Garnet Yam, Bacon, and Apple Hash image

2 garnet yams, peeled and cut into 1/2-inch dice
Extra-virgin olive oil
Kosher salt
4 to 6 slices thick cut bacon, cut into lardons
1 large onion, cut into 1/2-inch dice
2 Granny Smith apples, cored and cut into 1/2-inch dice
4 scallions, white and green parts separated, thinly sliced
1/2 cup green pumpkin seeds (pepitas), toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, add the yams, drizzle with olive oil, and sprinkle with salt. Toss to coat and arrange them on a baking sheet. Roast the yams until they are soft but not mushy, 10 to 15 minutes. Remove from the oven and reserve.
  • Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt, and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the yams and saute until they are cooked through and starting to become crispy, 7 to 8 minutes.
  • Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.

Steps:

½ medium sweet onion, chopped
1 (12 ounce) package sweet chicken sausage links (such as al fresco® Sweet Apple Chicken Sausage), diced
1 Golden Delicious apple - peeled, cored, and diced
½ cup dried cranberries
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon ground fennel seeds
½ teaspoon chopped fresh rosemary
¼ teaspoon red pepper flakes

Steps:

  • Heat oil in a large saute pan over medium-high heat. Add potatoes and onion and cook until potatoes are slightly brown and onions are translucent, 12 to 15 minutes.
  • Heat a small saute pan over medium-high heat. Saute sausage, apple, cranberries, salt, black pepper, fennel, rosemary, and red pepper flakes for 5 minutes. Add to potato mixture and serve.

1 cup chopped onion
2 tart cooking apples, peeled, cored, and finely chopped
2 cups cubed peeled baked potatoes
1 1/2 cups chopped skinless boneless rotisserie cooked chicken
1 teaspoon chopped fresh sage
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon paprika

Steps:

  • Heat 1 1/2 teaspoon oil in a large nonstick skillet over medium-high heat.
  • Add in onion and apple; stir/saute 7 minutes or until mixture begins to brown.
  • Spoon mixture into a large bowl.

8 ounces yams
5 ounces boneless skinless chicken thighs, cooked and diced
1 medium apple, I use gala variety
cooking spray
1 dash garlic salt
1 dash black pepper
1 dash crushed red pepper flakes

Steps:

  • Pierce the skin of the yam a few times and cook in microwave oven on high for 3-4 minutes or until the yam is about 80% cooked. (You can sub a leftover baked yam for this step).
  • Remove from microwave and peel off skin. Dice into bite sized pieces.
  • Heat a nonstick pan over medium to medium high heat and coat with some cooking spray (I use butter flavor). Add in the chicken and diced yams. Let it cook without tossing or stirring for about 3 minutes, then give it a stir or toss.
  • Meanwhile, dice the apple leaving the skin on. Add these to the chicken and yams once they've been in the pan about 5 minutes. Add the seasonings.
  • Continue to cook another 5 minutes or so stirring/tossing occasionally until the apple softens (hit it with more cooking spray if needed).
  • Enjoy!
