CHOCOLATE, CHERRY AND COCONUT BARS
Enjoy the decadence of chocolate without the guilt with these irresistible chocolate, cherry and coconut bars. This recipe from Simon Bryant's book, Vegetables, Grains and Other Good Stuff, is the perfect way to start experimenting with refined sugar-free desserts.

Steps:
- Bring the verjuice to a simmer in a small saucepan over medium heat. Remove from the heat and add the dried cherries. Cover and leave for 10-15 minutes to plump up. Stir in the honey and coconut oil, then return the pan to low heat and warm gently, stirring until smooth.
- Line a 25cm × 20cm baking tray with baking paper. Transfer cherry mixture to a food processor, add the coconut and blitz until it comes together in a ball. Transfer mixture to the prepared tray, pressing firmly to ensure it binds. Place in the freezer for 1-2 hours. When firm, remove from the freezer and cut into 12 bars, about 10 cm × 4 cm.
- Melt chocolate: bring a saucepan of water to the boil, then remove from the heat and set a heatproof bowl on top. Place the chocolate in the bowl and leave to stand, stirring occasionally, until melted. Brush the melted chocolate over the top of the bars, coating them evenly.

- Line a 9x13-inch baking pan with a piece of parchment paper that is large enough to go up all sides of the pan.
- Combine oats, rice cereal, coconut, almonds, and cherries in a large mixing bowl and set aside.
- Combine honey, peanut butter, brown sugar, coconut oil, vanilla extract, and salt in a small saucepan. Heat over medium heat until brown sugar is melted; continue to simmer for 1 minute more. Pour heated mixture into the dry ingredients and stir to fully combine. Stir in chocolate chips.
- Pour granola into the prepared baking pan and press firmly with a nonstick spatula or lightly oiled hands to tightly compact and distribute evenly throughout.
- Refrigerate for 2 hours.
- Remove from the refrigerator and slice into 20 equal portions. Tightly wrap individually in plastic wrap or serve immediately.

- Preheat the oven to 350°.
- Line a 9 x 5 x 3 loaf pan with enough parchment paper to overhang the sides and make handles for lifting the blondies out.
- In a medium bowl, stir together the melted butter and brown sugar with a wooden spoon until well blended.
- Stir in the egg yolk, vanilla, almond extract and salt.
- Sprinkle the flour and baking powder evenly on top and stir it together.
- Finally, stir in the chocolate chips, coconut and cherries.
- Bake for 22-24 minutes. Use a toothpick to test for doneness you don't want the toothpick to come out dry; some moist crumbs clinging is what you're looking for. Immediately lift the blondies out of the pan and allow to cool completely on a wire rack before devouring.

- In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. - Heat oven to 350°F. Spray bottom only of 8-inch square pan with cooking spray.
- In large bowl, place cake mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. - Preheat oven to 375°F.
- Cream the butter and both sugars with an electric mixer on medium speed until creamy.
- Add the eggs and vanilla; blend until smooth.
- Combine the flour, baking soda, and salt; gradually add to the butter mixture with the mixer now on low speed.
- Mix just until blended.
- Add the oats; stir until combined.
- Stir in 1 1/2 cups of the white chocolate chips, the coconut, and cherries; beat just until well mixed.

- Start by greasing a 7x11inch tin. Melt chocolate over a pan of boiling water on the hob, stirring to stop it from burning. Pour into the tin and evenly spread. Leave in fridge to cool.
- Preheat over to 150c fan. Cream fat and sugar together before mixing in the remaining ingredients (egg, coconut and fruit). Once the chocolate is set, pour over the coconut mixture and spread.
- Bake for 20 minutes or until golden brown. Yum!!
CHERRY COCONUT BARS
Just another wonderful recipe from Light & Tasty that I adjusted to our taste. Although this recipe does have the coconut in it, the cherry is the most powerful flavor. I would recommend coconut extract, instead of vanilla, if you are going for the coconut taste.

- In food processor, mix flour and confectioners' sugar.
- Add butter and pulse approximately 15 times, or until mixture resembles fine crumbs.
- Press in to a 9 inch square baking dish that has been sprayed with oil.
- Bake on 350°F for 12-15 minutes, or until lightly browned.
- Cool on wire rack.
- While crust is cooling, combine eggs, sugar and vanilla extract in food processor and blend well.
- Combine flour, baking powder and salt and add to egg mixture and blend until smooth.
- Add cherries, nuts and coconut and pulse until just blended.
- Spread over crust and bake on 350°F for 20-25 minutes or until firm.
- Refrigerate left overs-- if you have any.
