CHICKEN WITH WILD MUSHROOMS

Two 3 1/2- to 4-pound chickens, cut in eighths
Kosher salt and freshly ground black pepper
All-purpose flour
1/2 cup good olive oil
8 whole garlic cloves
1 1/2 pounds assorted wild mushrooms, such as porcini and cremini, stems removed and (1 1/2-inch) diced
8 sprigs fresh thyme, tied with kitchen string
1/4 cup dry sherry
1 tablespoon minced garlic (3 cloves)
2 cups white wine, such as Pinot Grigio
2 cups good chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat the oven to 325 degrees.
  • Pat the chicken dry with paper towels and sprinkle both sides liberally with salt and pepper. Place 1/2 cup flour in a bowl and dredge the chicken in the flour. In a large (12-inch) ovenproof pot such as Le Creuset, heat the oil. Add the chicken in three batches (don't crowd them!) and brown lightly over medium-high heat for 3 to 5 minutes on each side. Remove the chicken to a plate and continue until all the chicken is browned.
  • Add the whole garlic cloves, mushrooms, and thyme to the pot and cook over medium heat for 5 minutes, stirring occasionally. Add the sherry and cook for 1 minute, scraping up the brown bits. Add the minced garlic and cook for 2 more minutes. Add the wine, chicken stock, 1 tablespoon salt, and 1 teaspoon pepper and bring to a simmer. Add the chicken (large pieces first), cover, and place in the middle of the oven for 30 to 35 minutes, until the chicken is cooked through (about 165 degrees on an instant-read thermometer).
  • Remove the chicken to a bowl and discard the thyme. With a fork, mash together the butter and 1/4 cup flour and add it to the sauce. Simmer, stirring constantly, over medium heat for 5 minutes, until slightly thickened. Season to taste (it should be highly seasoned), put the chicken back in the sauce, and serve hot.

450g / 1lb plain flour, plus extra for dusting
2 tsp baking powder
1/2 tsp salt
120g / 4.5oz unsalted butter, plus extra for greasing
1 free-range egg yolk
120ml / 4fl oz water
4 tbsp olive oil
2 chicken breasts, bone and skin removed, flesh cut into pieces
500g / 1lb 2oz chicken thighs, bone and skin removed, flesh cut into pieces
100ml / 3.5fl oz dry white wine
100ml / 3.5fl oz water
2 tsp chopped fresh tarragon
2 tsp chopped fresh thyme
salt and frehly ground black pepper
200g / 7oz fresh wild mushrooms, roughly chopped
50ml / 2fl oz soured cream
1 free-range egg, beaten

Steps:

  • For the pastry, pulse the flour, baking powder, salt, butter and egg yolk in a food processor until the mixture resembles breadcrumbs. Gradually add the water, a tablespoon at a time, mixing continuously until the mixture just comes together as a dough. (You may not need to use all the water.) Roll the dough into a ball, then wrap it in cling film and chill in the fridge for an hour. Meanwhile, for the filling, heat two tablespoons of the olive oil in a saucepan over a medium heat, add the chicken pieces and cook for 4-5 minutes, or until browned. Add the wine, water, tarragon and thyme, and season, to taste, with salt and freshly ground black pepper. Bring the mixture to the boil, reduce the heat, and simmer for 15-20 minutes, or until the volume of liquid has reduced by half and the chicken is cooked through. Heat the remaining olive oil in a separate frying pan over a medium heat, add the mushrooms, and cook for 4-5 minutes, or until golden-brown, then season, to taste, with salt and freshly ground black pepper. Remove the cooked chicken from the frying pan with a slotted spoon and place into a bowl, then add two spoonfuls of the residual juices from that pan. Add the mushrooms, then stir in the soured cream until well combined. Set aside to cool. Preheat the oven to 180C/350F/Gas Grease a deep 20cm/8in pie tin with butter. Add a small amount of flour, then turn the tin to coat the base and sides, shaking out any excess. When the pastry has chilled, roll out two thirds of it onto a clean, floured work surface, until it is almost twice as wide as the diameter of the tin. Using the rolling pin, lift the pastry and lay it over the pie tin to line the base and sides. Gently press the pastry into the corners of the tin, trimming off any excess, then prick the base of the pastry case several times with a fork. Cover the pastry with a sheet of greaseproof paper and fill it with rice or dried beans. Bake in the oven for 10-15 minutes, or until the pastry is pale golden-brown. Remove from the oven, discard the beans and greaseproof paper and set the pastry aside to cool. When cool, pour the pie filling into the pastry case. Roll the remaining one third of the pastry out onto a clean, floured work surface until it is a little bit larger than the diameter of the pie tin. Brush the rim of the cooked pastry case with some of the beaten egg and place the pastry lid on top of the pie. Trim off any excess pastry. Seal the pastry lid to the pastry case by crimping the edges of the pastry lid with a fork. With a knife, make two small holes in the centre of the pastry lid to allow steam to escape. Brush the pastry lid with the remaining beaten egg, then transfer to the oven and bake for 30-35 minutes, or until golden-brown.

1 1/4 cups unbleached all-purpose flour
1/2 teaspoon salt
10 tablespoons unsalted butter, chilled, cut into pieces
4 1/2 tablespoons ice water (about)
3/4 ounce dried porcini mushroom (about 3/4 cup)
2 tablespoons unsalted butter
1/2 cup shallot, finely chopped
2 1/2 teaspoons garlic, minced
10 ounces fresh mushrooms (such as crimini, chanterelles and/or stemmed Shiitake, thickly)
3 large eggs
1/3 cup half-and-half
1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried thyme, crumbled
2 cups Swedish Fontina cheese (about 8 oz) or 2 cups Danish Fontina cheese, grated (about 8 oz)
to taste fresh parsley sprig

Steps:

  • FOR CRUST:
  • Mix flour and salt in medium bowl.
  • Add butter and rub with fingertips until mixture forms coarse meal.
  • Mix in enough water by Tbsp to form moist clumps.
  • Gather dough into ball; flatten into disk.
  • Wrap in plastic and chill until firm, about 45 minutes.
  • (Can be prepared 2 days ahead; keep refrigerated.) Roll out dough on lightly floured surface to 13-inch round.
  • Transfer to 9-inch glass pie plate; crimp edges.
  • Refrigerate 30 minutes.
  • Preheat oven to 375 F.
  • Line pie crust with foil.
  • Fill with dried beans or pie weights.
  • Bake 10 minutes.
  • Remove foil and beans.
  • Bake until crust is set and begins to color, piercing bottom with fork if puffy, about 15 minutes more. Transfer to rack and cool.
  • FOR FILLING: Place porcini in small bowl.
  • Add enough hot water to cover.
  • Let soak 30 minutes.
  • Drain mushrooms.
  • Melt butter in heavy large skillet over high heat. Add shallots and garlic and saute 1 minute. Add fresh mushrooms and saute until tender and liquids evaporate, about 5 minutes.
  • Add porcini and saute 2 minutes.
  • Season to taste with salt and pepper.
  • Set aside. Whisk eggs, half and half, basil and thyme in medium bowl until blended.
  • Season with salt and pepper.
  • Sprinkle half of cheese on crust. Top with mushroom mixture and remaining cheese. Carefully pour egg mixture over mushrooms.
  • Bake until center is set, about 40 minutes.
  • Transfer to rack and cool slightly.
  • Garnish with parsley.
  • Cut into wedges and serve. NOTE: such as crimini, chanterelles and/or stemmed Shiitake, thickly sliced

This is a private recipe made public so that I could add it to a cookbook for my family. The notes pertain to my family. This is yummy but, Doug, you need to scoop the mushrooms out of Chris's piece and then mark his part. This is my own recipe made for my family.

1 tablespoon olive oil
1 onion, chopped
1 garlic clove, crushed and chopped
350 g chicken breast fillets, chopped
3 pieces bacon (rashers)
2 cups mushrooms, chopped
1/2 cup white wine
1 cup chicken stock
2 tablespoons parsley, chopped
1 tablespoon cornflour
2 tablespoons water
fresh ground black pepper
1 teaspoon butter (melted or cooking spray for the pie plate)
2 sheets puff pastry
1 egg
2 tablespoons milk

Steps:

  • heat the oil in a frying pan over a semi-low heat.
  • add the onion, garlic and bacon and fry gently, stirring often, until the onion is transparent, place in a bowl.
  • Increase the heat to medium and add the chicken, stirring frequently until browned, removed to a bowl.
  • Return the onion mix to the pan adding the sliced mushrooms, cook for a couple of minutes.
  • Add the wine, stir and cook for a minute.
  • Add the stock and simmer until reduced by half, stirring occassionally.
  • Return chicken to pan, bring to boil and add pepper.
  • Mix the cornflour with water and add it to the pan stirring until the sauce boils and thickens, add parsley and set aside to cool slightly.
  • Heat oven to 220C and take two sheets of puff pastry out of the freezer, remove the blue plastic and put them on the bench to thaw.
  • Spray the pie plate with cooking spray or brush it with melted butter, lay one sheet of pastry over the plate, tucking it down on the bottom and pushing it in on the sides.
  • Add the chicken filling, remembering to not add mushrooms to Chris's piece, Put the other sheet of pastry over the top, press around the edges , mark Chris's piece with a C and then cut the excess pastry off by running a sharp knife around the rim.
  • Use the excess pastry to decorate the pie. Press the edges down around the rim with a fork.
  • Pierce the pie here and there with a fork.
  • Beat the egg with the milk and then brush over the pie.
  • Place in the oven for 10 minutes then reduce heat to 190C and cook for 30-40 minutes.
