CHICKEN FAJITAS WITH FRESH SALSA
Fresh salsa is all the rage when combined with the smoky flavor of chipotle peppers. This is so delicious!!

Steps:
- In a bowl, combine tomatoes, red pepper, avocado, jalapeno, cheese, lime juice and 1/8 teaspoons salt; set aside.
- In a large nonstick skillet, melt butter over medium-high heat; sauté onion for 3 minutes or until softened and starting to brown. Add chicken, chili powder, chipotle, oregano and 1/4 teaspoons salt; sauté for 5 minutes just until chicken is no longer pink inside.
- Whisk flour into milk until smooth; gradually stir into skillet. Simmer, stirring, for 3 minutes or until bubbling and thickened. Line tortillas with lettuce and spoon filling on top along center; top with fresh salsa. Fold bottom of tortilla then fold sides to enclose filling.

Steps:
- Heat 1 tablespoon oil in a skillet over medium heat; stir in onion and bell pepper. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Remove vegetables to a plate.
- Add chicken to the skillet, adding more oil if needed. Saute until chicken is no longer pink and the juices run clear, about 5 minutes. Add water and taco seasoning; stir until seasoning dissolves. Simmer until sauce begins to thicken and stick to chicken, and chicken is fully cooked, 3 to 5 minutes.
- Serve chicken and vegetables on tortillas.

I was born and raised on a farm in Iowa but have been a California resident for many years. Southwestern-style recipes like these chicken fajitas soon became family favorites. I like to serve them with salsa and guacamole.

- In a small bowl, combine the first six ingredients; divide the mixture between two large resealable plastic bags. Add chicken to one and vegetables to the other; seal bags and turn to coat. Refrigerate for 2-4 hours, turning bags occasionally. , Drain and discard marinade from chicken and vegetables. In a large skillet over medium heat, saute chicken for 6-7 minutes or until no longer pink; drain. Remove chicken and keep warm. In the same skillet. Saute vegetables for 3-4 minutes or until crisp-tender; drain. , Spoon chicken and vegetables onto tortillas; fold in sides. Serve immediately.

- To make the spice rub, add ground cumin and smoked paprika powder to a bowl. Season chicken with salt, place it in a dish, and rub it with half of the spice mixture. Repeat the process with the steak and the remaining spice rub.
- To make the marinade, finely mince garlic and add to a bowl. Zest and juice limes into the same bowl, then add Worcestershire sauce and olive oil. Season with salt and whisk it together. Set aside some of the marinade and divide remaining between the spiced meats. Cover dishes with plastic wrap, transfer to the fridge, and let marinate for at least 4 hrs.
- Quarter bell peppers, remove seeds, slice into strips, and add to a bowl. Slice white onion and add to the same bowl. Add the reserved marinade, toss well, and set aside. To make the salsa, finely dice red onion. Chop tomatoes. Halve, deseed, and finely dice jalapeños. Mince cilantro. Add red onion, tomatoes, jalapeños, and cilantro to a bowl. Zest and juice half a lime into the bowl and season with flaky sea salt.
- Heat sunflower oil in a frying pan over medium-high heat. Add steak and fry approx. 3 min. on either side, then remove from pan. Add the chicken and fry approx. 6 min., or until cooked through. Remove from pan and let meats rest approx. 10 min. After removing the meats, add the bell pepper mix to the frying pan. Fry for approx. 5 min. over medium-high heat or until charred but still a bit crisp.
