This caramelized onion and garlic chicken recipe is easy and delicious, and the onion and garlic mixture keeps the chicken moist and tender.

2 tablespoon olive oil (divided)
2 large onions (yellow or sweet; sliced )
4 cloves garlic (minced)
1/3 cup brown sugar
2 tablespoons white wine vinegar
4 split chicken breasts (bone-in, skinless)
Salt and pepper (to taste)

Steps:

  • Gather the ingredients. Preheat the oven to 425 F.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Add the onion and garlic. Cook, stirring, for 10 minutes, or until soft. If the onions start to crisp, reduce the heat.
  • Stir in the brown sugar and vinegar and cook for 6 to 7 minutes, stirring often, or until the onions are lightly caramelized. Remove from the heat.
  • Oil a baking dish with the remaining 1 tablespoon of olive oil and place the chicken in the dish in a single layer, bone-side down. Season with salt and pepper.
  • Spread the onion and garlic mixture over the top of the chicken breasts.
  • Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165 F . Check the temperature in the thickest part of the chicken pieces. Cover loosely with foil if the onions are getting too dark or dry toward the end of the cooking time.
  • Let the chicken rest for 5 minutes before serving.

  • Meanwhile, bake dinner rolls as directed on package.

2 large sweet onions, thinly sliced
3/4 teaspoon salt, divided

2 tablespoons lemon juice
1/4 teaspoon pepper
1/4 cup mayonnaise
1/3 cup finely chopped roasted sweet red peppers

Steps:

  • In a large skillet, heat oil over medium heat. Add onions and 1/4 teaspoon salt; cook and stir 6-8 minutes or until softened. Reduce heat to medium-low; cook 30-40 minutes or until deep golden brown, stirring occasionally. Stir in rosemary., Meanwhile, pound chicken with a meat mallet to 1/2-in. thickness. 2 large portobello mushrooms
2 chicken breasts, pounded until even thickness
1 ounce of olive oil
1/2 large onion, sliced thin
1 teaspoon thyme leaves
10 green grapes, split in 1/2
4 ounces of green verjus (or white wine)
1/2 teaspoon butter
4 slices of toasted seven-grain bread

Steps:

  • Scrape the portobello mushrooms clean, and slice them lengthwise, about a 1/4-inch thick. Season the chicken breast with salt and pepper. Heat 1/2-ounce of olive oil in a heavy saute pan, over high heat. Saute chicken breasts until firmly cooked through and browned on each side, approximately 3 to 4 minutes. Remove from the pan, add the sliced onions, add 1/2-ounce more olive oil if necessary, saute until brown and caramelized, scraping all the chicken bits from the pan. Add the mushrooms and continue sauteing until they are soft, another two minutes. Add thyme, grapes and de-glaze the entire pan with green verjus or white wine. Reduce the liquid until it is almost dry, then swirl in butter. Thinly slice the chicken. On one slice of bread, arrange one chicken breast and top with the onion and portobello mixture. Top with other slice of bread. Repeat with second sandwich.

  • Whisk first 4 ingredients in small bowl. Gradually whisk in 2 tablespoons olive oil. Season with salt and pepper. DO AHEAD Aioli can be made 2 days ahead. Cover prepared aioli and chill.
  • Heat vegetable oil in heavy large skillet over medium-high heat. Add onions, sprinkle with salt, and cook until beginning to brown, stirring often, about 10 minutes. Reduce heat to medium and continue to cook until onions are soft and deep golden brown, stirring often, about 20 minutes longer. Season with salt and pepper. 4 hamburger buns
2 cups baby spinach

Steps:

  • In large skillet, heat oil over medium heat. Add onion and sugar; cook 25 minutes or until onions are deeply caramelized, stirring frequently. This step can be done up to 3 days in advance. Re-warm onions in microwave or in a small pan on grill before proceeding. Preheat grill for direct grilling over medium-high heat. Spray chicken with nonstick spray. Transfer chicken to hot grill rack; cover and cook 10 minutes or until chicken loses its pink color throughout and internal temperature reaches 160º, turning once. Place cheese slices on chicken pieces. Cover and cook 1 to 2 minutes or until cheese is melted and golden brown. Build sandwiches using hamburger buns, spinach, chicken and caramelized onions.

1 1/2 heads garlic, separated and peeled
1/2 cup milk
3 tablespoons olive oil, divided
salt and pepper
2 tablespoons butter
2 onions, cut into 1 ",pieces
1/3 cup balsamic vinegar
1 sprig fresh thyme
1 bay leaf
1 1/2 tablespoons whipping cream
8 pieces chicken, about 3 pounds
2 tablespoons fresh parsley, chopped

Steps:

  • Preheat oven to 400°; bring garlic and milk to boil; drain and discard milk; in a small metal baking pan toss garlic with 1 T oil; roast 13 minutes or until golden; cool a bit and put the garlic and it's cooking oil in a food processor; process to a paste; sprinkle with salt and pepper and set aside.
  • Saute the onions in the butter and 1 T oil over medium-low heat; cook until golden, about 40 minutes; add vinegar, thyme and bay leaf and simmer until liquid is reduced by half, about 3 minutes; stir in cream and salt and pepper; set aside.
  • While the onions are sauteing, preheat the oven to 450°; heat the remaining 1 T of oil in a large skillet; salt and pepper the chicken; place skin side down in skillet and cook until golden brown on one side only, about 4 minutes.
  • Place chicken, skin side up, on a rimmed baking sheet and roast until internal temperature is 180°; spread garlic paste atop chicken pieces and bake another 5 minutes, until golden brown.
  • Rewarm onions over medium-low heat; to serve plate onions and place 2 pieces of chicken atop them; garnish with parsley.

½ cup olive oil, or as needed
1 large sweet onion, sliced
1 pound ground chicken
½ cup panko bread crumbs, or to taste
6 slices deli ham, or more to taste, diced
1 large egg
½ green bell pepper, diced
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
4 slices Swiss cheese
2 tablespoons salted butter, softened
4 whole wheat hamburger buns
4 tablespoons hot, sweet mustard (such as Inglehoffer®)

Steps:

  • Coat the bottom of a large cast iron skillet with oil. Turn heat to high and wait until oil is hot but not smoking. Add onions and cook for 1 minute. Reduce heat to low or medium-low. Continue to cook, flipping onions every 8 minutes and adding oil if necessary to keep them moist, until dark and caramelized, 25 to 30 minutes.
  • While the onions are caramelizing, preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine ground chicken, bread crumbs, diced ham, egg, bell pepper, onion powder, garlic powder, salt, and pepper in a large bowl. Mix to combine, being careful not to work the meat too much. Form into 4 patties.
  • Grill on the preheated grill over direct heat until cooked through, 4 to 5 minutes per side, adding a slice of Swiss cheese to each in the last minute. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C).
  • Spread butter on the inside of the hamburger buns and grill, face-down, until toasty, about 3 to 5 seconds.
  • Place the patties with cheese on the bottom buns, top with caramelized onions, spread mustard on the top buns, and serve.

1 teaspoon teriyaki sauce
1 lemon, juice of
1/2 cup gruyere cheese

  • Heat half of oil in frying pan over medium heat.
  • Add onions and cook 15 minutes, stirring occasionally.
  • Season with salt and pepper during cooking.
  • Onions should become golden brown and caramelized.
  • Remove onions from pan and set aside.

½ cup unsalted butter
1 large sweet onion, thinly sliced
2 tablespoons white sugar
½ cup all-purpose flour
salt and freshly ground black pepper to taste
1 egg
1 tablespoon water
4 small skinless, boneless chicken cutlets, pounded to 1/4-inch thickness
¼ cup olive oil
4 ounces triple cream Brie - thinly sliced and rind removed
2 tablespoons butter
½ cup vermouth
1 tablespoon dried thyme
2 tablespoons arrowroot

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt 1/2 cup butter in a large skillet; cook and stir the onion in the butter until caramelized, about 10 minutes. Stir in the sugar and cook until the sugar completely melts, about 5 minutes. Remove from heat and set aside to cool completely.
  • Mix together the flour, salt, and pepper in a shallow dish. Whisk together the egg and water in a small bowl. Dredge each chicken breast in the flour; shake off the excess flour and then dip the chicken in the egg and water mixture.
  • Heat the olive oil in a large skillet over medium-high heat; cook the chicken in the hot oil until completely browned, 5 to 7 minutes per side.
  • Place 2 of the chicken breast halves in the bottom of a baking dish. Top each with about half the brie and half the caramelized onions. Lie the remaining chicken breast halves atop the brie and onions.
  • Bake the chicken in the preheated oven until the cheese is melted and the chicken is no longer pink in the center, about 10 minutes.
  • While the chicken bakes, melt 2 tablespoons butter in a small skillet over medium heat. Allow the butter to brown slightly before adding the vermouth; bring to a simmer and allow to cook until the liquid reduces by about half. Season with the thyme, salt, and pepper. Stir the arrowroot into the mixture to thicken. Serve the sauce over the chicken.
