3 tablespoons vegetable oil, divided
3 celery ribs, sliced
2 green bell peppers, diced
1 onion, chopped
½ cup ketchup
½ cup lemon juice
½ cup crushed pineapple with syrup
⅓ cup packed brown sugar

Steps:

  • Combine flour, garlic powder, salt, and black pepper in a shallow dish.
  • Roll and coat chicken cubes in flour mixture.
  • Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
  • Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
  • Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
  • Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
  • Return chicken to the skillet.
  • Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
  • Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

to 4 chicken breast halves
1/2 cup all-purpose flour
1 scant teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 tablespoon​ extra virgin olive oil
1 tablespoon butter
4 to 6 green onions (thinly sliced)
1​ clove garlic (finely minced)
For the Sauce:
1/2 cup orange juice
1/3 cup​ chicken broth
3 tablespoons rice vinegar
3 tablespoons brown sugar
2 tablespoons low sodium soy sauce
2 tablespoons ketchup
Optional: 2 tablespoons​ dry sherry (or Chinese cooking wine)
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Cut each chicken breast into 2 pieces. Put each chicken piece between sheets of plastic wrap and pound to thin to about 1/4-inch thickness. Alternatively, carefully slice each chicken breast in half horizontally, making thin cutlets.
  • In a plate or bowl, combine the flour, ginger, salt, pepper, and garlic powder. Dredge chicken pieces in the flour mixture.
  • Heat the butter and olive oil in a large skillet or sauté pan. Brown the chicken for about 4 minutes on each side, until browned and cooked through. Remove to a warm serving platter and keep warm.
  • While the chicken is cooking, combine the orange juice, chicken broth, rice vinegar, brown sugar, soy sauce, ketchup, and sherry or wine, if using. Combine the cornstarch with the 1 tablespoon of water and add to the mixture. Blend well and set aside.
  • Add the green onions and garlic to the skillet and cook, stirring, for about 1 to 2 minutes. Add the sauce mixture and continue cooking, stirring, until thickened. Simmer for 1 minute.
  • Spoon the sauce over the chicken pieces and serve with hot cooked rice or noodles.

1 lb (450g) Chicken breast, pieces
1 tbsp Rice wine or dry sherry
2 tbsp Olive oil (1/2 for the batter, 1/2 for frying)
1 tsp Curry powder (mild)
1 Egg, beaten
1 pinch Salt
4 oz (100g) Cornflour or cornstarch
1 clove Garlic, crushed
1/2 cup Pineapple juice or 3 tbsp sugar
2 oz (50g) Tomato ketchup
1 tsp Wine vinegar
1 lb cooked rice
1 red / green pepper
1 cup pineapple chunks

Steps:

  • In a bowl, mix the chicken cut into pieces with the rice wine or sherry, half the olive oil, curry powder, egg and a pinch of salt. Add in the cornflour until the chicken is covered with the batter.
  • In a pan, cook the chicken breasts in the remaining olive oil until browned on all edges. Optionally you can saute some red or green peppers and some pineapple chunks to add to the sauce before serving.
  • In a saucepan, heat the minced garlic, pineapple juice or sugar, tomato ketchup and wine vinegar, stirring until the simmered sauce becomes dense or the sugar dissolves. Finally bring to boil.
  • After cooking the sweet and sour sauce, pour it over the chicken pieces and stir well.
  • Optionally add the peppers and pineapple chunks previously sauteed in the pan and serve with rice, noodles or on its own.

1/2 cup oyster or shiitake mushrooms, trimmed and roughly chopped
1/4 cup sliced shallots
2 teaspoons honey
2 tablespoons sherry vinegar or good-quality wine vinegar
1/3 cup dry fino or oloroso sherry (do not use cream sherry)
1 cup meat, chicken or vegetable stock
4 pieces boneless, skinless chicken breast, 1 to 1 1/2 pounds
Salt and black pepper to taste

Steps:

  • Place a 10-inch skillet over medium-high heat for a minute or two. Add the tablespoon of olive oil, then mushrooms and shallots, and turn heat to high. Cook, stirring occasionally, until mushrooms brown on edges, about 5 minutes.
  • Add honey, and stir until it evaporates, less than a minute. Add vinegar, and cook, stirring occasionally, until mixture is dry, about 2 minutes. 1/2 cup apple cider vinegar
1/4 cup ketchup
2 tablespoons low-sodium soy sauce

Steps:

  • To a medium saucepan, add all ingredients except water and cornstarch, whisk to combine, and bring to a boil over medium-high heat.
  • To a small bowl, add the water, cornstarch, and stir to combine.
  • Add the water and cornstarch mixture to saucepan, reduce heat to low, and allow sauce to simmer for about 5 minutes while you make the chicken; whisk intermittently.
  • To a large ziptop bag, add the chicken, cornstarch, salt and pepper to taste, seal, and shake to coat chicken evenly.

A sweet and tart cherry chicken summer dish that's built in a single pan, making for minimal cleanup! Tender, juicy chicken thighs with crispy skin are topped with a sweet-sour fresh cherry sauce.

6 chicken thighs (possible to use breasts too)
1 tablespoon kosher salt
1/4 cup balsamic vinegar
2 tablespoons honey
1/2 cup olive oil
1 cup minced shallots (about 2 large or 4 medium)
handful fresh rosemary springs
2 cups cherries (any kind, pitter)
kosher salt (to taste)
black pepper (to taste)

Steps:

  • Pat the chicken thighs (or breasts) dry with a paper towel and season with kosher salt. Let it sit out while you prep the rest of the ingredients.
  • Whisk together the balsamic, honey, olive oil, shallots, salt and pepper. Place the chicken in a re-sealable plastic bag and pour in the marinade. Seal the bag and make sure all the chicken is coated. Let sit at least 30 min and up to overnight in the fridge. Take out of the fridge 30 minutes before placing in hot oven.
  • Meanwhile, pit the cherries and set aside.
  • To cook chicken: about 30 min before, take it out of the fridge so chicken can come to room temperature. Preheat oven to 400 degrees F. Place chicken thighs (or breasts) skin side up in a shallow roasting dish or cast iron skillet. Nestle the rosemary springs in between the chicken pieces of top with the pitted cherries, moving them around so they fall in between the chicken pieces leaving as much as the skin exposes as possible. The pour the marinade over the chicken. The marinade should generously cover the bottom of the pan.
  • Slide the pan into the oven and rotate every 10-12 minutes.
  • Cooking times; for breasts: cook 20 minutes; for thighs: cook 45minutes. If using both remove the breasts while the dark meat continues cooking.
  • When the dark meat is tender at the bone and cooked through, return breasts to the pan and increase oven to 450 F. Let the sauce reduce and the chicken skin get dark and crispy, about 12 minutes. Move the cherries around again in needed to expose more chicken skin. Brush the chicken with the marinade from the pan every 3-4 minutes to glaze them.
  • Serve warm, with crunchy sea salt and freshly grinded black pepper.

dark soy sauce
8 slices lemons (sliced thinly)
ground black pepper
2 tablespoons cider vinegar
4 tablespoons soft brown sugar

1 (425 g) can pitted cherries
1 cup chicken stock
1 tablespoon grated orange rind
1 tablespoon grated lemon rind
1/2 cup orange juice
2 tablespoons lemon juice

KOREAN FRIED CHICKEN

900g (2 lbs) chicken breast, cut into bite sized pieces
4 tsp fine sea salt
4 tsp ground black pepper
2 tbsp garlic powder
2 tbsp rice wine or dry sherry
260g (2 cups) cornflour (corn starch)
FOR THE SAUCE
2 ½ tbsp gochujang
1 tbsp dried red chilli flakes (optional)
2 tbsp cider vinegar
2 tbsp brown sugar
2 tbsp honey
3 tbsp soy sauce
4 tbsp rice wine or sherry
3 tbsp garlic, minced
2 tbsp sesame oil
TO GARNISH
4 spring onions (scallions), thinly sliced
2 tbsp toasted sesame seeds

Steps:

  • Whisk half of the salt, pepper and garlic powder together with the Chinese rice wine to make the marinade. Add the chicken and mix well with your hands ensuring the chicken pieces are evenly coated with the marinade.
  • Allow to marinate while you prepare the rest of the dish or overnight. The longer the chicken rests in the marinade the better.
  • When ready to fry, heat a large wok about one third full with rapeseed (canola) or peanut oil and bring to 175c/350f over medium high heat. If you don't have a thermometer, you can check that the oil is hot enough by placing a chopstick or wooden skewer in the oil. If bubbles form around the chopstick instantly, your oil is hot enough.
  • Meanwhile, pour the flour onto a plate and add the remaining salt, pepper and garlic powder. Then dust each piece of chicken with the flour mixture.
  • Be sure to shake off any excess flour. Cooking in small batches, place a fewpieces of the chicken in the hot oil and fry for about 4 to 5 minutes. Transfer each batch of fried chicken to a rack to soak up any excess oil. Repeat with the remaining chicken.
  • With all the chicken fried, it's time to make the sauce. Discard or strain the cooking oil into a container for future frying and wipe the wok clean. Stir in the sauce ingredients. It is easiest mix the sauce ingredients in a mixing bowl beforehand but these can be added directly to the wok if it's more convenient for you.
  • Bring the sauce to a simmer and then add the fried chicken. I usually add the chicken to the sauce in batches too as it is easier to ensure that it is all equally coated. Ensure that they chicken is heated through and then add the toasted sesame seeds and chopped spring onions(scallions) to serve.
  • I like to serve Korean fried chicken with plain white rice.
