Steps:
- In medium bowl, mix 1 teaspoon of the cumin, 1 teaspoon of the chili powder, 1/2 teaspoon of the salt and the coriander. Add chicken; stir to coat.
- In 12-inch nonstick skillet, heat 1 teaspoon of the oil over medium-high heat. Add chicken; cook 8 to 10 minutes, stirring frequently, until no longer pink in center (at least 165°F). Transfer to plate, and keep warm.
- In same skillet, heat remaining 2 teaspoons oil over medium heat. Add onions, zucchini and bell pepper; cook 4 to 6 minutes, stirring occasionally, until vegetables are crisp-tender.
- Stir in frozen corn, beans, chiles, cooked chicken, remaining 1 teaspoon cumin, remaining 1 teaspoon chili powder and remaining 1/4 teaspoon salt. Cook 5 to 7 minutes, stirring occasionally, until completely heated through.
- Garnish with cheese and cilantro. Serve with lime wedges.

SAUTEED POTATOES & CHICKEN SANTA FE
This fast and easy one-dish meal has been a favourite after-work supper recipe at our house for years! (Originally from a recipe in an ad for the American Potato Marketing Board.)

Steps:
- Cut chicken and potatoes into 3/4" chunks.
- Heat the oil in a non-stick skillet and brown the chicken, about 5 minutes.
- While the chicken is browning, cook the potatoes in the microwave until just tender (8-10 minutes on high.) .
- Add the potatoes to the chicken and saute until they are both lightly browned.
- Add the corn and salsa and stir until mixed and heated through.

SANTA FE CHICKEN PACKETS
Chicken breasts topped with black beans, corn and zesty tomatoes, cooked in foil packets on the grill for an easy summertime meal

Steps:
- 1. Preheat outdoor grill to medium-high heat according to manufacturer's directions. Stir together beans, corn, drained tomatoes and cumin in medium bowl.
- 2. Place four 18x12-inch pieces of heavy foil on counter. Spray each with cooking spray. Place 1 breast in center on each piece of foil. Spoon 1/4th bean mixture over chicken for each packet. Bring up short sides of each foil packet and double fold top. Double fold both ends to seal each packet, leaving space for steam to gather.
- 3. Place packets on grate of covered grill. Grill 15 to 20 minutes or until chicken is no longer pink in centers (165 degrees F). Carefully open packets; sprinkle 1/4th cheese on top of each breast. Close foil and let stand 2 minutes or until cheese melts.
SANTE FE CHICKEN

Steps:
- Heat olive oil in heavy large skillet over medium-high heat. Season chicken with salt and pepper. Sauté chicken until golden brown, about 4 minutes per side. Pour off all but 1 tablespoon drippings from skillet. Add garlic and cook until just fragrant, about 30 seconds. Add stewed tomatoes, yam, chilis, broth, 6 tablespoons cilantro and taco sauce. Cover skillet, reduce heat to medium-low and simmer until chicken is just tender, about 20 minutes. Transfer chicken to plate. Add hominy to skillet and boil until yam is tender and juices are reduced to sauce consistency, about 10 minutes. Season with salt and pepper to taste. Return chicken and any collected juices to skillet. Cook until heated through, about 5 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Reheat gently before continuing.) Transfer to large deep serving platter. Garnish with remaining cilantro.
CHICKEN AND POTATOES SANTA FE
Steps:
- Zap the the potatoes in the microwave until they are just cooked through (about 4 minutes on 90% power). Be sure not to cook them too much. Meanwhile, heat oil over medium hight heat in a large skillet. Add chicken to skillet and brown. Drain water from potatoes and add to skillet. Continue to cook until potatoes are browned and chicken is cooked through. Turn heat down, add corn and salsa and cook until just heated through.
SANTA FE CHICKEN AND POTATO SOUP

- Cut Potatoes into 1/2-inch cubes.
- On a separate cutting board,cut chicken into uniform cubes.
- In a 1-quart microwave-safe bowl dish,combine potatoes,chicken,tomatoes,broth,and taco seasoning,mixing well.
- Cover lid tightly with a lid or plastic wrap.
- Microwave on high for 15 minutes (cooking time may vary depending on your microwave),or until potatoes and chicken are done.
- Let it sit for 2 minutes.
- Use oven mitts or tongs to remove the dish from the microwave.
- Remove plastic wrap carefully to prevent burns from steam.

- Heat oven to 400°F. Lightly spray 11x7-inch (2-quart) glass baking dish with cooking spray. In medium bowl, stir Bisquick mix, cornmeal, chili powder, green chiles and milk until dough forms; set aside.
- In 2-quart saucepan, heat chicken, corn and tomatoes to boiling. Pour hot chicken mixture into baking dish. Fold in cheese (cheese will not melt). Drop dough by 12 heaping tablespoonfuls onto chicken mixture.
