GINGERBREAD MAN COOKIES

Gingerbread Man Cookies are my favorite Christmas treat to decorate with my kids. These soft gingerbread cookies are perfect for preschool or kindergarten Christmas parties, and they taste delicious!

3 cups all-purpose flour
3/4 cup dark brown sugar (, packed)
3/4 teaspoon baking soda
1 Tablespoon ground cinnamon
1 Tablespoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
12 Tablespoons butter (, room temperature, cut into 12 pieces)
3/4 cup molasses ((dark molasses))
2 Tablespoons milk
2 Tbs butter (, room temperature)
2 cups powdered sugar
2 Tablespoons milk

Steps:

  • Add flour, brown sugar, baking soda, cinnamon, ginger, cloves and salt to a mixing bowl and mix.
  • Add the butter pieces and use a pastry blender to cut the butter in until the mixture resembles fine meal.
  • With a mixer running on low speed gradually add the molasses and milk and mix until combined, about 30 seconds.
  • Divide the dough in half, forming each into a ball. Wrap each in plastic wrap and refrigerate for 2 hours or overnight, or place in the freezer for about 20 minutes, until firm, if you're in a hurry.
  • Preheat the oven to 350 degrees. Line 2 baking sheets with parchment paper.
  • Remove one dough sheet from the fridge/freezer and place on the counter. Roll out the dough (use a little flour on your rolling pin if needed), until it's about ½ inch thick. Cut gingerbread men and place them on prepared baking sheets.
  • Refrigerate the gingerbread men for 5 minutes (meanwhile you can roll out the other dough ball).
  • Bake the cookies until set in the centers and the dough barely retains and imprint when touched very gently with fingertip, 8 to 11 minutes (depending on the size of your cookie cutter). Do not overbake!!
  • Remove the cookies to a wire rack. Allow to cool to room temperature before frosting.
  • Store gingerbread cookies in an airtight container with parchment paper between the layers. Freeze for up to 3 months.

4 teaspoons ground ginger
2 teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon salt

1 cup white sugar
¾ cup butter, softened
1 egg
¼ cup dark molasses
⅓ cup chopped crystallized ginger

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift the flour, ground ginger, baking soda, cinnamon, salt, and allspice together into a mixing bowl; stir.
  • Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat egg and molasses into creamed butter mixture. Gradually stir flour mixture into butter mixture until just coming together into a batter. Gently fold crystallized ginger through the batter.
  • Roll rounded teaspoon-sized amounts of dough into small balls between your hands and place onto ungreased baking sheets about 2 inches apart.
  • Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes. Cool cookies on baking sheets for 1 minute before removing to a wire rack to cool completely.

1 cup (2 sticks) unsalted butter, softened
1 cup packed dark-brown sugar

Steps:

  • Sift together flour, cocoa powder, and spices into a medium bowl. Put butter, brown sugar, and grated ginger into the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until fluffy. Beat in molasses.
  • Beat in flour mixture in 2 batches, alternating with the baking soda mixture. Shape dough into a disk, and wrap in plastic. Refrigerate until firm, about 2 hours (up to overnight).
  • Preheat oven to 325 degrees. Shape dough into 1 1/2-inch balls, and space 2 inches apart on baking sheets lined with parchment paper. Refrigerate 20 minutes.

The center of the cookie is fudgy and dense, while the outside edges stay crisp - like the best brownie, but in gingerbread form. That chewy-crispy texture is thanks to the confectioners' sugar in the dough and a light coating of ginger-spiced sugar. Be sure to use true molasses and not blackstrap molasses; blackstrap molasses has less sugar, more salt and acidity, and can change the way the dough browns, spreads and interacts with the leavening.

Steps:

  • In a medium saucepan over medium, melt butter until foamy, about 3 minutes. Continue cooking butter, stirring and scraping frequently with a stiff silicone spatula, until the sputtering has subsided and the butter solids look deeply browned, 3 to 5 minutes.   • Pre-heat the oven to 180°C (approx gas 5) and grease 2 large baking trays
  • Mix together the flour, sugar, salt, bicarbonate of soda, ginger and cinnamon in a bowl
  • add the golden syrup and the butter and mix together well until it forms a soft workable dough. (If it is too crumbly you can add a little more butter, or if it is too sticky add a little more flour)
  • Roll out the dough on a lightly floured surface to about 1cm thick and use a cutter of your choice to cut them into shapes
  • Lay out the shapes on the baking trays allowing a little room for them to expand
  • Cook for around 10-15 minutes depending on how chewy you want them (the longer time the harder they will be)
