This is a really delicious soup I make.

2 cloves garlic, minced
2 tablespoons vegetable oil
1 head cauliflower, broken into florets
3 tablespoons butter
2 leeks, white part only, chopped
¼ cup all-purpose flour
1 quart chicken stock
⅓ cup heavy whipping cream
1 teaspoon dried chervil
1 teaspoon kosher salt
1 tablespoon cracked black pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Stir garlic and vegetable oil together in a small bowl. Arrange cauliflower florets on a baking sheet; pour oil mixture over cauliflower. Toss to coat.
  • Bake cauliflower in the preheated oven until tender and lightly browned, about 30 minutes.
  • Melt butter in a 4-quart stockpot over medium heat; cook and stir leeks and flour in the melted butter until fragrant and well blended, 5 to 10 minutes. Add cauliflower, chicken stock, and cream; simmer until flavors have combined, 20 to 25 minutes. Stir chervil, salt, and pepper into the soup; simmer until desired thickness, 10 to 15 more minutes.

1/4 cup butter
1/4 cup flour
8 cups chicken stock
salt & pepper
2 medium carrots, sliced
1/2 cup chervil, chopped

Steps:

  • Melt butter in 3 qt pot. Stir in flour. Cook 2 minutes.
  • Add stock, salt & pepper and carrots. Simmer 15 minutes, or longer if needed for carrots to be cooked. Remove from heat.
  • Add chervil and let sit for 5 minutes.
  • Serve.

I found this recipe on a Belgian website while I was looking to emulate my (Belgian) boyfriend's father's chervil soup. This soup came out lighter in color than his, more of a creamy green as opposed to dark green, but it is simple and delicate. I have a sneaking suspicion that he doesn't use leeks in his, but I think the leeks add a fuller dimension that I found really satisfying. We eat soup every day of the week with dinner, so it always gets made in big batches and served all week long. Light soups like this are nice for spring. Add little soup meatballs if you like (I do). Also, I used 2 leeks instead of 3 by accident and used a little more water than called for, and it still tasted really nice. I guess the most important thing is not to cook this soup too long because the delicate flavors will deteriorate if overdone.

2 tablespoons butter
2 onions, chopped
3 leeks, white and light green parts only, cleaned and chopped
2 bunches chervil, rinsed and chopped
2 -3 chicken bouillon cubes (2 if you use the recommended amount of water, more if you use more water) or 2 -3 vegetarian bouillon cubes (2 if you use the recommended amount of water, more if you use more water)
1 bouquet garni
2 1/2 liters water
salt and pepper

Steps:

  • In your soup pot, saute onions and leeks over medium heat until soft. (Tip: salt the onions and leeks at this stage so they release their moisture faster.).
  • Add water.
  • Add chervil, bullion cubes, and bouquet garni and let simmer for 15 minutes over medium heat.
  • Add salt and pepper to taste.
  • Remove bouquet garni and blend soup.
  • Add meatballs if desired.

Number Of Ingredients 12

6 medium leeks (about 1 1/4 pounds), white and light-green parts only, thinly sliced
1/2 cup (1 stick) unsalted butter
1 large yellow onion, diced
1 teaspoon fennel seeds
1/2 teaspoon coarse salt, plus more for seasoning
1/8 teaspoon freshly ground pepper, plus more for seasoning
2 garlic cloves, minced
3 medium fennel bulbs (about 2 pounds), trimmed and roughly chopped
8 cups homemade or low-sodium canned chicken stock
4 cups cold water
2 tablespoons Pernod (optional)
Chervil sprigs, for garnish

Steps:

  • Place leeks in a large bowl of cold water; stir, and let stand 5 minutes to let dirt and sand settle to the bottom. You may need to repeat several times, changing the water each time. Once they are free of grit, transfer to paper towels to drain.
  • Melt butter in a large saucepan over medium-low heat. Add onion and fennel seeds along with the salt and pepper. Cook, stirring occasionally, until onion is softened and translucent, about 10 minutes. Add garlic; cook until fragrant but not brown, about 2 minutes.
  • Add leeks and fennel to pan, and cook until vegetables are tender, about 10 minutes. Add chicken stock and the water, and bring to a boil; reduce heat, and simmer 20 minutes more.
  • Remove from heat, and let cool slightly. Working in several batches, transfer soup to the jar of a blender, being careful not to fill more than halfway and to cover lid with a kitchen towel, as hot liquid will expand when blended. Puree until smooth. Transfer to an airtight container, and place in refrigerator to chill completely, at least 4 hours or overnight.
  • To serve, stir in Pernod, if using, and season with salt and pepper. Ladle into soup bowls, and garnish with chervil.
