3 tablespoons extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, minced
12 marinated white anchovies, coarsely chopped (1 1/2 oz)
1 pinch red pepper flakes
2 1/4 cups canned tomato sauce
1/4 cup fresh ricotta cheese
1 tablespoon unsalted butter
kosher salt, to taste
fresh ground black pepper, to taste
1 lb rigatoni pasta

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, in a large deep skillet, heat 2 T of the olive oil.
  • Add the onion and garlic and cook over moderate heat until the onion is translucent, about 8 minutes.
  • Stir in the anchovies and crushed red pepper flakes and cook until the anchovies begin to break apart, about 1 minute.
  • Add the tomato sauce and simmer over moderately high heat until thickened, about 5 minutes.
  • Stir in the ricotta and butter and season the sauce with salt and pepper.
  • Cook the rigatoni until al dente, drain.
  • Add the rigatoni to the sauce and cook over low heat tossing until coated, about 1 minute.
  • Drizzle the rigatoni with the remaining 1 T of olive oil, transfer t largeo bowl or platter and serve.

Here it is -- my favorite pasta dish. Ever. I learned to make it with torchio, an unusual funnel-shaped Venetian pasta, but any tube-shaped kind will do. The dish isn't saucy, so you can really taste the individual flavors, and the merguez, with its spicy harissa flavor, has an unexpected kick. Both parsley and mint provide fresh accents.

1 pound ziti or other tube-shaped pasta
6 tablespoons (3/4 stick) unsalted butter
3 tablespoons extra-virgin olive oil, plus more for serving
1 pound merguez sausage (see Chef Talk, below), casings removed
2 garlic cloves, minced
1 tablespoon tomato paste
1 tablespoon finely chopped fresh flat-leaf parsley
Kosher salt and freshly ground black pepper
3/4 cup (3 ounces) shredded ricotta salata cheese
1/2 cup Sicilian Bread Crumbs (see below) or pan-toasted soft bread crumbs
3 tablespoons finely chopped fresh mint
1 garlic clove, finely chopped
3 cups cubed (1-inch) trimmed brioche, challah, or crusty Italian bread
2 tablespoons extra-virgin olive oil
2 tablespoons coarsely chopped fresh flat-leaf parsley

Steps:

  • 1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook according to the package instructions until al dente. Drain well and rinse under cold running water.
  • 2. Meanwhile, melt the butter in a small saucepan over medium heat. Continue cooking until the milk solids in the saucepan turn hazelnut brown, about 2 minutes. Immediately pour the melted butter into a small bowl.
  • 3. Heat 1 tablespoon of the oil in a very large skillet over medium-high heat. Add the sausage and cook, occasionally stirring and breaking it up with the side of the spoon into bite-sized pieces, until lightly browned, about 8 minutes. Stir in the garlic and cook until it softens, about 1 minute. Stir in the tomato paste and parsley and mix well. Pour into a colander to drain the excess fat. Clean the skillet.
  • 4. Heat the remaining 2 tablespoons oil in the skillet over medium-high heat. Add the pasta and cook, stirring occasionally, until it is lightly browned, about 2 minutes. Add the sausage mixture and stir well. Season to taste with salt and pepper.
  • 5. Transfer the pasta mixture to a serving bowl. Add the browned butter and mix well. Top with the ricotta salata, Sicilian Bread Crumbs, and mint. Drizzle with additional olive oil, toss, and serve immediately.
  • 1. To make the bread crumbs: Position a rack in the center of the oven and preheat the oven to 350 degrees F. With the machine running, drop the garlic through the tube of a food processor to mince the garlic. Add the bread cubes, oil, and parsley and pulse until the bread becomes coarse crumbs. Spread on an 18-by-13-inch half-sheet pan. Bake, stirring occasionally, until the crumbs are lightly toasted and smell garlicky, 7 to 10 minutes. Let cool. Makes 2 cups. Measure out 1 cup of the bread crumbs. (Reserve the remaining bread crumbs for another use; they can be frozen in an airtight container for up to 1 month.)

1 (16 ounce) box rigatoni pasta
2 eggs
1 (15 ounce) ricotta cheese
3/4 cup parmesan cheese, grated
1 tablespoon parsley, dried
3 cups mozzarella cheese, shredded, divided
2 (26 ounce) jars pasta sauce, barilla al forne divided

Steps:

  • Preheat oven to 375°.
  • Spray a 9x13-inch pan with Pam.
  • Cook rigatoni as per directions on package; drain.
  • Beat eggs in a small bowl.
  • Stir in ricotta cheese, parmesan cheese and parsley.
  • To assemble casserole:.
  • Spread 2 cups pasta sauce to cover bottom of pan.
  • Place 1/2 of the cooked rigatoni over sauce; top with 1/2 the ricotta mixture dropped by spoonfuls.
  • Layer 1 cup mozzarella cheese, 2 cups pasta sauce, remaining rigatoni, and remaining ricotta mixture.
  • Top with 1 cup mozzarella, remaining pasta sauce then the last 1 cup of mozzarella cheese.
  • Cover with foil and bake 60-70 minutes until bubbly.
  • Uncover and continue cooking for another 5 minutes until cheese melts.
  • Let stand 15 minutes before serving.

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

1 cup diced onion
1 teaspoon salt, plus more to taste
2 cloves garlic, crushed (or more to taste)
1 pinch red pepper flakes
1 (28 ounce) can San Marzano (Italian) tomatoes, blended smooth
½ cup water (to rinse out can of tomatoes)
1 (8 ounce) package uncooked rigatoni pasta
½ cup fresh basil leaves, thinly sliced
4 tablespoons cold butter, cubed
1 cup grated Parmigiano-Reggiano cheese, plus more for serving

Steps:

  • Heat olive oil in saucepan over medium-high heat. Add onions, salt. Cook until no longer white and starting to turn translucent, about 5 minutes. Stir in garlic; cook about 1 minute. Add chili flakes and blended tomato sauce. Bring to a simmer; adjust heat to medium to medium-low. Simmer gently, stirring occasionally, for 45 to 60 minutes. Reduce heat to low.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes (5 minutes from doneness).
  • Add about 2/3 of the basil to the sauce. Stir in butter. When butter melts, add cheese in 3 increments.
  • Drain pasta; transfer to sauce. Stir until rigatoni are evenly coated with sauce. Serve sprinkled with the remaining basil and a dusting of grated cheese.

3 pounds fresh plum tomatoes or one 28-oz can whole tomatoes in juice
2 large garlic cloves, crushed
Pinch of crushed red pepper flakes
1/4 cup olive oil
Salt
4 basil leaves, torn into bits
1 pound rigatoni
1 cup ricotta (1/2 lb; preferably fresh)
Finely grated Pecorino

Steps:

  • If using fresh tomatoes, cut a shallow X in bottom of each with a paring knife and blanch tomatoes in 3 batches in a large pot of boiling water, 1 minute per batch.
  • Transfer blanched tomatoes with a slotted spoon to a cutting board and, when cool enough to handle, peel, beginning from scored end, with knife, then halve lengthwise and seed. Chop tomatoes (fresh or canned), reserving juice (from cutting board or can).
  • Cook garlic and red pepper flakes in oil in a 4-quart heavy pot over medium heat, stirring, until garlic is golden, about 5 minutes. Discard garlic, then add tomatoes with their juice and 1 1/4 tsp salt and simmer, uncovered, until sauce is thickened, about 20 minutes. Remove from heat and stir in basil and salt to taste.
  • Cook rigatoni in boiling salted water, uncovered, until al dente, then drain.
  • Toss pasta with warm marinara sauce in a large bowl. Serve with ricotta and grated Pecorino.

White Bolognese, a meat sauce made without tomato, is a variation you rarely see in America.

Extra virgin olive oil
1/2 sweet onion, peeled and finely chopped
2 medium carrots, peeled and finely chopped
1 stalk celery, finely chopped
Sea salt
Freshly ground black pepper
1 pound mild Italian pork sausage meat, removed from casings
1 pound ground beef (not lean)
1 1/2 cups dry Italian white wine
1 cube beef bouillon dissolved in 2 cups simmering water
1 1/2 ounces dried porcini mushrooms rehydrated in 3 cups lukewarm water
1/3 cup heavy cream
1 pound rigatoni
3/4 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Add enough oil to a large, deep sauté pan to coat the base and place over medium-high heat. When the oil shimmers, add the onion, carrots and celery and sauté until glassy and just tender, about 5 minutes. Season lightly with salt and pepper. Add the sausage and beef to the pan, breaking it into walnut-size pieces, and brown well.
  • Pour in the wine and keep at a rapid simmer until the pan is almost dry. Then pour in 1 1/2 cups beef bouillon and lower the heat to medium. Simmer gently, uncovered, until the bouillon is nearly gone, stirring now and then. Meanwhile, chop the rehydrated porcini into small pieces, reserving the liquid.
  • Bring a large pot of salted water to a boil. Add mushroom liquid to the sauce to cover the meat halfway (about 1 cup) along with the porcini and continue simmering until the sauce is loose but not soupy, about 10 minutes. Taste and adjust salt and pepper; it should be highly seasoned. When the consistency is right, fold the cream in. Remove from the heat and cover.
  • When the pasta water is at a full boil, add the rigatoni and cook until still firm, but not hard, in the center. When the pasta is almost done, scoop out 1 cup of pasta water and reserve. Drain the pasta and then return it to the pot. Pour the pasta sauce on top and fold in with a wooden spoon. The pasta should not be dry. Add a little pasta water or mushroom liquid to loosen it. (It will continue to soak up sauce on the way to the table.) Serve in one large bowl or in individual bowls, passing the cheese at the table.
