1 large egg, beaten
3/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
1 teaspoon dried parsley flakes

1/4 cup olive oil
LEMON SAUCE:
1 cup water
1/3 cup lemon juice
2 chicken bouillon cubes
Lemon slices

Steps:

  • Pound chicken breasts with a meat mallet to 1/4-in. thickness; slice into cutlets 1-1/2 in. wide. Place beaten eggs in a shallow bowl; in a separate shallow bowl, combine the next six ingredients. Dip chicken in egg, then in crumb mixture, patting to help coating adhere., In a large skillet, heat 2 tablespoons oil over medium heat. Brown chicken in batches, adding oil as needed, until golden brown, 2-3 minutes per side. Remove; drain on paper towels., For lemon sauce, add water, lemon juice and bouillon to skillet, stirring to loosen browned bits from pan. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, until liquid is reduced by half, 8-10 minutes. Return chicken to pan; toss to coat. Cook until heated through, 4-6 minutes. Serve with lemon slices.

4 skinless, boneless, chicken breasts (about 11/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
4 large eggs
3 tablespoons water
1/4 cup extra-virgin olive oil
1/2 lemon, with rind, cut in thin rounds
1/2 cup dry white wine, such as Pinot Grigio
1 cup chicken broth
1/2 lemon, juiced
2 tablespoons unsalted butter
1/4 cup chopped flat-leaf parsley

Steps:

  • Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash. Heat the oil over medium-high flame in a large skillet.
  • Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlets to a large platter in a single layer to keep warm.
  • Toss the lemon slices into the pan and cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce the sauce slightly. Roll the butter in some flour and add it to the skillet, this will thicken the sauce. Stir to incorporate and dissolve the flour. Reduce the heat to medium-low and return the chicken to the pan; place the lemon slices on top of the cutlets. Simmer gently for 2 minutes to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

4 large skinless, boneless chicken breast halves
1 cup milk, or as needed
1 cup bread crumbs
1 cup grated Pecorino Romano cheese
2 tablespoons chopped fresh parsley
1 cup olive oil
salt and ground black pepper to taste
1 lemon, thinly sliced
1 cup white wine
1 cup chicken broth
¼ cup lemon juice
1 ounce brandy-based orange liqueur (such as Grand Marnier®), or to taste

Steps:

  • Remove the tenderloin from each chicken breast half. Fillet each chicken breast half into 2 slices. Pound each piece of chicken, including the tenderloins, to 1/4-inch thickness. Place chicken in a bowl and pour in enough milk to completely cover chicken; soak for 30 minutes.
  • Mix bread crumbs, Pecorino Romano cheese, and parsley together in a bowl. Remove chicken from milk and dredge through bread crumb mixture until each piece is evenly coated.
  • Heat olive oil in a large skillet over medium heat; cook chicken in the hot oil until lightly browned, 2 to 3 minutes per side.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a baking dish.
  • Transfer chicken to the prepared baking dish, reserving 1 tablespoon olive oil in the skillet. Sprinkle salt and pepper over chicken. Place 1 slice lemon onto each chicken piece.
  • Pour wine into the skillet with reserved olive oil; bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add chicken broth and lemon juice and boil until reduced by half, 5 to 10 minutes. Pour wine mixture over chicken and drizzle brandied orange liqueur over each.
  • Bake in the preheated oven until chicken is no longer pink in the center and sauce is bubbling, 20 to 25 minutes.

2 ounces grapeseed oil
Four 6-ounce chicken breasts
4 large eggs, beaten
1/4 cup all-purpose flour
Salt and ground white pepper
Salt and ground white pepper
1 cup chicken stock
1/4 pound (1 stick) butter
2 lemons, juiced
1 teaspoon minced fresh parsley

Steps:

  • Heat a large saute pan over medium-high heat until warmed. Add the oil. During heating, dip the chicken breasts into the eggs, and then dust each breast with seasoned flour on both sides. Once floured, add to the oiled pan, reduce the heat to medium and cook until light brown in color, 3 to 4 minutes. Flip and repeat cooking for a final 3 to 4 minutes. Once cooked, remove the breasts from the pan and allow to finish with carry-over cooking.
  • Return the same pan to the heat and add the stock. Allow to simmer and reduce by three-quarters of the volume. After reducing, whisk in the butter to create a sauce, removing from the heat during the process. Finally, finish with lemon juice and parsley and serve over the chicken.

4-6 chicken breasts, sliced or pounded to 1/2″ thickness
2 tbsp olive oil
4 cloves garlic, minced
1 tsp balsamic vinegar (red wine or apple cider vinegars okay)
1/2 tsp pepper
1 tsp salt
pasta and other stuff:
4 tbsp butter
1 tsp olive oil
1 medium shallot, chopped (I use onion instead)
2 cloves garlic, minced
10 oz mushrooms, sliced
1 tbsp dry white wine
1/2 cup heavy cream
1/4 tsp each salt and ground nutmeg
1/2 tsp black pepper
9 oz fettucine-style pasta: Cappello's, rice pasta, or zucchini pasta
6 oz bacon, pre-cooked, chopped coarsely
2 cups broccoli, pre-cooked cut into bite-size pieces
1/2 cup hard cheese (Romano, Parmesan, or a mix of the two), shredded or grated
1/4 cup Italian parsley, chopped

Steps:

  • Slice or gently pound your chicken breast pieces to 1/2″ thickness. Combine with the olive oil, vinegar, garlic, salt and pepper, then marinate for at least two hours, but up to four hours. Heat the 1 tsp olive oil and 2 tbsp of butter in a large skillet on medium/high heat until shimmering, about two minutes. Add the chicken pieces and saute 3-4 minutes per side, until browned and cooked through. Cook the chicken in batches so as to not overcrowd the pan. As your pieces cook, the rest of the pan will start to brown and stick to the pan, that's fine! We're going to use that browned stuff to deglaze the pan and get some seriously delicious flavors for our sauce. Pay attention to the smell and color of the browned pan - if it starts to turn from "browned" to "burnt", adjust the heat. Also, feel free to add butter and olive oil to the pan if the chicken starts to get too dried out. For rice pasta or Cappello's pasta, cook the noodles according to their directions, then drain, and rinse in cold water. Drizzle with a little olive oil to keep the pasta from sticking together, and set aside. For zucchini noodles, just cut them using a spiral vegetable slicer and set aside - it will soften when you add it near the end. As the chicken finishes cooking, cover it in tin foil to help retain its heat. I like to put dishes that I want to keep warm in the microwave to further help keep heat from escaping. Turn your heat down to medium. Add the remaining 2 tbsp butter and the chopped shallot (onion), and sauté for about two minutes, until translucent and aromatic. Add the minced garlic and sauté for another 30 seconds. Add the mushrooms, 1 tbsp white wine, and any juices that have accumulated from the bottom of your plate of cooked chicken. Sauté the mushrooms for about five minutes, until softened. As it cooks, use a wooden spoon to gently scrape up the browned stuff on the bottom of the skillet. If it dries out, add water to the mushrooms, one tbsp at a time. Stir in the cream, ground nutmeg, and remaining salt and pepper to the mushrooms, and bring to a simmer. Once the cream starts to simmer, add the remaining ingredients: pasta, bacon, broccoli, chopped parsley and chicken. Carefully toss your ingredients using some tongs, wait a few seconds, and stir in the cheese and continue to carefully toss everything until the cheese melts and thickens the sauce. Should only take a minute or two.

If you can make chicken cutlets, you can make this lemony, buttery recipe; the only difference is an easy pan sauce that brightens the whole plate. This version includes lemon slices browned in butter, which are pretty and tasty but entirely optional. Although the name suggests that it's a French or Italian dish ("Francese" means French in Italian), it's actually neither: Like spaghetti and meatballs, it's a mostly Italian-American invention. Serve with something starchy to soak up every drop of the sauce; pasta is traditional.

2 tablespoons whole milk
1 teaspoon salt, plus more for seasoning

1 cup all-purpose flour
1/3 cup olive oil
1/3 cup vegetable oil
4 to 6 large boneless, skinless chicken cutlets (buy the cutlets thinly sliced, or buy regular boneless breasts and slice them in half horizontally to make thin pieces)
3 to 6 tablespoons unsalted butter
1 lemon, thinly sliced, seeds removed (optional)
1/2 cup dry white wine
Freshly squeezed juice of 1 lemon, more to taste
2 cups chicken stock
3 to 4 tablespoons freshly minced parsley

Steps:

  • In a wide, shallow bowl, whisk eggs, milk, salt and pepper until blended. Place the flour in a separate bowl. Line a baking sheet with paper towels.
  • In a wide skillet, heat olive and vegetable oils over medium heat until shimmering.
  • Working in batches to avoid crowding the pan, lightly dredge the chicken in flour and shake off any excess. Dip into egg batter, let excess batter drip back into the bowl and place in the skillet. Fry, turning once, until golden brown on both sides, about 4 minutes per side. Adjust the heat as the cutlets cook so they brown slowly and evenly, with a steady bubbling. Transfer to the paper-towel-lined pan and repeat with remaining cutlets.
  • When all cutlets are browned, remove the pan from the heat and pour off the oil. Wipe out the pan with paper towels. Return the pan to low heat.
  • If making the lemon slices (if not, skip to Step 6 below): Melt 3 tablespoons of the butter and then scatter the lemon slices over the bottom of the pan. Cook, stirring gently occasionally, until the lemon slices are golden and browning around the edges, about 3 minutes. Scoop out the lemon slices and set them aside.
  • Add 3 tablespoons of butter, the wine and lemon juice and bring to a boil. Boil until the liquid is syrupy, 3 to 4 minutes. Pour in the stock, bring to a boil and cook until thickened into a sauce, about 5 minutes. (It will thicken more when you add the cutlets.) Taste and adjust the seasonings with lemon, salt and pepper; it should be quite lemony and not too salty.
  • Reduce the heat, tuck the cutlets into the pan and simmer very gently until the sauce is velvety and the chicken pieces are heated through, about 4 minutes. Turn the cutlets over occasionally in the sauce. Place the browned lemon slices on top. Sprinkle with chopped parsley and serve, spooning some of the sauce over each serving.

1/2 cup vegetable oil
1 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon black pepper
3 large eggs
1/2 stick (1/4 cup) unsalted butter
1/2 cup dry white wine
1/2 cup low-sodium chicken broth
3 tablespoons fresh lemon juice plus 1 whole lemon, thinly sliced
1 lemon
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Place chicken breasts between 2 sheets of plastic wrap and gently pound chicken with flat side of a meat pounder or with a rolling pin until 1/4 inch thick.
  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking.

This was my absolute favorite dish and I often serve it now 2-3 times a month. Sometimes I add artichoke hearts. When I add the artichoke hearts I use a can of quartered artichokes and drain off the brine and add at the end just long enough to heat through!

1 cup very condensed chicken broth
1/4 cup white wine

  • Dust chicken with flour.
  • In a flat container mix together eggs and enough parmesan cheese to create a thick batter (something like pancake batter).

  • In same skillet increase heat to a med-high and quickly brown the garlic (not too brown) then deglaze pan with wine and let"boil" a few minutes.

  • Add lemon juice 1/4 at a time until desired taste.
  • Thicken if desired.
  • Ladle over chicken and pasta on individual plates, with a garnish of lemon wedges and parmesan cheese.

¼ cup finely grated Parmigiano-Reggiano cheese
¼ cup all-purpose flour

1 (16 ounce) package linguine pasta
4 (4 ounce) chicken breast cutlets
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil, or more as needed
1 medium lemon, cut into 8 slices
2 tablespoons minced fresh garlic
¾ cup chicken broth
½ cup dry white wine
2 tablespoons freshly squeezed lemon juice
1 cup half-and-half
1 tablespoon minced fresh parsley

Steps:

  • Stir beaten eggs and Parmigiano-Reggiano cheese together in a shallow bowl. Stir flour, salt, and pepper together in a separate bowl. Dredge cutlets in the seasoned flour.
  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat butter and oil in a 12-inch skillet over medium-high heat. Swirl the skillet once the butter has melted to combine butter and oil. Add lemon slices and cook, topped with a splatter screen, for 2 minutes per side.

  • Remove skillet from heat and cool sauce slightly, about 2 minutes. Gradually add half-and-half, stirring constantly. Season with salt and pepper. Drain linguine, reserving some of the cooking water.
  • Place skillet back on low heat. If the sauce is too thick, add cooking liquid from the pasta, 1 tablespoon at a time, until thinned to your desired consistency. If the sauce is too thin, create a paste from the leftover flour and about 1 tablespoon of olive oil. Quickly stir or whisk the paste into the sauce and allow to cook to desired consistency.
  • Return chicken pieces and lemon slices to the sauce to warm through, about 2 minutes.
  • Serve each cutlet with two lemon slices and sauce over hot, cooked linguine. Garnish with fresh parsley.

A lot of times, Chicken Francaise can be hard to pull off, and have it taste good. This recipe, adapted from the show Food 911 on the Food Network, is a great dish, and it's surprisingly healthy as it doesn't really use all that much oil.

kosher salt

4 chicken breasts
2 eggs
1 lemon
1/4 cup olive oil
2 tablespoons butter
1 cup chicken broth
1/2 cup white wine (See Notes)
kosher salt

flat-leaf Italian parsley

Steps:

  • Mix a decent amount of salt and pepper with the flour to make a dredging mixture. You don't need any more than a cup of flour; you're just giving them a light dusting.
  • Using a meat pounder, pound the chicken breasts flat so that they are about the size of your hand.
  • Dredge the chicken breasts through the flour. When you pull them out, give them a few good slaps so that the extra flour falls off. You want a very light coating, this isn't supposed to be like batter.
  • Crack the two eggs into a flat bowl, pierce the yolks with a fork, and scramble them slightly. Combine with about a quarter cup of water to make a light egg wash. It should be pale yellow in color.
  • Run the chicken through the egg wash. Keep in mind this is a wash, not a bath. You don't want it soaking in egg, just enough to keep it wet and absorb the flour coating.
  • Heat the quarter cup of olive oil in a large fry pan on medium-high heat, and when it is smoking hot, place the chicken into the pan. Cook for 1-2 minutes on each side. You will know when it is ready to flip when the chicken has a nice, slightly browned color and a crisp texture. Remove the chicken from the pan.
  • Cut your lemon in half. Using one half, make several paper thin slices of lemon. Save the other half.
  • Turn the stove up to high heat, and drop the lemon slices into the frying pan. Wait for them to caramellize and take on a slightly gummy texture.
  • Pour in the 1/2 cup of white wine. I recommend Yellowtail Pinto Grigio because it's not too expensive, you can drink it with the meal, and the sweetness of it counteracts the sour of the lemon. Let the sauce reduce for 30 seconds to one minute.
  • Sprinkle in salt to taste, and then add in the cup of chicken broth. Allow it to reduce again.
  • Take your butter, and dredge it in the flour. Break it up into chunks and drop it into the sauce, swirling it around and allowing the sauce to thicken.
  • Once the sauce has thickened sufficiently, put the chicken breasts back into the pan. Coat them thoroughly with the sauce, and let them cook for about another minute or two to warm them back up.
  • Transfer to a serving platter, putting a few slices of lemon on top of each chicken breast, and then drizzle the sauce over the whole concoction.
  • Garnish with flat-leaf parsley, or whatever greenery you think would go good with the meal.

3 tablespoons grated Parmesan cheese

1 medium lemon, juiced, or to taste

¾ cup dry white wine
2 cups chicken broth

Steps:

  • Preheat the oven to 200 degrees F (95 degrees C). Pound chicken breasts thin using a meat mallet.
  • Combine beaten eggs and Parmesan cheese in a bowl; mix until uniform. Place flour on a wide, shallow plate.
  • Soak 1 piece of chicken in the egg and cheese mixture, then place in flour to coat both sides. Place back in the egg mixture again, and coat with flour for a second time; transfer to a wire rack. Repeat with remaining chicken.
  • Pour olive oil into the bottom of a large frying pan and heat over medium heat until warm. Add chicken, in batches as needed, and cook, turning occasionally, until browned, no longer pink in the center, and juices run clear, 5 to 7 minutes. Place the cutlets in the preheated oven and use the same pan to prepare the sauce.
  • Pour white wine into the pan; bring to a boil while scraping the bottom of the pan with a wooden spoon. Allow to reduce until you no longer smell the alcohol, 3 to 5 minutes. From the venerable Ristorante Villa Francesca in Boston's North End; this was in the Boston Herald's recipe request column in the 90's. I haven't tried it yet, but it looked too good not to share.

2 tablespoons olive oil
8 ounces boneless skinless chicken breasts, cut into 3 pieces
4 ounces mushrooms
3 pitted black olives
1 artichoke heart, sliced
1 anchovy fillet, chopped (optional)
1 1/2 teaspoons butter
1/2 cup white wine
salt and pepper, to taste
chopped parsley, for garnish

Steps:

  • Heat oil in saute pan until hot but not smoking.
  • Add chicken, saute until both sides are golden brown.
  • Drain oil, leave chicken in pan.
  • Add remaining ingredients; cover and cook until chicken is cooked through.
  • Salt as needed.
  • Simmer until sauce reaches desired thickness.
  • If sauce is too thin, remove chicken and return to pan once sauce is reduced to your preferred consistency.
  • Garnish with parsley.
