1/2 preserved lemon, rinsed well
1 cup water
1/4 cup sugar
5 tablespoons extra-virgin olive oil
2 large sweet potatoes or 2 white potatoes, peeled and cut into 8 same-sized pieces
16 small white onions, yellow onions or 16 small shallots
8 carrots, trimmed, peeled, and quartered
4 celery ribs, trimmed, peeled, and quartered
4 garlic heads, cloves separated but not peeled
salt & freshly ground black pepper
3 fresh thyme sprigs
3 parsley sprigs
2 rosemary sprigs
8 chicken legs or 8 chicken thighs
1 cup chicken broth
1/2 cup dry white wine
1 1/2 cups all-purpose flour
3/4 cup hot water

Steps:

  • Center a rack in the oven and preheat to 450 degrees.
  • Using a paring knife, slice the peel from the preserved lemon and cut it into small squares. Discard the pulp.
  • Bring the water and sugar to a boil in a small saucepan, drop in the peel, and cook for 1 minute. Drain and set aside.
  • Heat 2 tablespoons of olive oil in a large skillet over high heat. Add the vegetables and garlic, season with salt and pepper and sauté until vegetables are brown on all sides. (If necessary, do this in 2 batches.) Spoon vegetables into a 4½- to 5-quart Dutch oven or other pot with a lid and stir in the herbs and the preserved lemon.
  • Return the skillet to the heat and add another tablespoon of olive oil. Brown the chicken on all sides, seasoning it with salt and pepper as it cooks.
  • Tuck chicken into the casserole, surrounding it with the vegetables.
  • Mix together the broth, wine, and the remaining olive oil and pour over the chicken and vegetables.
  • Put 1½ cups flour in a medium bowl and add enough hot water to make a malleable dough. Dust a work surface with a little flour, turn out the dough, and, working with your hands, roll the dough into a sausage.
  • Place the dough on the rim of the pot - if it breaks, just piece it back together - and press the lid onto the dough to seal the pot.
  • Slide the pot into the oven and bake for 55 minutes.
  • Now you have a choice - you can break the seal in the kitchen or do it at the table, where it's bound to make a mess, but where everyone will have the pleasure of sharing that first fragrant whiff as you lift the lid with a flourish. Whether at the table or in the kitchen, the best tool to break the seal is the least attractive: a screwdriver. Use the point of the screwdriver as a lever to separate the lid from the dough.
  • Depending on whether your chicken was whole or cut up, you might have to do some in-the-kitchen carving, but in the end, you want to make sure that the vegetables and the delicious broth are on the table with the chicken.

1/2 salt-preserved lemon, rinsed well (see note)
1/4 cup sugar
1/3 cup olive oil
16 small peeled potatoes (white or sweet) or 2 large peeled potatoes, each cut into 8 pieces
16 small onions or shallots, peeled and trimmed
8 carrots, peeled and quartered
4 stalks celery, trimmed and quartered
4 heads garlic, cloves separated but not peeled
Salt and freshly ground pepper
3 sprigs fresh thyme
3 sprigs Italian parsley
2 sprigs rosemary
1 chicken, whole or cut up
1 cup chicken broth
1/2 cup white wine
About 1 1/2 cups flour

Steps:

  • Preheat oven to 450 degrees. Remove zest from preserved lemon and cut zest into small squares; save pulp for another use. Bring 1 cup water and the sugar to a boil, drop in zest and cook 1 minute; drain and set aside.
  • Heat 2 tablespoons olive oil in a large skillet over high heat. Add vegetables and garlic, season with salt and pepper and sauté until brown on all sides. (If necessary, do this in 2 batches.) Spoon vegetables into a 4 1/2- to 5-quart lidded Dutch oven and stir in herbs and lemon zest.
  • Return skillet to heat, add another tablespoon of oil and brown chicken on all sides, seasoning it with salt and pepper as it cooks. Tuck chicken into casserole, surrounding it with vegetables. Mix together the broth, wine and remaining olive oil and pour it over chicken and vegetables.
  • Mix flour with enough hot water (about 3/4 cup) to make a malleable dough. On a floured surface, work dough into a sausage; place dough on rim of casserole. Press lid onto dough to seal casserole. Bake 55 minutes. To break seal, work the point of a screwdriver between pot and lid. If chicken is whole, quarter it. Chicken may be served in the pot or arranged with vegetables on a serving platter.

2 cups whole milk
1 plump, moist vanilla bean, split and scraped
6 large egg yolks
1/2 cup sugar
1/3 cup cornstarch, sifted
3 1/2 tablespoons unsalted butter, softened and cut into 3 pats (1 3/4 ounces)

Steps:

  • Bring the milk and vanilla bean (pulp and pod) to a boil in a small saucepan over medium heat. Cover the pan, turn off the heat, and allow the milk to infuse for at least 10 minutes or for up to 1 hour.
  • If the milk has cooled, it will need to be reheated now.
  • Whisk the yolks, sugar, and cornstarch together in a heavy-bottomed medium saucepan. Whisking constantly, drizzle one-quarter of the hot milk over the yolks. When the yolks are warm, whisk the remainder of the milk into the yolks in a steadier stream; remove and discard the pod (or save it to make vanilla sugar).
  • Put the pan over medium heat and, whisking vigorously, bring the mixture to the boil. Keep at the boil-still whisking energetically-for 1 to 2 minutes before pulling the pan from the heat and pressing the cream through a sieve into the small bowl. Let the cream sit for 5 minutes, then whisk in the butter. Cover the cream with a piece of plastic wrap-press the wrap against the cream-and refrigerate until thoroughly chilled. You can speed up the chill by putting the bowl in a larger bowl filled with ice cubes and cold water. (Keeping: Covered tightly with plastic wrap, pastry cream can be refrigerated for 2 days. To smooth the chilled cream, whisk it for a few seconds.).

DUTCH OVEN CHICKEN AND VINAIGRETTE

This is a simple dish: chicken that's a little bit braised and a little bit roasted in a covered Dutch oven. The seasonings - garlic, onions, herbs and lemon - are basic and border on assertive until they cook together, when their aromas intensify and their flavors soften. Putting half the aromatics in the pot with oil and wine, tucking the other half inside the chicken and cooking in this enclosed, steamy environment means that everything that goes into the pot goes into the chicken. When the chicken's cooked through, pour off the pan juices, crush the tender garlic and add sharp mustard and vinegar to make a vinaigrette that's as good over salad greens as over the chicken.

1/4 cup olive oil
1 medium onion (preferably yellow), trimmed, peeled and cut into eighths
1 head garlic, cut crosswise
5 fresh thyme sprigs
5 fresh rosemary sprigs
Fine or coarse sea salt
Freshly ground black pepper
1 whole chicken (about 4 pounds)
1/2 lemon
3/4 cup white wine
2 teaspoons Dijon mustard
2 tablespoons wine vinegar (preferably sherry)
1 teaspoon walnut oil (optional)
3 to 4 handfuls salad greens

Steps:

  • Make the chicken: Heat oven to 450 degrees.
  • Pour 3 tablespoons of the olive oil into a Dutch oven large enough to hold the chicken, then toss in all but 1 piece of the onion. Add the garlic and 4 sprigs each of the thyme and rosemary. Stir to coat, then season generously with salt and pepper.
  • Pat the chicken dry, season the inside with salt and pepper, and tuck in the remaining piece of onion and herb sprigs. Rub the chicken with the remaining 1 tablespoon olive oil and season with salt and pepper. Squeeze the juice from the lemon half over the bird, and then pop the lemon inside it with the herbs and onion. Settle the chicken into the pot, breast side up. Pour in the wine and cover.
  • Roast the chicken for 60 minutes, then check on it: It's done when a thermometer plunged into the thickest part of the thigh has reached 165 degrees. If it's done but doesn't have enough color for you, you can run it under the broiler for a few minutes; if it's not done, remove the lid and continue to roast until done, 15 to 30 minutes more. Transfer the chicken to a platter, cover loosely with a foil tent, and let rest.
  • While the chicken rests, make the vinaigrette: Pour off the pan drippings, measure out 6 tablespoons and return them to the pot. (If your drippings are scant or very dark, you can still use them. Keep any extra drippings for another use.) Hold onto the garlic but discard the onion and herbs from the pot. Place the pot over medium heat, pour in 1/2 cup water, and boil for a couple of minutes, scraping the bottom of the pan to pick up any stuck bits. You should have about 1/3 cup of drippings; if they're very chunky, strain them when you add them to the vinaigrette.
  • Working in a medium bowl, mash 6 to 8 cloves of the soft garlic with the mustard, then whisk in the vinegar. Slowly whisk in the reserved liquid, followed by the walnut oil, if using. Taste for salt and pepper, then pour the vinaigrette into a small pitcher.
  • To serve, carve the chicken, cutting it into quarters or eighths, and arrange on the platter. Pour over a little of the vinaigrette. Dress the salad greens lightly with vinaigrette and serve on the platter or in a shallow bowl. Pass the rest of the sauce at the table.
