This is made just like a traditional pecan pie, with the addition of chocolate chips. It is very fudgy. It is always the first dessert to go at our family's Thanksgiving!

1 (9 inch) unbaked pie crust
3 eggs
⅔ cup white sugar
½ teaspoon salt
⅓ cup margarine, melted
1 cup light corn syrup
1 cup pecan halves
1 ½ cups semisweet chocolate chips

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs, sugar, salt, margarine, and syrup with hand beater. Stir in pecans and chocolate chips. Pour mixture into pie shell.
  • Bake until set, 40 to 50 minutes. Cool.

A holiday without a gooey, pecan-studded pie is unthinkable! This light pecan pie holds back a bit so when dessert is ready to be served, you won't have to think twice about diving into this pie. (Not that you should, you're celebrating after all!) Still, this lighter recipe includes oats and egg whites in the filling, which cuts down on calories for those who are counting. The result is a beautiful golden-brown pie brimming with a luscious, caramel-y filling. You won't even be able to taste the difference!

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
2/3 cup sugar
1/4 cup margarine, melted
1 cup corn syrup
1/2 teaspoon salt
1 egg
4 egg whites
1 teaspoon vanilla
1/2 cup quick-cooking or old-fashioned oats
1/2 cup chopped pecans

Steps:

  • In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 375°F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  • In medium bowl, beat sugar, margarine, corn syrup, 1/2 teaspoon salt, the egg and egg whites with wire whisk or hand beater until well blended. Stir in oats and pecans. Pour into pastry-lined pie plate.
  • Bake 40 to 50 minutes or until center is set. Cool completely.

1/4 teaspoon salt
1/2 cup cold butter, cubed
1/3 cup sweetened condensed milk
2 egg yolks
FILLING:
1-1/2 cups sugar
1/2 cup plus 2 tablespoons butter
1/3 cup maple syrup
3 eggs
2 egg whites
1/2 teaspoon vanilla extract
2 cups ground pecans

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. Combine milk and egg yolks; stir into crumb mixture until dough forms a ball. Press onto the bottom and up the sides of an ungreased 9-in. deep-dish pie plate; flute edges. Cover and refrigerate., In a large saucepan, combine the sugar, butter and syrup; bring to a boil over medium heat, stirring constantly. Remove from the heat. , In a large bowl, beat the eggs, egg whites and vanilla. Gradually add hot syrup mixture. Stir in pecans. Pour into pastry shell. , Cover edges loosely with foil. Bake 35-40 minutes or until set. Cool on a wire rack. Refrigerate leftovers.

1 cup semi-sweet chocolate chips
3 tablespoons milk
4 eggs
3 tablespoons butter, melted
2 teaspoons pure vanilla extract
1 cup dark corn syrup
1 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon salt
1 1/2 cups pecan halves

Steps:

  • Preheat oven to 425°F Line 9-inch pie plate with pie crust. Partially bake crust 7 minutes. Remove and set aside. Immediately reduce oven temperature to 325°F.
  • Microwave chocolate chips and milk in medium microwaveable bowl on High 1 to 1 1/2 minutes. Stir until smooth. Pour chocolate evenly over crust; set aside. Beat eggs in large bowl. Add remaining ingredients; mix well. Slowly pour mixture over chocolate layer. Place ring of aluminum foil around edges of crust to prevent over-browning.
  • Bake 55-60 minutes or until filling is puffed but center is still soft enough to move when shaken gently. Tent pie with foil if crust browns too quickly. Cool on wire rack.

3 bakers unsweetened chocolate squares
3 bakers semi-sweet chocolate baking squares
1 egg
1 graham cracker pie crust
whipped cream, for topping

Steps:

  • Heat oven to 350°F.
  • Put milk into a sauce pan or dounle boiler. Add chocolate and beaten egg.
  • Heat gently until chocolate is melted, stirring constantly.
  • Pour into Graham Cracker crust.
  • Bake 15 minutes.
  • Cool and then chill for at least 2 hours.
  • Slice and top each slice with whipped cream.

1 tablespoon softened butter
3/4 cup finely chopped pecans
Filling
1/2 cup dark corn syrup
2 eggs, slightly beaten
1/4 teaspoon salt
1 teaspoon vanilla
1 cup semi-sweet chocolate bits
1/2 cup coarsely broken pecans

Steps:

  • Butter an 8" pie tin with the softened butter and press in the chopped nuts.
  • Combine the syrup, eggs, salt and vanilla and beat well. Melt the chocolate bits over hot water and add them slowly to the syrup mixture, stirring constantly. Pour into the pie shell and sprinkle with coarsely broken pecans. Bake in a 350°F. oven for 25-30 minutes. Serve with vanilla-flavored whipped cream.
