CHERRY-ALMOND SNOW COOKIES

I came up with this recipe after trying to find a similar one online. Since I couldn't find what I was looking for, I made it up myself! The results were delicious (according to the raves from my family).

1 cup softened butter
2 cups powdered sugar, divided, or more as needed
½ cup white sugar
¼ cup finely chopped maraschino cherries
3 tablespoons amaretto liqueur
2 tablespoons tart cherry juice concentrate
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup ground almonds
2 cups all-purpose flour
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Combine butter, 1 cup powdered sugar, and white sugar in a large bowl; beat with an electric mixer until creamy. Mix in cherries, amaretto liqueur, cherry juice concentrate, vanilla extract, and almond extract. Beat in ground almonds.
  • Combine flour and salt in a separate bowl; add to butter mixture and blend until well combined. Roll dough into 1 1/2-inch balls and place on the prepared baking sheets with room in between, as cookies will expand with baking.
  • Bake in the preheated oven until edges are golden, about 20 minutes. Cool on the baking sheets for 10 minutes.
  • While cookies are cooling, place remaining 1 cup powdered sugar in a bowl. Coat each cookie in powdered sugar until completely covered. Transfer to a wire rack to cool completely.

This is a version of the popular snowball cookies. Cherries, coconut, and walnuts have been added. They are easy to make, not overly sweet, and make a pretty festive pink color inside from the addition of the chopped maraschino cherries.

½ cup butter, softened
1 cup all-purpose flour
¼ cup quick cooking oats
¼ cup finely chopped sweetened coconut
¼ cup finely chopped walnuts
1 pinch salt
15 maraschino cherries, finely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Beat 1/4 cup confectioner's sugar and butter with an electric mixer until smooth. Add flour; beat for 5 seconds. Add oats; beat for 5 seconds. Add coconut; beat for 5 seconds. Add walnuts; beat for 5 seconds. Add salt; beat for 5 seconds.
  • Mix cherries into the butter mixture, beating until dough comes together and turns light pink from cherries, about 25 seconds.
  • Drop spoonfuls of the dough 2 inches apart onto prepared baking sheets.
  • Bake in preheated oven until slightly golden, 18 minutes. Remove from oven. Pour remaining 1 cup confectioners' sugar into a shallow dish; roll warm cookies in sugar to coat. After rolling all of the cookies once, roll again in confectioners' sugar to coat.

1 cup white sugar
½ cup all-purpose flour
2 (8 ounce) packages cream cheese
1 (12 ounce) container frozen whipped topping, thawed
1 teaspoon vanilla extract
1 (9 inch) angel food cake

Steps:

  • In a saucepan, combine cherries, sugar and flour. Bring to a boil over medium-high heat, stirring constantly. Continue to boil for 5 minutes. Remove from heat and set aside to cool.
  • In a large bowl, beat cream cheese and vanilla until smooth. fold in whipped topping. Pour half of the cream cheese mixture into a 9x12 inch glass dish.
  • Crumble the angel food cake and sprinkle evenly over the top of cream cheese mixture in dish. Spread remaining cream cheese mixture over cake. Cover top with cherry mixture. Refrigerate for at least 5 hours.

6 egg whites, beaten to soft peaks
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 1/2 cups sugar
1 (6 ounce) package cream cheese, softened
1 cup sugar
1 teaspoon vanilla
1 pint whipping cream, whipped
2 cups miniature marshmallows
wilderness pie filling or cherry pie filling

Steps:

  • Heat oven to 400 degrees (at least for 10 minutes).
  • Beat 6 egg whites to soft peaks, then add 1/2 teaspoon cream of tartar and 1/4 teaspoon salt.
  • Add 1 1/2 cups sugar and continue beating until stiff, about 15 minutes.
  • Put into greased 9x13 inch pan.
  • Put into oven and shut off oven.
  • Leave in oven overnight.
  • Cream 6 ounces cream cheese with 1 cup sugar.
  • Add 1 teaspoon vanilla.
  • Then fold in 1 pint whipping cream, that has been whipped.
  • Add 2 cups miniature marshmallows.
  • Spread over meringue.
  • Refrigerate for 8 hours or more.
  • Cut into pieces and top with cherry pie filling and serve (Use Wilderness pie filling, it's thicker).

2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup margarine, melted
12 ounces cream cheese, softened (can use lite)
16 ounces Cool Whip (can use lite, fat-free)
1 cup powdered sugar
1 (21 ounce) can cherry pie filling (can use any flavor)

Steps:

  • Mix together graham cracker crumbs, sugar, and melted margarine. Press down for the crust in a 9 x 13 pan. Chill while you're making the filling.
  • Blend cream cheese in blender.
  • Gradually blend in cool whip.
  • Gradually blend in powdered sugar.
  • Spread in pan over crust. Chill 1/2 hour.
  • Place pie filling on top of cream cheese mixture.

3/4 cup margarine
3 cups graham cracker crumbs
2 5/8 ounces Dream Whip
1 cup milk
8 ounces cream cheese
3/4 cup sugar
24 ounces cherry pie filling (2 cans)

Steps:

  • Melt margarine, add crumbs, mix. Set aside to cool.
  • Add milk to dream whip; beat till thick. Refrigerate to cool. Add sugar to cream cheese; blend until smooth. Add 1 teaspoon milk to help blend. Pour cream cheese into whipped dream whip and mix till well blended.
  • Cover bottom of 9x13 pan with crumb mixture. Cover with 1/2 the whipped dream whip mixture. Spoon 1/2 cherry pie filling over whipped dream whip mix.
  • Add remaining crumbs, then whipped dream whip mix, top with remaining cherries.
  • Chill and serve.
