DEL MONTE Red Cane Vinegar
2 Tbsp soy sauce
1/4 tsp peppercorn, crushed
reserved pineapple syrup
1/4 cup oil, for frying
DEL MONTE Pineapple Tidbits (200g), drained, reserve syrup
1/4 cup crushed and fried garlic

Steps:

  • Marinate chicken for 30 minutes. Drain and reserve marinade.Fry chicken in oil until golden brown.Combine chicken with marinade then simmer until chicken is tender. Add DEL MONTE Pineapple Tidbits. Top with fried garlic.

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Thread green bell pepper, onion, chicken, and pineapple onto skewers; brush with barbeque sauce.
  • Cook on the preheated grill until chicken is no longer pink in the center and the juices run clear, 7 to 10 minutes per side.

1 pound bone-in chicken thighs or drumsticks, (cut into pieces)
1 teaspoon garlic powder
2 tablespoons soy sauce
2 tablespoons oyster sauce
1 tablespoon honey
1 tablespoon brown sugar
1 tablespoon apple cider vinegar
1 tablespoon tomato paste
2 cups pineapple slices
3 tablespoons oil
1 yellow onion, (sliced)
4 garlic cloves, (minced)
1 cup chicken broth
4 dried bay leaves
2 teaspoons cornstarch
2 tablespoons water
2 stalks green onions, (sliced)

Steps:

  • In a bowl, combine the chicken, garlic powder, soy sauce, oyster sauce, honey, brown sugar, apple cider vinegar, and tomato paste. Toss everything to coat well. Marinate the chicken for at least an hour or overnight.
  • Meantime, heat the skillet with oil. Add the pineapple slices and brown for a minute on each side. Remove from the pan and set them aside.
  • Use the same pan, add the marinated chicken, sear for 1-2 minutes on each side or until golden brown. Remove from the pan and set them aside.
  • Add the onion into the same pan, cook until caramelized. Add the garlic, saute until fragrant. Add the chicken back into the pan, and add the remaining marinade also. Add the chicken broth and bay leaves. Cover, lower the heat, simmer for 2 minutes. Meantime, combine the cornstarch and water, stir until cornstarch dissolved (this is the slurry).
  • Add the slurry, stir, cook until the sauce thickened, about a minute.

5 pounds chicken legs and thighs, rinsed and patted dry
¾ cup water
¾ cup white vinegar
¼ cup soy sauce
1 teaspoon white sugar
1 onion, chopped
2 cloves garlic, crushed
1 teaspoon whole black peppercorns, crushed
2 bay leaves
salt to taste

Steps:

  • Place the chicken in a 6-quart pot. Pour the water, vinegar, and soy sauce over the chicken. Add the sugar, onion, garlic, peppercorns, and bay leaves to the pot; bring the mixture to a boil for 2 minutes. Reduce heat to low; simmer until the chicken is no longer pink at the bone and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the pot and continue cooking the sauce until it thickens, about 10 minutes; season with salt.
  • Return the chicken to the pot, making sure the chicken is covered entirely by the sauce. Cook together until the chicken is reheated, about 3 minutes.
