portions (cut down almost to pan beneath). Scatter reserved Gruyère and Parmesan over.
  • Bake biscuits until puffed and golden, 30-35 minutes. Transfer pan to a wire rack and let cool 10 minutes before serving.

1 (10 ounce) package frozen chopped spinach (thawed and drained)
1 1/2 cups shredded Mozzarella cheese (divided)

2 eggs
20 Ritz crackers (crushed)
1 cup marinara sauce

Steps:

  • Preheat oven to 375 degrees F.
  • In a mixing bowl. Combine softened cream cheese, drained spinach, 1 cup Mozzarella, and Parmesan cheese.
  • Season with salt and pepper, to taste.
  • Cut each chicken breast in half to make them around 1/4-inch thick.
  • Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
  • Roll up and secure closed with toothpicks; set aside.
  • In a small mixing bowl, whisk eggs; set aside.
  • Crush Ritz crackers in a small resealable bag, pour into a small mixing bowl and set aside.
  • Dip each chicken bundle in egg until coated, then roll in cracker crumbs and place seam side down in a

  • Bake for 30 minutes.
  • Remove from oven, carefully remove all toothpicks, and spoon 2 tablespoons of marinara on top of each chicken bundle and top with a sprinkle of the remaining mozzarella cheese.
