400 -500 g chicken livers
1 tablespoon soy sauce
1 tablespoon sherry wine
1/2 teaspoon chicken stock powder
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon white pepper
2 -3 tablespoons oil
1 red capsicum, finely chopped
3 bok choy, washed
3 tablespoons black bean sauce
1/2 cup chicken stock
1 teaspoon cornflour

Steps:

  • Trim livers, discarding any core part. Cut into 2cm pieces.
  • Place livers in a bowl with the soy sauce, sherry, salt, sugar, pepper and stock powder.
  • Marinate 5 minutes.
  • Heat the oil in a large frying pan and quickly cook the chicken livers over a high heat until almost cooked.
  • This is best done in two batches.
  • Transfer to a plate. Add the capsicum to the pan and cook 1 minute. Tear the large bok choy leave in halve lengthwise. Add all the leaves to the pan and sprinkle the livers on top.
  • Cover and cook 1 minutes.
  • Mix together the sauce ingredients and pour into the pan.
  • Toss until the sauce is hot and the bok choy has wilted and the livers just cooked.
  • Season with salt and pepper if wished and serve on noodles.

Of all the easy additions to stir-fries, fermented black beans are among the best. They give a special flavor and look, and the technique is effortless. Furthermore, a year's supply of black beans will set you back about a buck at a Chinese market.

Number Of Ingredients 13

2 tablespoons fermented black beans
2 tablespoons rice wine, dry sherry, or white wine
1/4 cup peanut or neutral oil, like grapeseed or corn
2 tablespoons minced garlic
1 tablespoon grated fresh ginger
1 cup sliced onion
1 pound boneless, skinless chicken breast or thighs, cut into 1/2- to 3/4-inch chunks or thin slices and blotted dry
1/4 cup chopped scallion, plus more for garnish
1 teaspoon sugar (optional)
2 tablespoons soy sauce
Salt and freshly ground black pepper
1/4 cup chicken or vegetable stock, white wine, or water
1 tablespoon dark sesame oil

Steps:

  • Soak the black beans in the wine. Meanwhile, put a large, deep skillet over high heat. Add half the oil, swirl it around, and immediately add half the garlic and ginger. Cook for 15 seconds, stirring, then add the onion. Raise the heat to high and cook, stirring occasionally, until the onion becomes soft, about 5 minutes. Remove the onion.
  • Still over high heat, add the remaining oil to the pan, then the remaining garlic and ginger. Stir, add the chicken, stir again, then let it sit for 1 minute before stirring again. Cook, stirring occasionally, until the chicken has lost its pink color, 3 to 5 minutes.
  • Turn the heat down to medium, add the scallion, and toss. Return the onion to the pan and add the sugar if you're using it and the soy sauce. Toss again, sprinkle with salt and pepper, then add the beans with their liquid and the stock. Raise the heat to high and cook, stir-ring and scraping the bottom of the pan, until the liquid is reduced slightly and you've scraped up all the bits of chicken, about a minute. Turn off the heat, drizzle on the sesame oil, garnish with scallion, and serve.
  • 12 Simple Additions to Stir-Fried Chicken:
  • You can throw almost anything you like into a stir-fry, but these are some of my favorites; some require a trip to an Asian market, but many will be in your pantry.
  • 1. Add 1 tablespoon or more of bottled hoisin, plum, oyster, or ground bean sauce with the soy sauce.
  • 2. Add 1/4 teaspoon or more Vietnamese-style chile paste, chile and black bean paste, or chile-garlic paste with the liquid.
  • 3. Add 1 teaspoon dark sesame oil with the soy sauce. A tablespoon or so of toasted sesame seeds is also good, alone or with the oil.
  • 4. Toss the chicken chunks with 1 tablespoon curry powder or five-spice powder.
  • 5. Toss in 1/2 to 1 cup raw or roasted cashews or peanuts when you return the vegetables to the pan.
  • 6. Omit the stock or water and add 1/2 to 1 cup coconut milk along with the soy sauce.
  • 7. Add 1 cup chopped fresh tomato when you return the vegetable to the pan.
  • 8. Replace half the soy sauce with nam pla (Thai fish sauce) or freshly squeezed lime juice or vinegar.
  • 9. Add 1 cup mung bean sprouts when you return the vegetables to the pan.
  • 10. Add 1/2 cup chopped shallot with the chicken.
  • 11. Use snow peas, mushrooms, or other quick-cooking vegetables, alone or in combination, in addition to or in place of other vegetables.
  • 12. Stir in 1/4 cup cooked grains (like barley, wheat berries, buckwheat, or quinoa) when you return the vegetables to the pan.

No, Paula's boys did not EVER claim making such a dish! However, they did do BBQ Chicken with an original BBQ sauce that is soooooooo good that I keep some made and on hand for both chicken and pork (chops). The sauce is a sweet tomato-based sauce which has just a slight heat that can be made more intense by increasing the mustard powder and/or cayenne pepper. I've done bbq-d chicken in the oven several times since having this BBQ Chicken at friends' home about a year ago. The last time I started with 2 whole chickens (cut into pieces myself) that had extra servings of livers in the cavities. I nestled the livers in one corner of the baking pan and covered them with the BBQ sauce just as the rest of the chicken... and baked the chicken as instructed. The livers were so good that I had to do the recipe again as a LIVERS ONLY version! WOW... unbelievably delicious! But then I love chicken livers (infrequently because of health issues about colesterol, fat, etc.).

1 -1 1/2 lb chicken liver
1 cup ketchup
1/4 cup packed dark brown sugar (or artificial sweetner, like Splenda, plus 1/2 T molasses)
2 tablespoons orange juice (or other fruit juice of choice, lemon or lime or apple)
1 teaspoon Worcestershire sauce
1/4 teaspoon liquid smoke
1/2 teaspoon mustard powder (for more heat, increase the amount of mustard powder slightly to taste)
1/4 teaspoon cayenne pepper (for more heat, increase the amount of cayenne pepper to taste, in proportion to mustard powder)
salt and pepper, to taste (or seasoned salt... trick I learned from Kittencal's recipes!)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray an 8x8 baking pan with non-stick spray.
  • Rinse, drain, and dry the chicken livers on paper towels. (Season to taste if desired, I use a little seasoning salt & no pepper.).
  • In a large bowl stir together all the bbq sauce ingredients.
  • Reserve 1/2 cup of the barbecue sauce and set aside for later; use 1/4 cup later for basting & 1/4 cup as a side sauce when livers are served (if desired).
  • Place the chicken livers into the bbq sauce remaining in the bowl, tossing to coat.
  • Arrange the coated chicken livers in the sprayed 8x8 baking pan & cover with foil.
  • Cook (covered), for 40 to 45 minutes or until cooked through, basting with the reserved 1/4 cup sauce after 20 minutes. **For oven roasting, cook uncovered for the last 15 minutes.
  • **Instead of oven roasting, these livers can be barbequed on a grill using a foil-covered foil pan that is sprayed with non-stick spray. Place in a medium heat area on the grill. Cooking time may vary from oven method.
  • Note: This recipe can be made "savory" with the addition of herbs of your choice -- or herb blends -- it never hurts to experiment.

2 tablespoons butter
1/3 cup finely chopped onions
1/4 cup finely diced celery
1/4 cup finely diced carrots
1 teaspoon finely minced garlic
1 cup plus 1 tablespoon flour
1 cup dry red wine
3/4 cup fresh or canned beef or chicken broth
1/4 teaspoon dried thyme
1/2 bay leaf
2 sprigs fresh parsley
Salt to taste if desired
Freshly ground pepper to taste
1 3/4 pounds fresh chicken livers
2 tablespoons ground or rubbed sage
3/4 cup corn, peanut or vegetable oil
1/2 cup finely chopped parsley

Steps:

  • Heat half the butter in a heavy saucepan and add the onions. Cook, stirring, until they start taking on a little color. Add celery, carrots and half the garlic. Cook briefly, stirring, and sprinkle with 1 tablespoon flour. Stir to blend.
  • Add wine, broth, thyme, bay leaf, parsley sprigs, salt and pepper and bring to the boil. Let simmer 20 minutes. Line a sieve and pour in the sauce. Strain, pushing through as much liquid as possible. Discard the solids. There should be about 1/4 cup.
  • Meanwhile, pick over the livers, cutting away and discarding the connecting membranes. Cut the livers in half and then into quarters. Drain thoroughly in a sieve.
  • Blend the remaining 1 cup of flour, salt, pepper and half the sage. Dredge the liver pieces in the mixture and shake off excess. Line a large mixing bowl with a large sieve and have it ready for draining the livers.
  • Heat about one-third of the oil in a heavy skillet. When it is hot add one-third of the livers. Cook, turning the pieces so that they brown evenly. Cook 2 to 3 minutes until brown and crisp on the outside. Drain.
  • Add another third of the oil. When it is hot add another third of the livers. Repeat, draining the livers as necessary and cooking until they are all brown and crisp on the outside.
  • Heat the remaining tablespoon of butter in a casserole and add the remaining tablespoon of sage and remaining half teaspoon garlic. Cook briefly and add the sauce. Bring to a boil and let simmer about 1 minute. Add the livers and cook to heat thoroughly. Stir in chopped parsley and serve.

1 pound chicken livers
1 egg
½ cup milk
1 cup all-purpose flour
1 tablespoon garlic powder
salt and pepper to taste
1 quart vegetable oil for frying

Steps:

  • Place the chicken livers in a colander, and rinse with water. Drain the livers well. Whisk together the egg and milk in a shallow bowl until well blended. Place the flour, garlic powder, and salt and pepper in a resealable plastic zipper bag, and shake to combine.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Place the chicken livers in the bowl of egg and milk mixture, and coat each liver. Place the livers, one at a time, into the plastic bag of flour mixture, and shake the bag to coat the each liver completely.
  • Gently place the coated livers, a few at a time, into the hot oil. Cover the pan of oil with a frying screen to avoid getting burned by spatters of oil that will pop out as the livers fry. Deep fry the livers until crisp and golden brown, 5 to 6 minutes.

2 slices bacon, diced
6 tablespoons all-purpose flour
1/2 teaspoon salt, plus more to taste
Freshly ground pepper to taste
3/4 pound chicken livers, cleaned
2 cups rhubarb compote (recipe above)
1/2 cup red wine

Steps:

  • Place the bacon in a large skillet over medium heat. Cook until fat is rendered and discard the bacon. Season the flour with 1/2 teaspoon salt and the pepper. Dust the chicken livers with the flour. Increase the heat slightly and add to the skillet. Saute until browned on the outside but still pink in the center, about 3 minutes. Remove from the skillet with a slotted spoon and keep warm.
  • Add 1 cup of the rhubarb compote and the wine to the skillet and deglaze the pan. Season with salt and pepper to taste. Divide the chicken livers among 4 plates and spoon the sauce over them. Divide the remaining compote among the plates and serve immediately.
