STOVETOP MOROCCAN CHICKEN WITH PRESERVED LEMON AND OLIVES

Stovetop Moroccan Chicken With Preserved Lemon and Olives image

This chicken with preserved lemons and olives is a classic Moroccan dish. This recipe calls for using a Dutch oven or heavy- bottomed pot.

Provided by Christine Benlafquih

Categories     Dinner     Entree

Time 1h45m

Yield 4

Number Of Ingredients 15

1 whole chicken, skin on or removed, cut into pieces
1/3 cup vegetable oil (or a mix of vegetable oil and olive oil; or a mix of oil and butter)
2 very large white or yellow onions (1 lb or 1/2 kg), sliced as thinly as possible
One small handful of fresh cilantro , chopped
One small handful of fresh parsley, chopped
2 or 3 cloves of garlic, finely chopped or pressed
2 teaspoons ginger
1 teaspoon pepper
1 teaspoon turmeric
1/2 teaspoon salt
1/2 teaspoon saffron threads , crumbled (divided; optional)
For the Sauce
1/2 to 1 teaspoon smen (Moroccan preserved butter - optional)
1 handful green or red olives, or mixed
1 preserved lemon, quartered and seeds removed

Steps:

  • Ahead of time if possible, combine the chicken with the onion, garlic, herbs, and spices, including half of the saffron. (Reserve the rest of the saffron for adding to the sauce at a later time.) If time allows, cover and leave the chicken to marinate in the fridge for a few hours or even overnight. Otherwise, proceed to the next step.
  • When ready to cook, transfer the chicken and onions (scrape every last bit out of your bowl) to a heavy-bottomed pot, deep skillet or Dutch oven. Cover and cook the chicken over medium or medium-low heat, gently stirring and turning the chicken every 15 minutes or so, until the chicken is tender enough to pinch off the bones. (This will take approximately one hour, but longer if using a free range chicken). Keep the heat adjusted so that the chicken doesn't scorch, and only add a little water if you feel you must. Typically the chicken will braise in its own juices.
  • When the chicken is cooked, carefully transfer it to a plate and cover.
  • Continue cooking the onion mixture and sauce over medium-low heat, stirring occasionally, until the liquids evaporate and the onions can be mashed into a blended mass which separates from the oils. If your onions do not appear to be melding, you can give a few pulses with an immersion blender, but do not overprocess.
  • Add the preserved lemon, olives, the rest of the saffron, and a few tablespoons of water, and simmer gently for 5 to 10 minutes. Return the chicken to the pot to heat through, or place under the broiler to brown the skin.
  • Place the chicken on a serving platter, pour the onion sauce over the top and sides, and garnish the top of the chicken with the quartered lemon and some olives.
  • For casual meals, consider garnishing the chicken with a handful or two of french fries (patate frite), which may also be offered as a traditional side.
  • Moroccan tradition is to eat by hand, using crusty Moroccan bread for soaking up the sauce.

CHICKEN TAGINE WITH OLIVES AND PRESERVED LEMONS

Chicken Tagine With Olives and Preserved Lemons image

This rich and fragrant chicken stew is laden with complex flavors and spices reminiscent of the sort you might encounter in a mountainside cafe in Morocco. Save yourself the cost of a plane ticket, however, and make this at home. First, rub the chicken with a redolent combination of garlic, saffron, ground ginger, paprika, cumin, turmeric and black pepper, then pop it into the refrigerator for 3 to 4 hours to marinate. Once that's done, brown the chicken parts, and remove from the pan, making room for a pile of sliced onions that you'll sauté until golden brown. Nestle a cinnamon stick into the tangle of onions, pile the chicken parts on top and scatter with slices of preserved lemons and olives, a combination of green and kalamata. Add a bit of chicken stock and lemon juice, then cook over low heat until the chicken is cooked through, and your house smells amazing.

Time 1h

Yield 4 servings

Number Of Ingredients 17

5 cloves garlic, finely chopped
1/4 teaspoon saffron threads, pulverized
1/2 teaspoon ground ginger
1 teaspoon sweet paprika
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
Salt and freshly ground black pepper
1 chicken, cut in 8 to 10 pieces
2 tablespoons extra virgin olive oil
3 medium onions, sliced thin
1 cinnamon stick
8 calamata olives, pitted and halved
8 cracked green olives, pitted and halved
1 large or 3 small preserved lemons (sold in specialty food shops)
1 cup chicken stock
Juice of 1/2 lemon
1 tablespoon chopped flat-leaf parsley

Steps:

  • Mix garlic, saffron, ginger, paprika, cumin and turmeric together. If not using kosher chicken, add 1/2 teaspoon salt. Add pepper to taste. Rub chicken with mixture, cover, refrigerate and marinate 3 to 4 hours.
  • Heat oil in heavy skillet. Add chicken, and brown on all sides. Remove to platter. Add onions to skillet, and cook over medium-low heat about 15 minutes, until lightly browned. Transfer to tagine, if you are using one, or leave in skillet. Add cinnamon stick.
  • Put chicken on onions. Scatter with olives. Quarter the lemons, remove pulp and cut skin in strips. Scatter over chicken. Mix stock and lemon juice. Pour over chicken.
  • Cover tagine or skillet. Place over low heat, and cook about 30 minutes, until chicken is done. Scatter parsley on top, and serve.

CHICKEN WITH ROAST LEMONS AND GREEN OLIVES

Chicken with Roast Lemons and Green Olives image

This recipe from Pamela Kaufman of Ferndale, Michigan gives this chicken a European flair with lemons, parsley, and olives.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 50m

Number Of Ingredients 10

2 lemons, washed, ends trimmed, cut into 12 1/4-inch slices, plus zest and 2 tablespoons juice (from a third lemon)
Coarse salt and ground pepper
1/4 cup plus 1 tablespoon all-purpose flour
4 boneless, skinless chicken breast halves (6 to 8 ounces each)
3 tablespoons olive oil
5 garlic cloves, minced
1/4 cup dry white wine
1 cup reduced-sodium chicken broth, canned
1/2 cup pitted green Sicilian or Spanish olives, thinly sliced
1/4 cup chopped flat-leaf parsley

Steps:

  • Preheat oven to 325 degrees. Line a baking sheet with parchment paper. Arrange lemon slices in a single layer on paper; sprinkle with pepper. Roast, turning slices over halfway through, until lightly browned around edges, 25 to 35 minutes. Set aside.
  • After lemons have roasted 20 minutes, place 1/4 cup flour in a shallow bowl. Season chicken with salt and pepper; coat with flour, shaking off excess. In a large skillet, heat oil over medium-high. Add chicken and cook until browned, 3 to 4 minutes per side; remove and set aside.
  • Add garlic to skillet; cook 30 seconds. Add wine and cook, scraping up browned bits from bottom, until reduced by half, about 1 minute. Whisk in remaining tablespoon flour; cook until just starting to brown, about 30 seconds. Add 1/4 cup broth, whisking until combined. Add remaining broth, olives, zest, and lemon juice. Return chicken to skillet. Bring to a boil, reduce to a simmer, and cook, turning chicken once, until opaque throughout, 8 to 10 minutes. Add roast lemons and parsley; stir to coat. Serve.

CHICKEN LEGS, PRESERVED LEMONS, AND GREEN OLIVES

Chicken Legs, Preserved Lemons, and Green Olives image

Prepare an authentic Moroccan meal at home with this flavorful recipe from "Mourad: New Moroccan," by Mourad Lahlou.

Provided by Martha Stewart

Number Of Ingredients 15

6 chicken legs with thighs, trimmed of excess fat
Coarse salt
1 to 3 tablespoons duck or chicken fat
5 cups thinly sliced yellow onions
2 tablespoons ground coriander
2 teaspoons ground white pepper
2 teaspoons ground ginger
1 teaspoon saffron threads
1/2 teaspoon ground turmeric
1 1/2 cups Chicken Stock
6 quarters Mourad Lahlou's Preserved Lemons rind
1/2 cup pitted cracked green olives
4 tablespoons unsalted butter
1 tablespoon chopped flat-leaf parsley
2 teaspoons chopped fresh cilantro

Steps:

  • Generously salt chicken legs on all sides. Let stand at room temperature for 1 hour.
  • Heat 1 tablespoon fat in the bottom of a stainless steel tagine over medium-high heat. Add 3 of the chicken legs and cook, turning once, 3 to 4 minutes on all sides, until well browned. Remove legs from pan and repeat process with remaining 3 chicken legs. Remove from pan and set aside.
  • Discard all but 2 tablespoons fat from tagine. If fat is burnt, discard and add remaining 2 tablespoons. Place tagine over medium-high heat, stirring often and adjusting heat as necessary, until rich golden brown, about 15 minutes.
  • Meanwhile, remove all racks from oven except for bottom rack so that tagine will fit. Preheat oven to 350 degrees.
  • Add coriander, white pepper, ginger, saffron, and turmeric to tagine; cook, stirring constantly, until spices are lightly toasted, about 1 1/2 minutes. Return chicken legs to tagine; add chicken stock and bring to a boil. Cover tagine and transfer to oven; cook until chicken is tender and beginning to pull away from ends of drumsticks, about 40 minutes.
  • Remove chicken legs from tagine and set aside. Return tagine to stove and simmer over medium-high heat until liquid is thick enough to coat the back of a spoon, about 3 minutes. Season with salt. Add lemons and olive; cook until heated through. Whisk in butter and herbs.
  • Arrange chicken legs on a platter and spoon sauce over them; serve immediately.

CHICKEN TAGINE WITH GREEN OLIVES & PRESERVED LEMON

Chicken Tagine With Green Olives & Preserved Lemon image

Based on a recipe from The Best of Clay Pot Cooking by Dana Jacobi. Dana says, "If you can, make this dish as Moroccan women have for centuries, in the cone-topped clay cooker that gives it its name - otherwise a Dutch oven works well."

CHICKEN & PRESERVED LEMON TAGINE

Chicken & Preserved Lemon Tagine image

This is the ultimate Moroccan stew! I love preserved lemons and harissa - 2 ingredients you find over and over again in Moroccan cuisine!

Provided by shiumaieats

Categories     Stew

Time 45m

Yield 4 serving(s)

Number Of Ingredients 14

4 chicken legs (de-skinned if you prefer)
2 small white onions
2 garlic cloves, minced
1 tablespoon olive oil
1 piece gingerroot
2 cups chicken broth
4 sprigs coriander
pitted green olives
1 whole preserved lemon, sliced
2 teaspoons harissa or 2 teaspoons chili paste
2 teaspoons cumin
1 teaspoon ginger powder
1 teaspoon turmeric (for color) or 1 teaspoon saffron (for color)
3 dried chilies (to garnish)

Steps:

  • Sauté the diced onions and garlic in the pot on low heat just to sweat the onions. While doing so, pan fry the chicken legs in a separate pan just to get a golden brown on both sides.
  • Add the cumin, ginger and turmeric to the onions and garlic.
  • Place the chicken legs side by side into the pot with the onions and add a light chicken broth (unsalted) just enough but not covering the chicken. Add the sliced preserved lemon and green olives. The lemon is sour and salty so there is no need to add any salt to this dish.
  • Let the broth reduce, add the harissa and stir. Turn the chicken over and spoon the sauce over the meat.
  • When the chicken is cooked, garnish with chopped coriander, dried whole chilis and sliced preserved lemon.
  • Serve this dish along with fluffy cous cous :).

  • Place all of the ingredients (using the 1/4 cup of water to start) in the base of the tagine. Cover it and set it over medium to medium-high heat.
  • After 10 to 15 minutes, remove the lid (using a towel or pot holder) and give everything a stir. The liquid should be gently bubbling. If the moisture level is looking low, add another 1/4 cup water.
  • Return the lid and continue cooking for another 15 minutes, adjusting the heat as necessary to keep the liquid bubbling. Check again and dip a spoon into the sauce to taste. If it needs salt, add a pinch or add another spoonful of preserved lemon purée. Continue cooking until the meat is pulling from the bone. The liquid should be bubbling vigorously at this point. Serve with warm bread or couscous or rice.
