BEEF AND ASPARAGUS OVER FLAT NOODLES



Beef and Asparagus Over Flat Noodles image

1-pound flank steak, thinly sliced
1 box cornstarch
1 box baking soda
1-ounce sugar
2 pounds fresh flat rice noodles, 1 1/4 inches thick
1 cup vegetable oil
1 stalk lemon grass
3 kafir lime leaves
2 tablespoons brown sugar
1 tablespoon Thai shrimp paste
1 shallot, thinly sliced
1/2 cup dry Thai chilies
2 cups coconut milk
1 bunch scallions cut on the bias
1 bunch asparagus, blanched and cut on the bias
1 tablespoon chopped garlic
1 tablespoons Sichuan black beans
5 sprigs Thai basil
1 bunch cilantro
5 sprigs of mint

Steps:

  • Toss flank steak in the cornstarch, soda, and sugar. Cut the fresh chow fun noodles to 1 1/4 inches thick. Heat the vegetable oil in wok until hot. Fry the noodles until crisp, remove and drain on paper towels. In the jar of a blender add 1 stalk lemon grass, cut into pieces, 3 kafir lime leaves, 2 tablespoons brown sugar, 1 tablespoon Thai shrimp paste, 1 shallot, sliced thin, 1/2 cup dry Thai chilies, rehydrated. Puree. Add 2 cups coconut milk. Pour out the oil from the wok. To the wok, add flank steak, 1 bunch scallions, 1 bunch asparagus, blanched and cut on the bias, and 1 tablespoon garlic, minced. Wok fry until tender, about 2 minutes. Add chili sauce. Serve the steak and asparagus on top of a bed of fried chow fun noodles piled high. Garnish with Sichuan black beans, Thai basil, 1 bunch cilantro, shaved scallions, and 5 sprigs of mint.

2 tablespoons extra-virgin olive oil
1 medium onion, chopped
1 large bunch thin asparagus (about 20 stalks), thinly sliced
1/4 cup spinach leaves

Steps:

  • Bring a small saucepan filled with water to a boil over high heat. Prepare an ice-water bath; set a medium bowl in ice-water bath and set aside.
  • Heat olive oil in a large shallow saucepan over medium-low heat. Add onion and reduce heat to low; cook, until onion is soft and translucent, about 10 minutes. Increase heat to medium-high and add asparagus; stir to coat.
  • Add enough boiling water just to cover asparagus; let cook for 2 minutes. Drain asparagus mixture in a fine mesh strainer and transfer to bowl set in ice-water bath; let cool slightly.
  • Transfer asparagus mixture to the jar of a blender along with spinach leaves. Add enough water just to blend; blend until smooth.

SOBA NOODLES WITH EDAMAME AND PEANUTS

Kosher salt
8 to 9 ounces soba noodles (two-thirds of a 350g package)
1 teaspoon sesame oil
Peanut oil
2 cloves garlic, smashed and finely chopped
1-inch fresh ginger, peeled and finely grated
1/2 jalapeno, seeds removed and finely chopped
2 medium carrots, julienned (cut planks on a mandolin, then cut into strips)
1/4 pound shiitake mushrooms, stemmed and julienned
1 cup shelled edamame
3 scallions, white and green sliced on the bias
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1/4 cup peanuts, coarsely chopped

Steps:

  • Bring a large pot of salted water to a boil. Toss in the soba and swish them around with a pair of tongs so they don't stick together. Cook the noodles until they are soft, 5 to 6 minutes. Strain through a colander and immediately rinse with cold water. Transfer to a bowl and toss with the sesame oil.
  • Coat a large straight-sided saute pan with peanut oil and toss in the garlic, ginger and jalapeno. Bring the pan to a medium heat and cook the garlic and ginger for 1 to 2 minutes. Toss in the carrots and 1/4 cup water and cook until the water has evaporated. Toss in the mushrooms and cook until the mushrooms have softened, 2 to 3 minutes. Sprinkle in the edamame and scallions.
  • Add the soy, rice wine vinegar and 2 tablespoons water. Toss in the cooked soba, stir to combine and cook until the noodles are hot and the water has evaporated.
  • Transfer to a serving dish and sprinkle with the peanuts.

By now, those of you who follow my work have seen a number of simple pureed soups that begin with onions, potatoes and leeks. Here's another one. The beautiful pale green soup is all the more fragrant because I use the asparagus trimmings for the broth.

Number Of Ingredients 19

1 medium onion, chopped
4 garlic cloves, halved
Green of 1 large leek (optional)
Salt to taste
1/4 teaspoon freshly ground pepper
Trimmed stems from 1 pound asparagus, cut in 1-inch lengths
2 quarts water
1 tablespoon extra virgin olive oil
1 leek, white and light green parts only, sliced and cleaned optional
1 medium onion, chopped
2 garlic cloves, peeled and halved
2 medium-size russet potatoes, peeled and diced
Salt, preferably kosher salt, to taste
1 1/2 quarts asparagus broth (above)
A bouquet garni made with a bay leaf and a few sprigs each parsley and thyme
1 pound asparagus, woody ends snapped off, sliced about 1 inch thick, plus 12 whole stalks, woody ends snapped off, for the garnish
2 teaspoons fresh lemon juice
Freshly ground pepper
Chopped fresh tarragon for garnish

Steps:

  • Combine all of the ingredients for the broth, and bring to a boil. Reduce the heat, cover and simmer 30 minutes. Strain and set aside.
  • Heat the oil in a large, heavy soup pot or Dutch oven over medium heat, and add the leek, onion and 1/2 teaspoon salt. Cook gently for five minutes, stirring often, until the onion and leek have softened. Add the garlic, stir together for a minute, then add the potatoes, broth, bouquet garni and salt to taste. Bring to a boil, reduce the heat, cover and simmer 30 minutes. Add the chopped asparagus (not the 12 spears), and simmer 10 minutes. Remove from the heat, and remove the bouquet garni.
  • Puree the soup with a hand blender or, working in 1-1/2 cup batches, ladle the soup into a blender. Place a towel over the blender, and pull it down tightly to prevent splashing. Blend each batch, then (whether you pureed the soup in the pot or in a blender) put through a medium strainer, pushing it through with the bottom of your ladle or with a spatula. Return to the pot. Heat through, and add the lemon juice and salt and pepper to taste.
  • Meanwhile, steam the 12 asparagus spears for four minutes, until just tender. Refresh with cold water, then slice about 3/4 inch thick.
  • Ladle the soup into bowls, garnish each serving with a handful of sliced asparagus, sprinkle with tarragon and serve.

1 pound asparagus, ends trimmed, cut on sharp diagonal into 1/8-inch-thick slices
1 cup freshly grated Parmesan cheese plus additional cheese shavings

Steps:

  • Heat 2 tablespoons extra-virgin olive oil in large skillet over medium-high heat. Add garlic; stir 30 seconds. Add prosciutto strips; cook until slightly crisp. Remove from heat. Set aside.
  • Heat 1 teaspoon oil in each of 2 nonstick skillets over medium heat. Crack 4 eggs into each skillet. Cook on 1 side until eggs begin to set, about 2 minutes. Remove from heat. Cover; set aside.

1 pound frozen large shrimp (peeled and deveined), thawed

PUREE OF ASPARAGUS WITH SOBA NOODLES

Nutty-tasting Japanese soba (buckwheat noodles) add an offbeat touch to this soup. Look for them in natural food stores or Asian groceries.

Yield 6 servings

Number Of Ingredients 12

2 pounds asparagus
1 tablespoon dark sesame oil
1 large onion, chopped
One 32-ounce carton low-sodium vegetable broth
2 large celery stalks, diced
2 medium potatoes, scrubbed and diced
2 teaspoons salt-free seasoning (see page 4 for brands)
2 tablespoons reduced-sodium soy sauce, or more to taste
4 ounces soba, any variety
Freshly ground pepper to taste
1/2 cup slivered or sliced almonds, toasted, for garnish
Sliced scallions or minced chives for garnish

Steps:

  • Trim the woody ends from the asparagus, peel the bottom halves with a vegetable peeler, and cut into 1-inch lengths. Reserve and set aside the tips.
  • Heat the oil in a large soup pot. Add the onion and sauté over medium heat until golden. Add the broth, celery, potatoes, seasoning, and soy sauce. Bring to a rapid simmer, then lower the heat. Cover and simmer gently for 10 minutes.
  • Add the asparagus pieces (except for the reserved tips) and simmer for another 15 minutes, or until the vegetables are tender. Remove from the heat.
  • With a slotted spoon, transfer the solid ingredients to a food processor. Puree in batches until smooth and stir back into the liquid in the soup pot. Or insert an immersion blender into the soup pot and puree until smooth. Let the soup stand off the heat while doing the finishing steps.
  • Break the buckwheat noodles into 1- to- 2-inch lengths. In a separate saucepan, cook them in rapidly simmering water until al dente. Drain and rinse them briefly under cool water, then stir into the soup.
  • In the same saucepan, steam the reserved asparagus tips until bright green and tender-crisp, then stir into the soup.
  • Adjust the consistency of the soup with enough water to give it a slightly thick consistency. Season with freshly ground pepper and additional soy sauce, if needed. Serve at once, garnishing each serving with the almonds and scallions.
