Easy Chicken Curry image

Chicken breasts sauteed and simmered with onion, olive oil and curry powder. Simplest chicken curry you'll ever make! Serve over hot cooked rice with a little side of mango chutney, if desired.

6 skinless, boneless chicken breast halves - cut into strips
¼ cup olive oil
2 large onions, diced
⅓ cup curry powder, or to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
  • Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

Recipe video above. This is a Western style curry, and it's the easiest chicken curry I know how to make with the least ingredients possible without sacrificing tastiness! Very mild, not spicy at all (assuming curry powder is mild).

1.5 tbsp oil ((vegetable, canola))
2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

I love comfort food, but my husband likes more exotic flavors. So this is a compromise that I came up with recently. It satisfied my craving for something warm and belly-filling while tempting his adventurous palate. This recipe improvises upon three recipes I found here, numbers 100215, 10744 and 51269. You can substitute carrots and cauliflower for the sweet potatoes and parsnips, respectively. I prefer the Bisquick crust, but puff pastry and regular pie crust would also work well.

1 large sweet potato, diced
1 medium yellow onion, diced
1 green pepper, diced
1 large parsnip, diced
4 cups chicken breasts, cubed
1/3 cup butter
1/2 cup flour
2 tablespoons olive oil, divided
2 cups chicken broth
1/2 cup half-and-half
2 teaspoons curry powder
2 eggs
2 cups Bisquick
salt and pepper

Steps:

  • Preheat oven to 400 degrees.
  • Combine sweet potato, parsnip and 1 tbs. of the olive oil in a large Ziploc bag and shake to coat them in olive oil.
  • Spread them out on a large baking sheet and season with salt and pepper to taste.
  • Bake for 10-15 minutes, until they just start to brown and turn tender.
  • In a large skillet or wok, over medium heat, saute chicken in the rest of the olive oil, seasoning with salt and pepper to taste. Remove chicken from skillet into a large bowl.
  • In the same skillet, over medium-high heat, melt the butter and saute the onion and bell pepper until both just begin to brown.
  • Add sweet potato and parsnip, and stir to mix vegetables.
  • Reduce heat to medium, then add flour and cook for one minute stirring constantly to coat the vegetables.
  • Combine chicken broth, half and half and curry powder.
  • Pour over vegetables and simmer, stirring constantly, until the mixture is thick and bubbling.
  • Stir in the chicken.
  • Pour the mixture into a 9 x 13 Pyrex baking dish.
  • Combine eggs and Bisquick and pour over the top of pot pie.
  • Place in center of oven and bake for 25-30 minutes until the top turns golden brown.

This is a combination of recipes for Chicken Curry/Massamun. I love the comfort of creamy coconut milk and spicy red curry. The aroma of the rice with the sweet yet spicy sauce just warms me up. My husband loves it and it's one of those delicious dishes that doesn't take much time.

jasmine rice
2 cups cooked chicken (Rotisserie Chicken from grocery store)
1 cup fresh snow pea (can use green beans as substitute)
1/2 yellow onion, sliced thin
1/2 red bell pepper, sliced in thin strips
1 (12 ounce) can coconut milk
1 cup chicken broth (I use low sodium)
1 1/2 tablespoons brown sugar
1 dash salt, to taste (can be less (or more)
1 -4 tablespoon red curry paste (if you like it spicy - 4 tablespoons, Medium 2 1/2, Mild 1)

Steps:

  • Cook rice according to package.
  • Heat Coconut Milk on medium, whisk in Curry Paste when milk is warm.
  • Add chicken broth. Cook for 2 minutes until bubbly.
  • Add the brown sugar and salt to taste.
  • Add the vegetable and cook on medium for 4 minutes.
  • Add the chicken and reduce to low heat.
  • Simmer for 20 minutes to absorb best flavor. (can be more or less, but the longer time you let it simmer, the more flavorfull it becomes.).
  • Remove from heat and serve over rice.
