4 zucchinis
⅓ cup grated parmesan cheese
1 tablespoon garlic powder
1 teaspoon pepper
½ teaspoon red pepper flakes
½ teaspoon salt
1 egg
⅓ cup cheddar cheese
½ cup mozzarella cheese

Steps:

  • Preheat oven to 400ºF (220ºC).
  • Grate zucchini into a medium bowl.
  • Transfer grated zucchini into a large bowl and add parmesan cheese, garlic powder, pepper, red pepper flakes, salt, and egg. Mix together.
  • Pour the mixture onto a small towel and wring the excess fluid from mix.
  • Place a piece of parchment paper on a baking sheet and spread mixture evenly into a square about a ½-inch (1cm) thick.
  • Bake for 35-40 minutes or until middle has thickened.
  • Remove from oven and spread cheddar and mozzarella cheese over top .
  • Place back in the oven at 350ºF (180ºC) for 10 more minutes or until cheese melts and is bubbling.
  • Let cool for 5 minutes, then cut.
  • Serve with marinara, ranch, or any sauce of your choosing!

3/4 cup whole wheat breadcrumbs (any kind will do)
1/4 cup freshly grated parmesan cheese
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1/2 teaspoon fresh ground pepper
1/2 teaspoon garlic powder
1/4 teaspoon salt (sometimes use celery salt)
1 tablespoon extra virgin olive oil
horseradish cream, dip Creamy Horseradish Dip

Steps:

  • Preheat oven to 450 F.
  • Spray large baking sheet with oil cooking spray.
  • Cut zucchini into slices, (about 1 1/2 inches by 3/4 inch).
  • Toss zucchini in a bowl with the olive oil.
  • Mix dry ingredients in a plastic bag.
  • Place zucchini, a handful at a time, in the plastic bag, and shake to coat.
  • Bake 20 minutes.
  • Turn zucchini, bake another 10 to 15 minutes, or until golden brown.
  • Serve with Creamy Horseradish Dip recipe#79910 or your favorite dip.

Steps:

  • Preheat oven to 350 degrees.
  • Line a rimmed cookie sheet with aluminum foil.
  • Cut zucchini into thick wedges.
  • Place the zucchini on baking sheet.
  • In a small bowl, stir together the melted butter and garlic.
  • Brush the garlic/butter mixture onto zucchini.

2 quarts oil for frying
4 eggs
¼ cup heavy cream
½ teaspoon ground black pepper
¼ teaspoon salt
3 zucchini, quartered
¾ cup Italian-style dry bread crumbs

Steps:

  • In a heavy saucepan or deep fryer, preheat oil to 350 degrees F (175 degrees C).
  • In a blender, mix the eggs, whipped cream, pepper and salt. Transfer the mixture to a medium bowl.
  • Slice the zucchini into pieces 2 to 3 inches long. Dip the pieces into the egg mixture, then coat them with the bread crumbs.
  • Carefully place the battered pieces in the oil and fry 3 to 4 minutes, until brown and crispy. Drain fried pieces on a paper towel. Repeat until all the slices have been fried.

1 chicken bouillon cube
1 teaspoon salt
1 cup cheddar cheese, shredded

Steps:

  • Preheat broiler.
  • In a large saucepan, bring water, boullion and salt to a boil.
  • Add zucchini.
  • Cover and boil for 3 to 5 minutes until just tender-crisp; drain well.
  • Arrange half of zucchini in the bottom of a 9-inch pie plate; sprinkle with half the cheddar cheese and half the parmesan.

12 small zucchinis
1 ½ cups all-purpose flour
1 tablespoon garlic powder
salt and pepper to taste
1 cup milk
2 teaspoons garlic powder
salt and pepper to taste
16 ounces sour cream
3 cups shredded sharp Cheddar cheese
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch baking dish with non-stick spray.
  • Bring a pot of water to a boil; blanch zucchini, drain and cool.
  • In a shallow bowl, mix together 1 1/2 cups flour, 1 tablespoon garlic powder and salt and pepper to taste. In a separate bowl, combine the milk, 2 teaspoons garlic, salt and pepper to taste.
  • Cut ends off zucchini and then cut in thirds. Roll zucchini in flour mixture, then in milk and again in flour to cover completely. Set aside on parchment paper until all pieces are covered.
  • Heat large frying pan over medium high heat, add oil and brown zucchini on all sides. Remove and arrange in a 9x13 inch baking dish. Spread sour cream over zucchini and top with cheese.
  • Bake for 20 to 25 minutes or until cheese is beginning to brown. Remove from oven and let sit for 10 minutes and serve.
