A great country style chicken with its origins based in Mexico. Pan fried potatoes the perfect side for sopping up the pan sauce that comes from the chicken and tomatoes. This is a favorite in our household. We serve with shredded lettuce, jalapenos and fried potatoes. (The ingredients in country recipes tend to be rough chopped)

3 lbs chicken, bone in and cut up
salt and pepper
2 tablespoons oil
1 onion, thinly sliced
1 garlic clove, minced
3 medium fresh tomatoes, peeled, seeded, and rough chopped (Caned tomatoes do not work well with this recipe)
1 tablespoon lemon juice
1 teaspoon sugar
1 teaspoon salt
1 teaspoon oregano, dried, crushed
1/8 teaspoon cinnamon, ground
1/8 teaspoon clove, ground
2 teaspoons cornstarch

Steps:

  • Sprinkle chicken with salt and pepper.
  • In 12 inch skillet brown chicken in cooking oil about 15 minutes.
  • Add onion and garlic; cook 5 minutes more.
  • Add tomatoes, lemon juice, sugar, salt, oregano, cinnamon, cloves, and 1/2 cup water. Cover; simmer 30 to 35 minutes or till chicken is tender.
  • Remove chicken to platter, keep warm.
  • Measure pan juices; add water to make 2 cups. Return to skillet.
  • Combine cornstarch and 2 tablespoons cold water; add to skillet. Cook and stir till thickened and bubbly.
  • Spoon some sauce over chicken; pass remainding sauce.

A delicious and easy Spanish chicken stew, or pollo guisado. Great for entertaining and makes for great leftovers. Serve over white rice.

2 tablespoons olive oil
1 whole chicken, cut up
salt and ground black pepper to taste
1 medium onion, chopped
4 cloves garlic, minced
½ cup sofrito
2 potatoes, peeled and cubed
2 cups chicken broth
1 (8 ounce) can tomato sauce
1 (1.41 ounce) package sazon seasoning
½ teaspoon ground cumin
1 bay leaf
2 tablespoons cold water
1 tablespoon cornstarch

Steps:

  • Heat olive oil over medium-high heat in a Dutch oven. Season chicken with salt and pepper and add to the hot pot to brown, 6 to 7 minutes per side. Transfer chicken a bowl and cover with an aluminum foil tent.
  • Reduce heat to medium; add onion to the pot and saute until translucent, about 5 minutes. Add garlic and cook for 1 minute. Stir in sofrito and cook for 2 to 3 minutes. Add potatoes, chicken broth, tomato sauce, sazon, cumin, and bay leaf; bring to a boil. Return chicken to the pot. Cover and cook for 1 hour. Remove chicken.
  • Mix water and cornstarch together in a small bowl; stir into simmering mixture until nicely thickened. Place chicken back into the pot and continue to cook about 10 minutes more.

2 cups with mashed black beans
Yucatán Tomato Sauce
Pickled Red Onions
Yucatán Habanero Sauce
4 Crisp-Fried Whole Tortillas
1 tablespoon olive oil or vegetable oil
4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 cup grated cotija or mild feta cheese
radish and shredded lettuce, for garnish

Steps:

  • 1. Prepare the black beans, then the tomato sauce. Prepare the pickled onions, salsa, plantains (keep warm in 200° oven), and the tortillas. 2. In a large nonstick skillet, heat the oil over medium heat and cook the chicken 4 to 5 minutes per side or until lightly browned on the outside, firm to the touch, and no longer pink inside at the thickest part. Season with salt. 3. To assemble the dish, place 1 tortilla on each of 4 plates. Spread each with 1/2 cup of warm beans. Place a chicken breast on the beans. Top each breast with about 1/4 cup of heated tomato sauce. Sprinkle each serving equally with grated cheese. Garnish each plate with warm plantains, lettuce, and radishes. 4 skinless, boneless chicken breasts
1 teaspoon olive oil
½ teaspoon onion powder
1 pinch salt
1 pinch ground black pepper
2 avocados - peeled, pitted and sliced
2 ripe tomatoes, sliced
1 (8 ounce) package Monterey Jack cheese, cut into 10 slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Warm oil in skillet and add chicken and onion. Cook 15 minutes or until chicken is browned and just about done. Add salt and pepper to taste.
  • Place chicken on cookie sheet and top each breast with 1 to 2 slices of tomato and 2 to 3 slices of cheese. Place in oven for 10 to 15 minutes, until cheese melts. Remove from oven, add 2 to 3 slices of avocado on top of each breast, and serve immediately.

6 small potatoes (each about 3 ounces), scrubbed and quartered
1 teaspoon salt, or to taste
1/8 teaspoon freshly ground pepper, or to taste
3 tablespoons olive oil
3 to 4 pounds chicken, cut up, or chicken parts of choice
1 large white onion, sliced
1/2 pound fresh bulk chorizo sausage, or packages with casings removed
2 cloves garlic (medium), chopped
3 medium tomatoes, peeled and finely chopped
1 tablespoon fresh lime juice
1 teaspoon dried oregano (Mexican variety preferred), crumbled
1/2 teaspoon sugar
1/4 teaspoon ground cinnamon (Mexican canela or Ceylon variety preferred)
1/8 teaspoon ground cloves
1/2 cup canned fat-free reduced-sodium chicken broth
3 jarred pickled jalapeño peppers (en escabeche), seeded, and sliced

Steps:

  • 1. Preheat the oven to 425°. In a medium bowl, toss the potatoes with about 1 tablespoon of the olive oil and put in an ovenproof baking dish. Sprinkle with 1/2 teaspoon of the salt and pepper. Roast until golden brown and tender, 40 to 45 minutes. 2. Trim excess fat from the chicken. Add the remaining salt or more, as desired. Heat the remaining oil in a large skillet and cook the chicken about 4 minutes per side, or until lightly browned on both sides but not cooked through. Remove the chicken to a plate. 3. Add the onion to the skillet and cook, stirring until limp, about 3 minutes. Add the chorizo and cook, breaking up into small pieces, until lightly browned. Add the garlic, tomatoes, lime juice, oregano, sugar, cinnamon, and cloves. Cook, stirring, until the juices reduce, 4 to 5 minutes. 4. Return the chicken to the pan and add the chicken broth. Stir to coat the chicken with the sauce. Bring to a boil, reduce the heat to low, cover and simmer until the chicken is very tender, 30 to 35 minutes. To serve, arrange the chicken on a large platter. Spoon the sauce over the chicken and scatter the jalapeños on top. Surround the chicken with the roasted potatoes. 3 skinless boneless chicken breasts, trimmed and cut in half lengthwise
Salt
Pepper
1/3 cup Gold Medal™ all-purpose flour
3 tablespoons vegetable oil
2 tablespoons butter
1 container (8 oz) sliced fresh mushrooms
1/2 cup cream sherry wine
1 can (18 oz) Progresso™ creamy mushroom soup
6 slices Muenster cheese
3 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 350°F.
  • Sprinkle both sides of the chicken with salt and pepper. Spoon flour onto shallow dish or pie plate. Coat both sides of chicken with flour; shake off excess.
  • In 12-inch skillet, heat oil over medium heat. Brown chicken on both sides. (You don't need to cook the chicken completely because it will finish cooking in the oven.) Transfer chicken to 13x9-inch (3-quart) glass baking dish.
  • Place butter in same skillet; let melt over medium-high heat. Add mushrooms; sprinkle with salt and pepper. Cook and stir mushrooms until golden brown. Stir in sherry; cook and stir for additional 1 to 2 minutes. Stir in soup; mix well. Cook until thoroughly heated.
  • Pour mushroom sauce over chicken; top each piece of chicken with one slice cheese. Fold cheese in half if it is too wide for chicken piece.
  • Cover dish with foil; bake 30 minutes. After 30 minutes, turn oven to broil setting. Remove foil from dish; broil 1 to 2 minutes to brown the cheese. Remove from the oven; set aside to cool slightly.
  • Top with parsley.
