Steps:
- In a large saucepan over medium heat, stir together sugar, milk, marshmallows, butter, and salt. Simmer for about 5 minutes or until mixture reaches soft ball stage, 240 degrees F (115 degrees C). Turn off heat. Add cherry chips and vanilla; stir until melted.
- Pour mixture into a well-greased 9x13 inch pan, and let cool until firm.
- In a microwave, or in a saucepan over low heat, melt chocolate chips and peanut butter. Pour over cherry mixture and spread evenly. Allow to cool completely before cutting.

OLD FASHIONED CHERRY MASH CHOCOLATES
Absolutely delicious Old Fashioned Cherry Mash Chocolates. A perfect and special treat for the cherry lover in your life. Great for Christmas or Valentine's Day gifts.

Steps:
- First, line the mini muffin pan with paper liners. Set aside.
- Then, line a cookie sheet with wax paper. Set aside.
- Next, in a small bowl, combine softened butter and powdered sugar. Using a hand mixer, beat until it starts to stick together. It will be clumpy.
- Add patted-dried, chopped maraschino cherries. Mix well. IF the mixture is still clumpy after adding the chopped cherries, add a half tsp of maraschino cherry juice and mix again. If needed, add another half teaspoon and so on. You do not want this to be the consistency of frosting. You want to keep it as thick as possible.
- Using a tablespoon-size cookie scoop or small spoon, scoop cherry mixture onto lined cookie sheet an inch apart. Place in freezer for at least one hour.
- Next, while cherry drops are freezing, follow the instructions on the package to melt Almond Bark in a microwave-safe bowl. Once melted, add crushed peanuts and peanut butter. Mix well.
- Then, drop a small amount of the Almond Bark mixture into the bottom of each liner, just enough to cover the bottom of the liner.
- Take cherry drops out of the freezer and break each one in half. (You only want the cherry centers to be about ½ Tbsp). Form the halved drops into a circular disk and place one on top of each Almond Bark mixture already in the pan.
- Afterward, top each cherry drop with a spoonful of the Almond Bark mixture.
- Allow to cool completely and set up before eating.
- Can be stored at room temperature for up to 10 days.

- Beat peanut butter, butter and confectioners' sugar until crumbly. Stir in walnuts, coconut, cherries and cherry juice. Refrigerate, covered, at least 1 hour. Shape rounded teaspoonfuls of filling into balls. Freeze 10 minutes. , In a microwave or heavy saucepan, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate, allowing excess to drip off; place on waxed paper. Refrigerate until chocolate is firm. Freeze option: Freeze candy in freezer containers, separating layers with waxed paper. To use, serve frozen or thaw in refrigerator before serving.

CHOCOLATE CHERRY CANDY CAKE
Cordials of chocolate-covered cherries, a classic "box of chocolates" staple, inspired this delicate cake, filled with a candied cherry mousse and covered in rich chocolate ganache.

- Preheat the oven to 350 degrees F. Butter two 8-inch round cake pans, line the bottoms with parchment paper. Butter the parchment and dust with flour, tapping out excess.
- Whisk the flour, sugar, cocoa powder, baking soda, baking powder and salt together in a large bowl. Whisk the melted butter, buttermilk, egg, vanilla and 1/2 cup water together in another bowl until smooth. Add the wet ingredients to the dry ingredients, whisking until just combined. Divide the batter between the prepared cake pans, smoothing the tops. Bake, rotating the pans halfway through cooking, until a toothpick inserted in the center of each cake comes out clean, about 25 minutes.
- Let the cakes cool in the pans for 15 minutes, then turn them out onto a cooling rack set over a baking sheet. Discard the parchment paper and flip the cakes right side up again. Let the cakes cool completely.
- Make the cherry filling: Quarter the cherries and transfer them to a medium bowl with the 2 tablespoons reserved syrup. Combine the gelatin with 1 tablespoon cold water in a small bowl and let stand for 5 minutes to soften. Heat the gelatin in the microwave until it melts completely, about 10 seconds, stirring to dissolve. Combine the gelatin, cream cheese, sour cream, sugar, salt and almond extract in a food processor and process until smooth. Scrape the cream cheese mixture into the bowl containing the cherries and stir to combine. Refrigerate, checking every 5 minutes, until the filling is just set enough to spread, 5 to 15 minutes. (Do not let the filling firm up too much.)
- Place one cake on a cake stand and pile the cherry filling in the center, spreading it in a thick layer almost to the edge. Top with the remaining cake, aligning the layers directly on top of each other so the cake does not lean. Refrigerate the assembled cake for 1 hour.
- Meanwhile, make the chocolate ganache: Bring the cream to a simmer in a small saucepan then remove from the heat. Add the chocolate, shaking the pan gently to submerge it. Allow the pan to stand, off the heat, for 3 minutes to melt the chocolate. Whisk the ganache until smooth, then refrigerate until it is just thick enough to spread (like mayonnaise), about 15 minutes. (Do not let the ganache harden too much.)

- Stir the ganache again and scoop it on top of the cake, spreading it over the top and sides. Refrigerate the cake until the ganache is set, at least 2 hours or overnight.
CHERRY GUMMIES

- Sprinkle the gelatin into 1 cup water and allow it to bloom, which will take about 5 minutes.
- Meanwhile, heat the cherry juice and sugar in a saucepan over a medium-high heat until the sugar has dissolved, about 2 minutes. Remove the pan from the heat and slowly whisk in the bloomed gelatin until completely dissolved. Add in the lime zest and juice, stirring to combine.
- Spray an 8-by-8-inch baking dish lightly with cooking spray. Pour the mixture into the pan and transfer to the refrigerator. Chill for 2 hours.
- Remove the pan from the fridge and tip the chilled gummy block onto a board. Cut into 1-inch cubes. Carefully remove the individual gummies onto a baking sheet and allow them to sit out overnight on the counter. This will help give them a more gummy texture. Pack into resealable bags or mason jars.

Easy, delicious cherries. Just like you buy in the box! It's best to let the candies ripen for 1 to 2 weeks.

- Drain cherries and set on paper towels to dry.
- In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
- Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.

- Melt chocolate chips, nuts and peanut butter together. Place half in the bottom of a 9x13 buttered pan and cool until it no longer looks shiny. Microwave marshmallows in a large bowl and add frosting and blend well. Spread over set chocolate mixture and let set until firm. Spread the final layer of chocolate over the top and let cool again. Cut into pieces and store in refrigerator.
- ***You may want to increase the marshmallows a bit to make a firmer center 1/2 C mini or 5 large. A popular baking manufacturer in the US still makes the Cherry Frosting, but not all grocery stores carry it.

Bing bars. A great Christmas candy to make. A good friend of mine gave me this recipe and is now a favorite in my family. Very popular in the mid west, but sometimes hard to find the cherry chips in other locations. May have to ask your grocer to order them in.

Steps:
- Mix sugar, milk, salt, butter, & marshmallows in heavy pan. Cook over med-high heat, stirring frequently. Bring to boil.
- Boil 5 minutes, stirring constantly.
- Remove from heat, add cherry chips & vanilla. Mix well. Ensure chips are melted.
- Pour into greased 9x13 pan, store in refrigerator while you complete the next steps. This will help the cherry mixture to set up.
- Melt chocolate chips & peanut butter over low heat. Add additional chopped nuts. (I like to use the salted Spanish nuts).
- Spread over cherry mixture.
- Let cool & cut into squares.
CHERRY CHOCOLATE NUT BARS RECIPE
Cherry chocolate nut bars are the perfect treat. They have all of the crunch along with sweet and chewy marshmallow textures.

- Melt chocolate chips and peanut butter on low in the microwave. Stir well and add the chopped peanuts. Spread half of this mixture in a 9 x 13 inch glass pan sprayed very lightly with non stick cooking spray. Place in fridge to set up.
- Melt marshmallows in the microwave on very low stirring every 20 seconds. When melted and smooth, stir in the frosting.
- Spread this mixture carefully on top of the chocolate layer. Let cool in the fridge.
- Top with remaining chocolate for the last layer. If it has set up a little, just microwave it for about 30 seconds and stir well. Be sure to spread each layer to the edges of the pan.
- Refrigerate until firm. Cut into pieces - about 48.
- Store in refrigerator.
