CHEWY CINNAMON BARS

The cinnamon flavor's BIG in these bars. I bake them during the holidays to give as gifts to my daughters' teachers.

1/2 cup butter, softened
1 cup sugar
1 egg
1/2 cup all-purpose flour
1-1/4 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup finely chopped pecans
Confectioners' sugar

Steps:

  • In a large bowl, cream butter and sugar. Add egg; beat well. Combine the flour, cinnamon and salt; add to creamed mixture and beat until smooth. Stir in pecans. Spread into a greased 8-in. square baking pan. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cut into small bars while warm; roll in confectioners' sugar.

If you are a cinnamon fan or just looking for a tasty seasonal dessert, then you need to bake up a batch of these Cinnamon Bars. They are flavorful, chewy, and so simple to make!

2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups packed brown sugar
2/3 cup butter
2 eggs
2 teaspoons vanilla
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter (melted)
Pinch Kosher salt

Steps:

  • Begin by preheating your oven to 350 degrees F. Line a 9-inch square baking pan with parchment paper. Spray with baking spray and set aside.
  • In a large bowl, whisk together the flour, ground cinnamon, baking powder, baking soda, and salt. Set aside.
  • In a medium saucepan, add the butter and brown sugar. Cook and stir until the butter is melted and the mixture is smooth. Remove from the heat and allow to cool slightly. Stir in the eggs and vanilla extract.
  • Add this mixture to the flour mixture and stir until combined.
  • Spread the batter in the prepared baking pan. Bake for 24-28 minutes or until a toothpick inserted near the center comes out clean.
  • For the topping:
  • In a small bowl, mix together the granulated sugar, cinnamon, and pinch of kosher salt.
  • While the bars are still warm, brush them evenly with the melted butter, then sprinkle with the cinnamon-sugar mixture.
  • Allow to cool completely before slicing and serving.
  • Pack and store leftovers in an airtight container.

12 cinnamon graham crackers
2 cups chopped walnuts
1 cup butter
1 cup packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 10x15 inch jellyroll pan.
  • Arrange cinnamon graham crackers with sides touching in a single layer to cover the bottom of the pan. Sprinkle the walnuts evenly over the crackers. In a small saucepan over medium heat, combine the brown sugar, butter and cinnamon. Cook stirring constantly until the mixture begins to boil. Continue to boil the syrup for 3 minutes without stirring. Remove from heat and pour over crackers.
  • Bake for 8 to 10 minutes in the preheated oven, until bubbly and slightly darker around the edges. Cool completely in the pan. Break into pieces and store in an airtight container at room temperature.

powdered sugar, sifted

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add egg, beat well.
  • Combine flour, cinnamon, and salt in a separate bowl.
  • Add to creamed mixture and beat until smooth.
  • Stir in pecans.
  • Spread into a greased 8" square pan.
  • Bake at 350 degrees for 35-40 minutes or until done.
  • Cut into squares while warm.
  • Sprinkle sifted powdered sugar and extra ground cinnamon over tops.

1 cup quick-cooking rolled oats
1/2 cup brown sugar, firmly packed
1/3 cup coconut
1/3 cup white vanilla chip
1/3 cup pecan pieces
1 (17 1/2 ounce) package Pillsbury Cinnamon Swirl Quick Bread and Coffeecake mix
1/2 cup butter or 1/2 cup margarine, melted
1/3 cup water
2 egg yolks

Steps:

  • Heat oven to 375°F
  • Grease 12x8-inch (2-quart) glass baking dish or 13x9-inch pan.
  • In food processor bowl with metal blade, combine oats, brown sugar, coconut, vanilla chips and pecans; process 10 seconds or until coarsely ground.
  • Set cinnamon swirl package from bread mix aside.
  • In large bowl, combine bread mix and oat mixture.
  • Stir in butter, water and egg yolks; mix well.
  • Spread half of batter in greased baking dish.
  • Sprinkle with cinnamon swirl from package.
  • Drop remaining batter by spoonfuls over cinnamon swirl; carefully spread.
  • Bake at 375°F for 25 to 30 minutes or until edges are firm.
  • Cool 2 hours or until completely cooled.
  • Cut into bars.
