I know, I know, EVERYONE makes baked chicken. Well, this one is good! Leave the skins on, at least while baking - or actually indulge and eat it with the skin on when baked!

6 bone-in chicken breast halves, with skin
½ cup ranch-style salad dressing
1 cup bread crumbs
½ cup grated Parmesan cheese
1 teaspoon cracked black pepper
1 teaspoon sage
½ teaspoon salt

Steps:

  • Marinate the chicken in the ranch dressing overnight (or for at least 4 hours).
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine the bread crumbs, Parmesan cheese, black pepper, sage and salt and mix well. Coat the marinated breasts in the breading mixture and place in a 9x13 inch baking dish. Bake in the preheated oven for 20 minutes, then REDUCE HEAT to 350 degrees F (175 degrees C) and bake for 30 minutes or until done and juices run clear.

A wonderful recipe for deep-fried chicken with a Southern taste all its own. The hint of tangy buttermilk under a crispy coating of deliciousness makes this chicken stand out.

6 chicken thighs
6 chicken drumsticks
2 tablespoons salt
1 quart cold water, to cover
2 cups cold buttermilk
1 egg, beaten
1 teaspoon chicken seasoning mix (see note)
3 cups all-purpose flour
2 tablespoons chicken seasoning mix (see note)
2 quarts vegetable oil for frying

Steps:

  • Place chicken thighs and drumsticks in a large bowl, cover with cold water, and mix in salt. Cover and refrigerate from 8 hours to overnight.
  • Rinse chicken thoroughly. Mix buttermilk, beaten egg, and 1 teaspoon chicken seasoning in a large bowl until thoroughly combined.
  • Place chicken pieces into buttermilk mixture and refrigerate 30 minutes to 1 hour.
  • Heat vegetable oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Place flour and 2 tablespoons chicken seasoning into a shallow bowl and mix until combined. Remove chicken from buttermilk bath, shake off excess buttermilk, and press into flour. Tap off excess flour.
  • Gently place chicken into hot oil, 3 or 4 pieces at a time; fry chicken until golden brown, 12 to 15 minutes per batch.
  • Remove chicken pieces to a cooling rack set over paper towels to remove excess oil before serving.

1 whole chicken
3 fluid ounces cooking oil
4 fluid ounces heather honey
salt
pepper (freshly ground black pepper if you have it)
3 ounces French mustard
1/2 teaspoon curry powder
1 garlic clove, chopped

Steps:

  • Place the chicken in an oven-proof casserole dish. Mix all the other ingredients together and pour over the chicken. Cover the dish and cook in a pre-heated oven at 375F for an hour. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered. The chicken will brown as a result. Serve with boiled or creamed/mashed potatoes and fresh vegetables.
