CHICKEN FRICASSEE WITH VERMOUTH
This is an elegant, velvety take on a traditional skillet-supper, perfect with a mound of fluffy white rice. Cooking this fricassee with the aperitif known as dry vermouth instead of the more traditional white wine results in a slightly sweeter and more aromatic sauce than you would ordinarily get. (White vermouth is composed of, among other things, white wine plus a bit of sugar, herbs and plants and, at times, the bark of trees.) But white wine will work as well.

- Sprinkle the chicken with salt and pepper to taste.
- Heat the butter in a skillet and add the chicken pieces skin side down. Cook over moderate heat about one minute without browning.
- Scatter the onion over all and cook 30 seconds. Add the garlic and stir it around. Cook the chicken about four minutes, turning the pieces often in the butter.
- Sprinkle the flour over all, turning the pieces so that they are evenly coated. Add the vermouth, chicken broth, bay leaf and thyme. Cover and cook over moderate heat about 20 minutes.
- Meanwhile, bring two batches of water to the boil for the carrots and leeks. Drop the carrots into one batch, the leeks in the other. Let the carrots simmer about one minute and drain. Let the leeks simmer about four minutes.
- When the chicken has cooked for a total of 30 minutes (start to finish), add the carrots, leeks and cream. Let simmer about two minutes. Serve with rice.

SECRET RECIPE CHICKEN FRICASSEE
This was my Grandma's secret family recipe from her French ancestors. I have never seen a recipe like this on any site. It's a rich creamy sauce over chicken...great with mashed potatoes. A great dish for Easter or Christmas.

Steps:
- Mix flour and margarine together in a saucepan over medium heat, stirring until the flour and margarine form a paste.
- Whisk cream into flour mixture about 1/2 cup at a time until smoothly combined; whisk in chicken broth and parsley. Bring sauce to a simmer, whisking constantly until thickened.
- Whisk egg yolks and lemon juice together in a bowl.
- Whisk egg yolk mixture slowly into cream mixture, about 1 tablespoon at a time, until the sauce barely comes to a simmer and coats the back of a spoon. Do not boil.
- If thicker sauce is desired, whisk cornstarch and 1/4 cup of sauce in a small bowl; stir cornstarch mixture back into sauce until thickened, about 2 minutes.
- Stir chicken breast pieces into sauce until chicken is heated through.

- Saute chicken and sausage in a large skillet for 4 to 5 minutes. Remove meat from skillet, add green onions and onion and saute until soft. Set aside.
- To Make Roux: In a small saucepan stir together oil and flour over low heat; cook until color is caramel and mixture is reduced to 1 cup of roux. Set aside.
- Put water in a large pot. Add the chicken, sausage, onion mixture, celery, seasoning, cayenne pepper, salt, ground black pepper and garlic. Bring all to a boil and cook for 20 minutes. Add 1/2 cup roux and stir together; the mixture should have the consistency of chowder. If necessary, add the remaining 1/2 cup roux.
- Reduce heat to medium low and simmer uncovered for 2 hours, stirring occasionally. Serve hot over rice, if desired.

- Brown ChickenSeason chicken on both sides with 1 tablespoon salt and 1/2 teaspoon pepper. Preheat a Dutch oven or other large heavy pot over medium-high heat. Add 2 tablespoons butter and the oil to pot. When butter melts and foam subsides, add half the chicken, skin side down, in a single layer; do not crowd pot. (If butter begins to blacken, lower heat.) Fry chicken, turning once, until golden brown on both sides, about 10 minutes total, and transfer to a plate. Repeat with remaining chicken.
- Saute MirepoixReduce heat to medium, and add mirepoix (onion, carrot, and celery) to pot, scraping up any browned bits with a wooden spoon. Saute mirepoix, stirring occasionally, until soft and golden brown in places, 8 to 10 minutes.
- Cook Mushrooms and FlourAdd mushrooms, and cook, stirring occasionally, until mushrooms darken, become glossy, and begin to release liquid, 4 to 5 minutes. Stir in flour, and cook until flour is absorbed by vegetables and is no longer visible, about 1 minute.
- Pour in Wine and BrothAdd wine to pot, and bring to a boil, stirring until liquid just thickens, about 45 seconds. Add broth, and stir.
- Simmer ChickenPlace chicken, skin side up, in a single layer on vegetables; pour juices that have accumulated on plate into pot. Tie parsley sprigs, thyme sprigs, and bay leaf together with kitchen twine; add to pot. Bring to a boil, then reduce to a simmer. Cover partially. Cook until internal temperature of thickest part of chicken registers 165 degrees, 25 to 30 minutes. Transfer chicken to a clean plate. Simmer liquid, uncovered, until reduced slightly, about 5 minutes. Discard herbs.
- Make and Add LiaisonTo make the liaison (sauce thickener), whisk together egg yolks and cream in a medium bowl. Whisking constantly, pour 1/2 cup cooking liquid, 1 tablespoon at a time, into liaison to temper it. Stir tempered liaison into pot.
- Finish with Tarragon, Lemon, and ButterReturn chicken to pot. Add tarragon, lemon juice, and the remaining butter. Bring to a simmer, stir gently to combine, and serve.

- In a resealable plastic bag, combine 2-1/4 teaspoons flour, salt, pepper and thyme. Add chicken and shake to coat. In a small skillet, brown chicken in butter. Remove chicken and set aside. In same skillet, saute the mushrooms, onion and celery until crisp-tender. Return chicken to the pan. Add water and bay leaf. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until chicken juices run clear, turning occasionally., Place remaining flour mixture in a bowl; stir in milk until smooth. Stir into pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaf. Sprinkle with parsley.

Chicken Fricasse is a creamy chicken and mushroom dish served best with rice, though you can servce it with pasta also, on its own as a side or as a pie filling. It reminds me of the taste of Chicken and Mushroom Pukka Pie filling. A guaranteed win the whole family will love. Serves 3-4

- In a resealable plastic bag or just hold the top closed, add 3 teaspoons of the flour, salt, pepper and thyme pop in the chicken, seal the bag or hold the top closed and shake the bag to coat the chicken. (5 mins).
- In a small skillet brown the chicken in half a tablespoon of the butter on a medium heat (constantly move the chicken around as it may stick due to the flour) then once browned slightly set aside. (6/7 mins).
- In the same skillet or a clean one if preferred add the rest of the butter and saute the mushrooms, onion and celery until tender. (3/4 mins).
- Then return the chicken to the pan add the water and the bay leaf, stir and bring to the boil. (2/3 mins).
- Reduce the heat to a low-medium heat cover and simmer for 30-35 mins, stirring occasionally. During this time the sauce should thicken and have a buttery creamy colour, add more water if the sauce begins to thicken too much to bring it back to a creamy consistency.
- Place the remaning flour mixture in a bowl and stir in the milk until smooth then add this to the pan BE CAREFUL not to add too much flour 1 and a half teaspoons should be sufficient, whilst stirring and bring to the boil for 2 minutes. Turn off the heat and stir in 1 to 2 tablespoons of creme fraiche. You may add more creme fraiche if desired too taste as this will add a more creamy texture to the dish. I have updated the recipe based on the review to help, please note it is a difficult dish to get spot on and can taste incredible if done well, please taste the sauce on a teaspoon during cooking and add more butter/creme fraiche dependent on taste.
- Discard the bay leaf and sprinkle with the parsley if desired.
- To Cook the Rice.
- Begin cooking the rice about 10 minutes before the chicken fricasse is finished.
- Add enough rice to serve 3 to 4 people to a pan. You do not need to wash the rice before cooking.
- Then add boiling water just enough so there is about 2 cm of water above the rice. Cover with pan lid.
- On a high heat bring the rice to boiling point and leave to boil for 1 minute, then turn down the heat to lowest setting and leave for 10 minutes. Check rice after 5 minutes and add another 100 ml water if needed.
- The aim is to allow the steam to cook the rice in the pan after you allowed it to boil, that is why the lid is required. The end result is slightly sticky rice cooked just right not too soft, and no need to drain. You can just simply spoon the rice straight from the pan to the plate.
- This may leave a burn or rice stuck to the bottom of the pan if done incorrectly as no stirring of the rice is involved.
- You can always choose to cook the rice using another method, this is just the way I like to prepare my rice with this meal.
- Serve the Chicken fricasse on top of the rice and enjoy.
