Categories     Trusted Brands: Recipes and Tips     Smithfield®

Time 4h40m

Yield 4

Number Of Ingredients 23

¼ cup light brown sugar
1 tablespoon kosher salt
1 tablespoon paprika
1 teaspoon chipotle chile powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
2 racks Smithfield® Extra Tender Pork Back Ribs, membrane removed
1 cup Handful hickory or apple wood chips for smoking, soaked in water and drained
¾ cup apple juice, in a spray bottle
1 ½ cups ketchup
½ cup light brown sugar
½ cup distilled white vinegar, plus
1 tablespoon distilled white vinegar
⅓ cup water, plus
1 tablespoon water
1 ½ teaspoons Worcestershire sauce
1 ½ teaspoons chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon chipotle chile powder
¼ teaspoon black pepper
⅓ cup cherry preserves

Steps:

  • About one hour before smoking, make the dry rub. Combine all ingredients in small bowl; mix well. Pat ribs dry with paper towels; generously coat both sides of ribs with rub. Set aside at room temperature for 1 hour.
  • Meanwhile, make the glaze. Combine all ingredients except cherry preserves in medium saucepan; bring to a boil over medium-high heat. Reduce heat and simmer 20 minutes until slightly thickened, stirring frequently. Remove from heat; stir in preserves. Set aside to cool.
  • Heat charcoal or gas grill for indirect cooking at 250 to 300 degrees F. Add drained wood chips, if using.
  • Place the ribs, meaty side down, over a drip pan and cook for 2 hours spraying both sides of ribs with apple juice every 20 to 30 minutes. Add about 12 coals to a charcoal grill every 45 minutes or so to maintain the heat.
  • Remove ribs from grill. Double-wrap each rack in heavy-duty aluminum foil. Return wrapped ribs to the grill and cook for 1 1/2 to 2 hours more over indirect heat, until very tender. Add more coals as needed to maintain temperature for a charcoal grill.
  • Remove ribs from grill and unwrap. Place ribs over direct heat on grill and brush with glaze. Cook for about 5 minutes until the glaze is set. Turn ribs and repeat with more glaze.
  • Serve ribs with remaining glaze.

SHORT RIBS WITH CHIPOTLE CHERRIES

Short Ribs with Chipotle Cherries image

Provided by Guy Fieri

Categories     main-dish

Time 4h20m

Yield 6 servings

Number Of Ingredients 17

5 pounds beef ribs, English style, cut into single ribs
Salt and freshly cracked black pepper
1/4 cup vegetable oil
1 (14.9-ounce) bottle dark beer (recommended: Guinness)
1 red onion, cut into 1-inch rounds
3 shallots, peeled, cut into 1/2-inch pieces
1 tablespoon cream sherry
1/4 cup molasses
1/4 cup onion, diced
1 tablespoon garlic, minced
1/4 teaspoon hot pepper flakes
1 (15-ounce) can tart cherries
1 (15-ounce) can cherries (sweet in light syrup)
1 tablespoon chipotle paste, or pureed chipotle with a little adobo sauce
1 tablespoon molasses
Salt and freshly ground black pepper
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Short Ribs: Pat the ribs dry and season generously with salt and freshly cracked black pepper, to taste.
  • In a large braising pot, preferably an enameled cast iron Dutch oven, heat the oil over high heat. Add the ribs in batches, so as not to crowd. Brown them deeply on each side and when all have been seared, remove them from the pot and add 1/3 of the beer to deglaze. Turn off the heat and scrape the fond from the bottom of the pan.
  • Sauce: Strain the fat from the Dutch oven, leaving the juices and return the pot to medium-high heat. Add the onions and cook until soft. Add the garlic and red pepper flakes, cook for 2 minutes more, then add both cans of the drained cherries. Bring to a simmer, add the chipotle paste and molasses and adjust seasonings, if needed. Reduce the mixture for 10 minutes at a simmer. At this point you can strain for a more elegant sauce, then add the butter, or just add the butter and leave rustic.
  • Put the beef ribs back in the pot, stir to combine with the onions and shallots, and pout in the remaining beer and sherry. Cover and roast, turning the ribs every 40 minutes. After 3 hours, drizzle in the molasses, return the lid and roast for 1 hour more.
  • Transfer the ribs and the sauce to a serving dish and serve.

CHIPOTLE GLAZED BABY BACK RIBS

Chipotle Glazed Baby Back Ribs image

Recently I've prepared a combination of pork spare ribs and baby back ribs. Hands down the taste of the baby back won, therefore to me, those are worth the price. Rick says an overnight the rub cures the flesh lightly, ensuring a juicy outcome. Then they're slowly baked until they're juicy-done. Rick Bayless Fiesta at Rick's cookbook.

Categories     Pork

Time P1DT1h30m

Yield 6-8 serving(s)

Number Of Ingredients 10

4 garlic cloves, peeled and roughly chopped
1/3 cup ground dried ancho chile powder
4 teaspoons brown sugar
1 teaspoon dried oregano, preferably Mexican
1/2 teaspoon ground cumin
4 teaspoons ground black pepper
5 teaspoons salt
4 large slabs baby back ribs (about 6 1/2 pounds)
1 (7 1/2 ounce) can chipotle chiles in adobo
3/4 cup honey

Steps:

  • Season the Ribs. Combine all the dry rub ingredients in a food processor and run until thoroughly blended. Sprinkle the mixture on both sides of each slab of ribs, rub it in to ensure even coverage, then cover and refrigerate overnight. You'll probably have a little dry rub left; in a tightly closed jar in the refrigerator it will last several months.
  • First Rib Cooking: Heat the oven to 300 degrees. Lay the ribs in a single layer on two rimmed baking sheets and bake for about 1 1/4 hours, until the meat is tender when tested with a fork. (This cooking may be done early in the day you're serving. Cover and refrigerate the cooked ribs until an hour before serving).
  • Second Rib Cooking. Turn on a gas grill to medium or light a charcoal grill and let the coals burn until medium-hot and covered with a white ash. In a food processor, blend the can of chipotles with the honey. Scrape into a small bowl and carry to the grill, along with a basting brush.
  • Lay the ribs on the grill, convex-side down. When hot and well browned, about 3 minutes, flip them over and brush liberally with the chipotle glaze. Cover the grill and cook about 7 minutes for the glaze to set and begin to brown a little. There will likely be leftover glaze, which can be covered and refrigerated for a week or two.
  • Cut the ribs apart and serve immediately.

CHERRY-GLAZED GRILLED PORK RIBS

Cherry-Glazed Grilled Pork Ribs image

I found this recipe in Bon Appetit a few years ago. Prep time does not include 4 hours to let cherry cola go flat. Recipe calls for grilling at the end, but I think you could finish off the whole recipe in the oven. The sauce is delicious! Seems like alot to do, but well worth it!

Provided by LaLa Lola

Categories     Pork

Time 4h30m

Yield 8 serving(s)

Number Of Ingredients 7

4 (12 ounce) cans cherry cola, flat (Pour cherry cola into large pot and let sit until it is no longer fizzy, about 4 hours)
2 cups cherry jam or 2 cups preserves
2/3 cup dijon horseradish mustard
3 tablespoons soy sauce
2 tablespoons cider vinegar
1 tablespoon hot sauce
8 lbs pork spareribs

Steps:

  • Simmer flat cherry cola until reduced to 1-1/2 cups (about 45 minutes).
  • Add next 5 ingredients.
  • Simmer until reduced to about 2-1/2 cups.
  • Put in large bowl, cover, and refrigerate.
  • (Can be done up to 1 week ahead.) Preheat oven to 325.
  • Place oven racks in upper and lower thirds of oven.
  • Salt& pepper spare ribs.
  • Wrap each rack of ribs tightly in heavy-duty foil, sealing well.
  • Put each rack on a rimmed baking sheet.
  • Place each sheet on rack in oven.
  • Bake until tender, switching racks midway, about 2 hours total.
  • Remove from oven.
  • Allow to cool a bit.
  • Drain drippings from foil.
  • Wrap up in foil again and refrigerate.
  • (Can be done 1 day ahead. Remove from refrigerator about 1 hour before proceeding.) Reserve 1 cup of glaze from large bowl; set aside.
  • Cut racks into individual ribs and add to large bowl of glaze.
  • Toss to coat.
  • (It's kind of hard to toss; I just painted the ribs using a BBQ brush.) Put ribs on medium charcoal grill for about 5-10 minutes, turning often so they won't burn.
  • Serve, passing extra glaze.
