CHICKEN KEBAB RECIPE
An easy and delicious Chicken Kebab recipe. This recipe includes a tasty yoghurt marinade. These chicken kebab skewers are so versatile, they can be grilled, baked in the oven or cooked on the BBQ. A new healthy version of your favourite Greek takeaway.

Steps:
- Mix the marinate ingredients together well in a large bowl.
- Add the chicken thighs and marinade for at least 30 minutes or even better, overnight. (Cover with cling film and put in the fridge.)
- Thread onto skewers and cook for about 20 minutes until golden on the outside and cooked through.

MOZZARELLA CHICKEN
This is a great change from the usual chicken.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place chicken breasts between 2 sheets of wax paper. Pound each to 1/4 inch thickness. Spread butter/margarine over the inside, then add salt and pepper to taste.
- Place slice of cheese on breast, roll and close with toothpicks. Repeat with each breast. Dip rolled breasts in flour, then egg, then breadcrumbs. Place coated breasts in a lightly greased 9x13 inch baking dish.
- To Make Sauce: In a saucepan, melt 1/4 cup butter and add garlic. Add wine and simmer all together. Pour sauce over chicken and bake in the preheated oven for 30 to 45 minutes.

CHICKEN KEBABS

- Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
- Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
- Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
- Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.

- Mix yogurt, lemon juice, onion juice, olive oil, garlic, black pepper, and saffron together in a large bowl. Add chicken pieces to the marinade and toss to coat. Cover with plastic wrap and marinate, 8 hours to overnight.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Remove chicken from marinade; thread through skewers. Discard unused marinade.
- Cook on the preheated grill, turning frequently, until golden brown on all sides and meat is no longer pink in the center, about 8 minutes per side.

- Combine salt, chili powder and pepper; rub into chicken cubes. Transfer to a large bowl. Add vinegar; toss to coat. Cover and refrigerate for 3-4 hours. , Drain chicken, discarding marinade. CHICKEN AND MOZZARELLA KEBABS
This is a recipe I came across in a reader's digest cookbook and I thought it sounded delicious. I haven't cooked it yet, am going to cook it for mine and my partner's dinner tomorrow night because I think it sounds divine! Let me know what you guys think! For a more prominent lemon flavor, add the grated lemon rind to the breadcrumb coating.

Steps:
- Cut the chicken into even sized cubes, about 1 inch. Put into a shallow dish with the lemon juice, olive oil, garlic, rosemary, salt and pepper. Cover and chill for 3 - 4 hours.
- Drain the chicken cubes from the marinade. Cut the Mozzarella into cubes slightly smaller than the chicken.
- Thread the chicken and Mozzarella cubes alternately onto 4 kebab skewers.
- Dust with seasoned flour, dip into the beaten egg and coat evenly with breadcrumbs.
- Lower the threaded skewers into a pan of hot oil and deep fry for 5-6 minutes until crisp and golden; drain thoroughly on kitchen paper, and sprinkle with lemon rind.
- Serve immediately, garnished with lemon wedges and sprigs of rosemary.
