These Cherry Chews have been baked in my family for generations. They are sure to be a family favorite of yours too!

• For Crust:
• 1 cup all purpose flour
• 1 cup rolled oats
• 1 cup brown sugar, lightly packed
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup butter
For Filling:
• 2 eggs
• 1 cup brown sugar
• 1/2 teaspoon almond extract
• 2 tablespoons flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 cup coconut
• 1 cup well drained maraschino cherries, quartered (reserve juice)
• 1/2 cup chopped pecans
For Frosting:
• 1 1 /2 tablespoons soft butter
• 1 cup confectioners sugar
• 4 to 5 tablespoons cherry juice
• 1/8 teaspoon almond extract

Steps:

  • Mix flour, oats, brown sugar, baking soda and salt in a large bowl. Cut in butter until mixture is crumbly. Press into greased 9 by 13 pan and bake at 350 degrees for 10 minutes.
  • In a large bowl beat eggs, stir in brown sugar and almond extract
  • Mix flour, baking powder and 1/2 tsp salt, and stir into eg mixture until combined.
  • Fold in coconut and cherries.
  • Spread mixture over prepared crust using an offset spatula
  • Sprinkle with pecans
  • Bake at 350 degrees for 25 minutes, until lightly browned
  • Remove from oven and allow to cool while preparing frosting.

1 c sifted flour
1 c rolled oats
1 c brown sugar
1 tsp baking soda
1/4 tsp salt
1/2 c butter, softened
2 eggs
1 c brown sugar
1/2 tsp almond extract
2 Tbsp flour
1/2 tsp baking powder
1/2 tsp salt
1 c coconut
1 c halved maraschino cherries, well drained
1/2 c pecan halves

Steps:

  • 1. Heat oven to 350 degrees. Mix flour, oats, 1 c. brown sugar, baking soda and 1/4 tstp salt. Add butter and mix until crumbly, first with a fork, then with fingers. Press mixture into bottom of greased 13X9X2 in pan. Bake for 10 minutes. Beat eggs; stir in sugar and almond extract. Mix flour, baking powder and 1/2 tsp salt together and gently stir into the egg mixture. Add coconut and cherries; stir to blend. Pour over the baked mixture and spread evenly. Sprinkle with pecans. Return to oven and bake for 25 minutes until lightly brown. Cool and ice with Cherry Almond Icing as follows:
  • 2. 3 tbsp soft butter 2 cup sifted icing sugar 2 tbsp maraschino cherry juice 1/4 tsp almond extract Blend butter and sugar. Add cherry juice and almond extract, using enough juice to make the icing easy to spread. Stir until smooth. makes 2 dozen

1/4 c butter or margarine, softened
1 c granulated sugar
2 large eggs
1 1/4 c bisquick baking mix
1 c chopped walnuts
1 c cut up dates
4 oz jar maraschino cherries, drained and chopped (about 1/3 c.)

Steps:

  • 1. Mix butter, sugar and eggs; stir in bisquick. Gently fold in nuts, dates and cherries. Spread dough in a greased 13x9-inch baking pan. Bake at 350^, for 30 minutes; cool slightly and cut into 1 1/2- inch squares.

I make these attractive cherry coconut cookies every Christmas for family and friends. During that busy time of year, I appreciate the fact that they freeze well, so I can make them ahead.

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
3/4 teaspoon almond extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2-1/2 cups sweetened shredded coconut
3/4 cup chopped almonds or pecans, optional
1 jar (16 ounces) maraschino cherries, drained and halved

Steps:

  • In a large bowl, cream shortening and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour, baking soda and salt; gradually add to the creamed mixture and mix well. Stir in coconut and nuts if desired. , Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets. Place a cherry half in the center of each. Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool.

1 teaspoon baking soda

1/2 cup butter, plus
3 tablespoons butter
1 cup maraschino cherry, well drained (reserve 2 tablespoons juice)
1/2 teaspoon almond extract, plus
1/4 teaspoon almond extract
2 tablespoons flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup shredded coconut
2 eggs
1/2 cup pecan halves
2 cups sifted icing sugar

Steps:

  • Heat oven to 350.
  • Mix flour, rolled oats, 1 cup brown sugar, baking soda, and 1/4 teaspoon salt. Add 1/2 cup butter and mix until crumbly, first with a fork, then with fingers. Press mixture into a greased 9x13-inch pan. Bake for 10 minutes.
  • Beat eggs, stir in remaining brown sugar and almond extract. Mix flour, baking powder, and 1/2 teaspoon salt together, then stir into egg mixture. Add coconut and cherries and stir to blend. Pour over first mixture and spread evenly. Sprinkle with pecans. Return to oven and bake 25 minutes, or until lightly browned.
  • Cool and ice with Cherry-Almond Icing. Cut in 1 1/2 x 3" squares, or bars.

1 cup rolled oats
1 cup flour
1 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter
1 cup brown sugar
2 eggs
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon almond extract
1 cup coconut
1/2 cup green and red maraschino cherry, halved
1 cup pecan halves

Steps:

  • Set oven to 350 degrees.
  • Grease a 9" x 13" baking pan.
  • In a bowl, mix together the first 5 ingredients.
  • Cut in the cold butter with a pastry blender until crumbly.
  • Press mixture into the prepared baking pan.
  • Bake for 8-9 minutes (don't overbake); remove and cool.
  • Lower the oven temperature to 325 degrees.
  • In a bowl, combine all topping ingredients; mix well.
  • Spread topping over the cooled base.
  • Sprinkle with pecan halves over top.
  • Return to oven; bake for 30 minutes longer.
  • Cool, cut into squares.

3 cups holiday cookie mix
1 cup coconut
2 teaspoons almond extract
1 egg
1 egg white
1 tablespoon water
1 -1 1/2 cup coconut
maraschino cherry, halved

Steps:

  • Dip measuring cup into mix and level off;allow to come to room temperature.
  • Heat oven to 375°F.
  • Grease cookie sheets.
  • In a large bowl,combine cookie mix,1 cup coconut,almond extract and egg at low speed until well mixed and dough forms.
  • In a small bowl,beat egg white and water until foamy.
  • Shape dough into 1-inch balls.
  • Dip in egg-white mixture;roll in coconut.
  • Place 2 inches apart on greased cookie sheets.
  • Place cherry in center,pressing down lightly.
  • Bake at 375 F for 11-14 minutes or until edges are light golden brown.
  • These overbake easily so keep an eye on them.
