CHEESY BAKED ASPARAGUS



Cheesy Baked Asparagus image

This cheesy baked asparagus is an ideal fresh asparagus recipe with a rich, creamy sauce and cashews. It's a favorite vegetable dish that is easy to prepare. -Jerry Gulley, Pleasant Prairie, Wisconsin

3 pounds fresh asparagus, trimmed
1 cup heavy whipping cream
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1-1/2 cups shredded mozzarella cheese
1 cup chopped cashews
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400°. Arrange asparagus in a greased 13x9-in. baking dish; add cream, salt and pepper. Top with mozzarella, cashews and Parmesan cheese. Bake until asparagus is tender and cheese is melted and golden brown, 25-30 minutes. Transfer dish to wire cooling rack; let stand 5 minutes before serving.

Hash browns baked with cream of chicken soup, sour cream and cheese is a popular potluck casserole. You can't go wrong with this recipe!

Number Of Ingredients 8

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
1 (10 3/4 ounce) can cream of chicken soup
2 cups Crystal Farms® Shredded Cheddar Cheese
3/4 cup sour cream
1/4 cup chopped onion
1/4 cup butter or 1/4 cup margarine, melted
1 1/2 cups corn flakes, coarsely crushed
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Heat oven to 350°F
  • Spray 2 quart glass baking dish with nonstick cooking spray*. In large bowl combine all hash brown ingredients; mix well. Spread into prepared baking dish.
  • In small bowl stir together topping ingredients. Spread topping evenly over hash browns. Bake 45 minutes or until hash browns are tender.
  • Tip: *An 11x7-inch rectangular or 8-inch square baking dish can be used.

Number Of Ingredients 10

4 large russet potatoes
4 ounces cream cheese (softened)
1/4 cup sour cream
1/4 onion (finely chopped)
1 cup shredded Colby Jack cheese (divided)
5 strips bacon (cooked and crumbled)
1/4 teaspoon salt
1/2 cup milk
1 (1 ounce) package dry ranch dressing mix
4 green onions (finely chopped)

Steps:

  • Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
  • Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
  • Combine cream cheese and sour cream in a large bowl; beat until smooth.
  • Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.
  • When potatoes are cool enough to handle, cut in half. Scoop out pulp and mash potatoes.
  • Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
  • Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
  • Bake 5 minutes longer, or until cheese melts.
